Oatmeal Raisin Walnut Cookies

If you love a moist, chewy oatmeal cookie, you’ll just love these!  I usually use quick oats in my oatmeal cookies because I prefer the end result, but rolled oats will work just fine in any of these recipes.

For the chocolate lover, these Oatmeal Chocolate Chip Cookies will hit the spot!

Ingredients

  • 1 cup all purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • 2 Tbsp unsalted butter, room temperature
  • ½ cup sugar
  • 1 large egg
  • ½ cup pure maple syrup
  • ¼ cup unsweetened apple sauce
  • ½ tsp vanilla extract
  • 2 cup rolled oats, gluten free oats for gluten intolerant
  • ½ cup raisins
  • cup chopped walnuts

Instructions

  • Preheat oven to 350°; line two baking sheets with parchment paper or use a silpat.
  • In a medium bowl, whisk together flour, baking powder, baking soda, salt and cinnamon.
  • In a large bowl, with a mixer, cream together the butter and the sugar on medium speed.
  • Add the egg, followed by the maple syrup, apple sauce and vanilla extract.
  • Working by hand with a spatula, stir in the dry ingredients until just combined and no streaks of flour remain; stir in the oats, raisins and chopped walnuts.
  • Drop heaping tablespoonfuls of the dough onto prepared baking sheets. Bake for about 12 - 15 minutes, or until cookies become light brown at the edges.
  • Let cool on baking sheet for 3 or 4 minutes, then transfer to a wire rack to cool completely.

    I made these cookies this morning – for my husband who loves oatmeal raisin cookies but not the high calories. I followed the recipe exactly and I tried not to over mix when I added the oats. The batter actually made 20 medium size cookies. So I found that 15mins was not enough baking time and baked them another 4 to 5 mins – checking always at the 2 min mark to insure they did not burn. The edges did come out nice and crisp but the centers, while soft, tasted underbaked – with a definite flour taste. I am not sure what I did wrong. If I had let them bake longer they would have burned. My husband is happy with them, although he asked me not to make them as sweet the next time. Unfortunately I am not as happy with their texture. Any advice on why the centers seemed under baked? Did I make them too big? As I mentioned the batter made more than 15. Many thanks for any insight. (P.S. I have several of your cook books and frequently make the recipes which always turn out well)

    The oatmeal raisin cookies are delicious !  Gina, every recipe I’ve tried of yours has been a hit. I never really cooked much before the pandemic but since then bought the One and Done cookbook and a few new appliances and been going to town. I’m a lifetime Weight Watcher for almost 20 years and really appreciate your helpful delicious recipes.

    Hi Gina, I need to make a low sugar oatmeal cookie and wondered if I can back on the white sugar and maple syrup by 1/2, in your oatmeal raisin walnut cookie?

  5. Made the Oatmeal Raisin Walnut Cookies this evening (without walnuts due to allergy). They turned out great. Before adding raisins, I split the batter and added mini chocolate chips then raisins to the other half. Both are delicious. I cannot wait to give these to my friend and her husband!

  6. Made these for a cabin-camping trip. They held up well in backpacks for hiking. They were tasty and chewy and did not dry out like some oatmeal cookies do once they are cooled from the oven. I liked that they were a much healthier treat that were more like an energy cookie because of the ingredients. I used pecans instead of walnuts and homemade apple sauce from our backyard tree last fall. This recipe is a keeper and I will make again. Yummy!

  11. I just printed out your recipe for the Oatmeal Walnut Raisin cookies and noticed or missed the part of the directions where it says to stir in the rolled oats. I'm assuming it goes with the dry ingredients but want to be sure.
