Skinny Chocolate Peppermint Cake Pops
Chocolate and peppermint are the perfect combination, and these cake pops are perfect if you need a last minute Holiday dessert!
After much success with my first attempt at a skinny cake pop, the flavor combinations and possibilities are endless. Here I used chocolate cake with Wilton's peppermint white candy melts sold at Michaels.
The cake pop pan is made by Nordic Ware, it's about $16 and makes perfect, easy cake balls every time.

ReplyDeleteI had done something similar after your last cake pop post! I didn't want to waste the rest of the white chocolate that I had, so I used chocolate cake with mint extract instead of vanilla. Big hit! Thanks again for all the work you do! Any estimates on when your cookbook is coming out?

DeleteI thought both of your skinny takes on cake pops looked really great, but my biggest struggle when making them is getting the chocolate coating as thin as yours. Do you have some tips? Do you just try to keep the chocolate as hot as possible?
ReplyDeleteYou need to keep the chocolate nice and hot. But you can't make it too hot or it will burn and turn chunky. Make sure you use the defrost setting on your microwave and when it gets too difficult to coat the pops anymore, reheat the chocolate.
DeleteKeeping the cake balls chilled before coating is the key.

ReplyDeleteAs for the cake pops, I bought 2 Nordic Pans similar to yours at Halloween and have yet to use them. Now I have an excuse! I have a silly question though. Are the little holes in the top pan meant for air circulation or are you meant to insert the sticks there? The only reason I ask is that the Wilton sticks I have are way too thick to fit in the hole so I'm confused as to its purpose. Thanks in advance for your help :)
