My mom adds hard boiled eggs to her guacamole recipe, so I thought why not add guacamole to hard boiled eggs? The results are lovely, and since I was testing them out for the blog, I actually enjoyed them for lunch. Of course, if you wish you can also stick with this classic Deviled Eggs recipe.

This is a fun, “clean” deviled egg recipe perfect to eat as a snack or appetizer. Typically deviled eggs are made with mayonnaise, mustard and dijon mustard, so how do you make them without mayonnaise? Instead this healthier deviled egg recipe version is filled with avocado guacamole. You can prep the eggs ahead by boiling them (see how with this perfect hard boiled egg recipe here) or make Instant Pot Hard Boiled Eggs, then cut the eggs in half lengthwise until you’re ready to fill them. To avoid browning, make the guacamole just before you’re ready to serve.

Serving Size: 2 halves

Ingredients

  • 6 large eggs, hard boiled (recipe here)
  • 1 medium haas avocado, about 5 oz
  • 2-3 tsp fresh lime juice
  • 1 tsp red onion, minced
  • 1 tbsp minced jalapeno
  • 1 tbsp fresh cilantro, chopped
  • kosher salt and fresh ground pepper, to taste
  • 1 tbsp diced tomato
  • pinch chile powder, for garnish

Instructions

  • Peel the cooled hard boiled eggs.
  • Cut the eggs in half horizontally, and set the yolks aside.
  • In a bowl, mash the avocado and 2 whole egg yolks; discard the rest.
  • Mix in lime juice, red onion, jalapeño, cilantro, salt and pepper and adjust to taste. Gently fold in tomato.
  • Scoop heaping spoonfuls of the guacamole into the 12 halved eggs.
  • Sprinkle with a little chile powder for color and arrange on a platter.

  9. I made these tonight! Yum! We’re doing the Whole30 and these were a delicious, fun side dish for our meal. I make my own paleo mayo so I added a tablespoon or two of that, omitted the tomato and left all the egg yolks in. It came out super creamy and tasty. I also sprinkled diced bacon on top. I get regular cravings for guacamole so I’m excited to have this recipe to use instead of “needing” chips. Adding to my favorites!

  10. My husband hates mayo, so this is perfect! He LOVED them! And instead of discarding the other yolks…I just made more of the guacamole mixture and put it on toast. Yummy breakfast/snack!

Used more avo and all the yolks (I also didn’t like to see the waste) and added the extra guacamole to boiled sweet potatoes in a similar way to baked potatoes.     Why would you discard the rest of the egg yolks? If you are buying pasture raised, naturally fed eggs… throwing out the yolk is wasting cell nourishing whole food loaded with vitamins, minerals, essential fatty acids, anti-oxidants, phyto-nutrients…

  30. Hard cooked egg yolks work well as an emulsifier for homemade oil & vinegar-based salad dressings. Put the dressing and the hard cooked egg yolks in a food processor or blender and you will have a blended salad dressing that appears creamy-ish. I don't used fixed proportions; I do it by sight. Just be sure none of the diners have an egg allergy.

  32. I made these for a Senior Potluck therefore I did everything times 2. I did add 1 teasp of mustard, coarse salt and topped them with a sprinkle of paprika, a cilantro leaf and a strip of red pepper. The presentation and taste was great. Would make them again.

    These look amazingly delicious. I have had deviled eggs but never with avocado. What a great healthy combination. I am having a party and trying to add some healthy foods and this is a great option.

  37. Great recipe – But I don't think the additional egg yolks need be "discarded" but "re-purposed" if there is no need in this recipe. Food is a precious commodity 🙂

  40. I'm anxious to try this. I love deviled eggs but have never been able to eat egg salad. (I think it is the amount of Mayo in it that turns me off.) I might make the deviled eggs with guests coming then save those extra yolks and make some guaca/egg salad the next day on whole grain bread!

  46. Instead of "discarding" the other 4 yolks, dice them and put them in your bird feeder. Many birds LOVE cooked yolks, and birds that normally won't come to your feeder for seed (insect eaters) WILL come for yolk…

Wow, I wish I'd seen this a week ago- I just threw my daughter a Dr. Seuss party and just added green food coloring to deviled eggs to make the green eggs and ham thing, but this would have been so much more delicious! And, since I just can't get past the taste/texture of the yolks (especially when mayo is added- yuck), this might be the perfect solution for me. Thanks!

  50. Great idea! I will be making these. But, who adds mayo to deviled eggs? Bad idea and I love mayonnaise. ALWAYS only my favorite mustard with the required paprika on top!

      Most of the world uses Mayo to make deviled eggs, a little yellow mustard and a touch of Piccadilly
      You using only mustard is quite the unusual actually

      Only if you are letting them sit outside in the sun for hours then a really bad idea

    2. I always had issues with peeling the Free range organic eggs.
      The shell is stronger/harder
      My sister told me how to hard boil and easily remove shells and it works!
      Put an expandable steamer in a pot with a little water
      Put the eggs in the steamer
      Put a lid on it and cook on medium heat for 15 minutes take out the eggs and WOW they are perfectly done and peel so easily!

    GREAT idea! Just a helpful hint. Whenever I make deviled eggs, I find it handy to use a disposable sandwich baggie. Just fill it with the gooey ingredients/filling for the hard boiled egg halves, and close the top. (I prefer the zipable closure kind) Then clip off the corner of one end at bottom of baggie. Simply squeeze the ingredients into the egg "cup" and you have a simple, clean way to fill the eggs! You can control the amount in each egg and even add a creative twist to the top when you really get the hang of things! HA!

      It's not simple if you have cerebral palsy. What I did is bought a cookie press. Works pretty well.

  58. I am so excited about this idea! Its a marriage of two things I LOVE! Also, I tried your Crock Pot Sesame Honey Chicken last night and it was a home run! My husband and toddler son loved it and I'm about to wrap some up in lettuce for lunch today. Keep the crock pot meals coming!

    I am diggin' every part of this. I love deviled eggs and guacamole almost equally (deviled eggs may have a slight edge), and this looks like the perfect way to marry the two.

  65. I love this idea and can't wait to try it out. Do you have issues with the avocado turning brown? Meaning, if I make it the night before and put it in the fridge, will they be brown the next day?

    1. Keep the pit/seed submerged in the guac up until its time to serve. My Mexican friends taught me that trick to keep it from discoloring.
