Easy Grilled Fish Fillet in Foil Packets
It’s almost 90 degrees today, which means I’m grilling tonight. In fact I use my outdoor grill just about every night in the summer to make quick, easy, healthy dinners. More easy foil packets I love are Shrimp Scampi foil packets and Grilled Clams in foil, or side of Lemon Parsley Potato Packets.
Living on the east coast, I love to take full advantage of the fresh caught local fish available to me here on Long Island. Nothing is quite better than eating fish that came out of the ocean the same day! My local fishmonger suggested the Long Island porgy that was caught early that morning – delish! I asked him to fillet it for me, and I kept the skin on, just my personal preference. Oh, the possibilities are endless when making fish in foil, you can add any fresh herbs you like, wine, garlic, shallots, whatever you like! I also do this in a 400 degree oven in the Fall and winter months.
When I do this outside on the gas grill, I cook the foil on indirect heat, which basically means I heat up one side of the grill with the cover closed so it gets good and hot, and keep the burners off on the other side. You can also do this with a charcoal grill with a cover, by leaving the coals on one side. The fish goes on the indirect side of the grill so that it cooks from the steam created in the foil. In about 10 minutes, the fish cooked to perfection. My whole family enjoys this, even my three year old.

Ingredients
Instructions
- Place the fish in the center of the foil, season with salt and pepper and drizzle with olive oil.
- Place a slice of lemon on top of each piece of fish, then a sprig of herbs on each.
- Fold up the edges so that it's completely sealed and no steam will escape, creating a loose tent.
- Heat half of the grill (on one side) on high heat with the cover closed.
- When the grill is hot, place the foil packets on the side of the grill with the burners off (indirect heat) and close the grill.
- Depending on the thickness of your fish, cook 10 to 15 minutes, or until the fish is opaque and cooked through. My porgy fillets took about 12 minutes.

We made this recipe with tilapia and it turned out great! My 12-yo son was helping me (Dad) and he really enjoyed the assembly process and adding all the ingredients. I grilled some squash and zucchini cut lengthwise on the hot part of the grill, and added a side of couscous for a really tasty, easy meal. Thanks!

I add sundried tomatoes, capers and Dijon mustard serve with a garlic aioli sauce. I garnish with grilled pineapple and a sprig of fresh mint. Simple yet elegant! Try red snapper with a lemon caper or pink peppercorn sauce….your tastebuds will go into overdrive.

This is my favorite/easiest way I know how to cook fish! I usually slice some onion, carrot, pepper (whatever veggie is on hand really) to put under the fish – I think it helps to add some moisture, and save on dish washing!

Gina, I know that adding fat to fish cooked in an open oven helps to keep it moist. But I'm curious what the purpose is of adding fat when cooking fish in foil, since the steam keeps it moist. Is it just for flavor?
Just for flavor, I like adding a little olive oil. You dont have to.

I love doing grilled fish packets in the summer! I even add sliced potatoes and sliced lemons, with fresh herbs and butter. Delicious!
We did this last night, throwing in a few potatoes, olives, and a little feta. Mmmm!
I have a weber also…one rack, one burner.
This may be a stupid question – but on a weber grill you cannot turn off one side – it is either top, center or bottom burners – what do you suggest for grilling this properly? I was thinking I should set the top & bottom burners on hight & leave the center burner off? Any help would be appreciated!
You put the hot coals on one side, say the left side and place a disposable aluminum pan on the other side with the coals to create indirect heat. It's totally doable, I've done it myself.
It's a gas grill, not coals. I just left the center burner off…

Yumm this is one of my favourite dinners because (like you said) it's so fast and easy to make! My packets usually contain fish with lemon, dill and tarragon, but it doesn't seem to matter what combos I try, they always come out delicious! I'll be trying yours next!

I make this all the time with Swai (Basa) filets. I season the fish with herbs & a spices, top it off with 2 big handfuls of fresh baby spinach and halved grape tomatoes, then serve over rice pilaf. Healthy & flavorful!

I swear we could be friends! We do fish foil packs all the time on the grill with fish my dad catches right from LI Sound. My almost 3 year old LOVES fish. In fact he associates grandpa with fish. Anytime you want to take the ferry over to NL for a getaway give me a shout. Only problem might be most of my recipes come from you. But I do have an awesome fish taco recipe that I don't think is yours. We do the foil pockets then assemble the tacos. Delish!
