We’re having a heat wave here in New York. The kind of heat that you don’t want to be outside, unless you’re in a pool or sprinkler keeping you cool. I won’t dare turn my oven on this week, even grilling is out of the question until things cool down.

But these ice pops… I’m obsessed!! I’m making these all summer long, I can’t even begin to tell you how delicious they are. I don’t think any of my other ice pops come close. These simple and super easy frozen ice pops are made with coconut milk and pureed mango, and I am OBSESSED. My new snack all summer long!

Serving Size: 1 popsicle

Ingredients

  • 3/4 cup unsweetened coconut milk beverage
  • 1 3/4 cups diced ripe mango
  • 1 cup canned light coconut milk
  • 1/4 cup sugar, I used raw
  • 2 tablespoons honey, I like raw, stevia would work too

Instructions

  • Puree mango in the blender with 1/4 cup of the coconut milk beverage and sugar and blend until smooth.
  • Set aside.
  • In a medium bowl combine the remaining coconut milk beverage, canned coconut milk and the honey; mix well until combined thoroughly.
  • Pour about 2 tablespoons of mango puree into each popsicle mold then pour coconut milk mix, until all the molds are filled.
  • Place the molds in the freezer and freeze until solid, about 5 to 6 hours.

    Where do you get the unsweetened coconut milk beverage? I’m on Long Island (Suffolk County)

  2. Mangoes have been my all time favorite fruit growing up. Very few have the passion and the story behind mangoes that I have.  Mango trees (3 best varieties) in grandpas garden, free for the picking, some so ripe we’d scoop them off the lawn unbruised/fresh. Eat them whole, juice them and blend them with coconut etc. Long story short we literally could harvest them. Anyway even our friends used to take a bunch home and always raved about how large and decadently delicious these ‘king of fruit’ were.
    The largest mango producing country by far is India and many strains of mango originated from the seeds of these fruit, now widely popular and available worldwide.
    Skinny taste has taken my all time favorite combo and produced these wickedly ‘gobsmacking’ Coconut Mango Ice pops. All  summer long these have been accounting for a lot of space in the freezer at home.
    All I can say is, I hope they never stop producing what’s in my opinion a true classic treat.

  3. I made these last week, LOVED them and will be making them again soon. I prefer my frozen fruit bars to be a bit more on the tart side, so I may add less sugar to the mango part, depending in the ripeness of the mango, but that’s just my personal preference. These ice pops have been a great low cal substitute for an after dinner sweet treat for me. Thanks for another amazing recipe!

  4. Sorry, I can't find coconut beverage in my store. However, I do have a coconut tree outside my door (next to the mango tree). Can I use fresh coconut milk? Kimo in Haiku.

    We have coconut milk and cream etc and mango's are fairly plentiful in the summer here in Qld but coconut beverage? no idea

    kainaat-They have Silk Coconut Milk in the refrigerated milk section at Walmart.

      I'm from Dubai, so things like Coconut milk and Almond milk is not always available everywhere, and if they are, then they're quite expensive, sadly. Which is why I was asking if I can use Coconut water instead.. or maybe something else? I was thinking maybe some mango shake or something.. will probably experiment!

      Coconut water would likely work well for these! Just an icey version instead of creamy version. I might try them this way too since I have an open container of coconut water. 🙂

    I don't think it will be easy for me to find coconut milk beverage.. Coconut water drinks, yes, but milk beverage, no. Can that be a substitute instead?

      Hmm.. I was thinking that too, but I'll have to make it myself. Not worth buying, it's way too expensive. A litre of Almond milk costs almost $10. I read somewhere a substitute would be getting full cream coconut milk and adding water to it, will most probably try that. Thank you for the suggestion, though! 🙂

  13. Coconut milk beverage is in the refrigerated section, like Silk Coconut Milk. Coconut milk, or light coconut milk, comes in a can near the ethnic foods.

      It's usually refrigerated in the milk section. Also in the cartons. So Delicious, Trader Joe's, Coconut Dream, Silk all carry it, and Almond Breeze carries an almond-coconut milk blend.

  18. Yummy! Coconut and mangos are my favorites right now! Gina, if I wanted to skip the sugar and avoid stevia or any sweeteners what could I use to replace? Could I use maple syrup or additional honey?
