For those of you who believe eating black eyed peas in the New Year will bring you luck (and we can certainly all use a little more luck) this healthy bean salad is for you! Whether you eat this as a salad or serve it as a dip with some baked chips, the zesty flavors in this salad is sure to turn you into a fan of black-eyed peas.

I tested this out on my friends this weekend and it got a thumbs up from everyone. The earthy taste of the beans are balanced with sweet corn, avocado, lime juice, garlic and cilantro to brighten them up. Wishing everyone a Happy New Year!

Yield: 12 servings
Serving Size: 1 /3 cup

Ingredients

  • 15 oz canned no salt black eye peas , Eden
  • 2 cloves garlic, crushed or minced
  • 3 tbsp fresh lime juice, from about  1 1/2 limes
  • 1 tbsp extra virgin olive
  • 1 tsp cumin
  • pinch crushed red pepper flakes
  • 1/2 tsp kosher salt
  • 1 cup cooked corn, fresh or frozen, thawed
  • 1 cup cherry tomatoes, quartered
  • 1/4 cup minced red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 1 jalapeño, seeded and diced (optional)
  • 1 medium avocado, diced

Instructions

  • Rinse and drain the black eyed peas in a colander.
  • In a large bowl, combine the garlic, lime juice, oil, cumin, crushed red pepper, and salt and mix well.
  • Add the black-eyed peas, corn, tomato, red onion, jalapeno if using and cilantro; mix well and refrigerate at least 20 minutes.
  • When ready to eat, gently mix in the avocado and serve right away.

  1. Delicious. My teenage daughter and friends devoured it before I could get a second serving. I did use fresh peas because it was available on New Years Day. Will make definitely make it again. Another great recipe from Skinnytaste

    This dip is really good! I made this for New Year’s Eve. I’m not typically a fan of black-eyed peas but this was great! It’ll definitely be a repeat for New Years in the future but a may even make it throughout the year it was that good!

  3. This sounds wonderful! I think I’m going to either use it like a salad topping or mix it with some mixed grains from Trader Joe’s and add some fresh spinach or kale. This will definitely be a meal for me. Thank you for the recipe and Happy 2024!

  4. So tasty! I’ve made this several times. It’s one of my favorite recipes. It’s great in a wrap too with lettuce or fresh spinach. I like Mission Carb Balance tortillas; only 2 blue points!

    I’m so excited to try this! My family has a recipe we call Texas Caviar that is similar to this but so fattening for you with the dressing we do with it. I’ve been thinking what else I could try and here you are!! 

  6. I’m confused about the nutrition information. It says it yields 12 servings at 107 calories per serving? Does that mean the whole dish is 1284 calories? That sounds awfully high for what looks like all healthy ingredients.

    I’m sorry for the dumb question but I’m trying to keep track of my calories with the planner.

    Just made it!  Great recipe for us girls who don’t love to cook….yet.  

    Flovors were so great.  A dip with no mayo, no sour cream, no cheese and super delicious.  Definitely a repeat~

    I made this today for lunch. I marinated the red onions and garlic in the lime juice, olive oil, salt and pepper for 20 minutes in the refrigerator before adding it to the rest of the ingredients. I added a can of garbanzos and used canned corn. I used the avocado as a garnish instead of mixing it in. I served it in individual bowls with bowls of corn chips. This was my best New Year’s Day black eyed peas dish yet. Thank you Gina.

  17. Took this to a New Year's Party last night and everyone loved it! It was light and very tasty! A nice change from the heavier creamy dips!
    I might make it again today as it disappeared pretty quick.

    If my 2016 luck is half as good as this recipe’s taste, I will be in great shape (so to speak). This dip is easy to put together and is excellent; I served it with low-fat, whole wheat, baked scoops and both my husband and I loved it. I am not sure if black-eyed-pea’s good luck is delivered on Dec. 31 or Jan. 1 so I covered both bases by serving the dip tonight then we have a New Year’s Day do over.

    Would it alter the taste completely if I left out the avocado? I'm allergic to them and have found that in some recipes leaving them out actually makes whatever it was I made kind of gross.

    Gina! I made this recipe for New Year's Eve! Everyone loved it…and no one complained about eating their black eyed peas for good luck in the new year…even the kids! 😉

    Love this recipe. I've made it several times and it is always a hit! Great for summer bar-b-queues. For New Year's Day we have the black eyed peas for luck and cabbage for prosperity, but this year, we are adding the cabbage in the form of slaw on top of delicious pulled pork sandwiches – and tomorrow we return to sensible eating. HAPPY NEW YEAR EVERYONE! (do you have a low sugar cole slaw dressing recipe?)

  29. Caviar recipes usually have cider vinegar and sugars.
    And while similar, I've never seen avocado either.

    1. Yes, but there are many variations. You can put just about anything you want in this and it still tastes great!
