Spaghetti Squash with Arugula Pesto

Hi guys! Just wanted to share an easy recipe I had for lunch today made with spaghetti squash and pesto. This took less than 15 minutes to make and was delicious.

I am honored to be a guest blogger this month for Better Homes and Gardens. The task was simple, test out a few of their recipes adding my own spin to share on their blog, Delish Dish. As a side dish, this was under 150 calories or 4 PP.  Please visit Delish Dish for the full recipe.

  2. That is soooo funny! I made arugula pesto last night and put it over grilled swordfish! I was thinking of using it for spaghetti squash that I bought at the market, but decided to use it over the fish instead!! I never used arugula before for the pesto base so I winged it and it turned out delish! :) Next I want to try to use fresh spinach and make it as a cold dip for appetizers.

  5. I eat spaghetti squash often ~ even my hubby is starting to prefer it over pasta (less bloat). I make a super easy Ratatoui to put on top *using diced yellow squash, zucchini, garlic, mushrooms, fire roasted tomatoes, olive oil & parm - after i sautee all of those ingredients together its an amazing topping for your spaghetti squash. LOVE IT and its all good stuff. Occasionally we will have a small side of steak with it.
