Baked Sweet Potato Fries

These healthy fries are low in points and are full of beta-carotene, which has many health benefits. A great way to include an orange vegetable into your diet is to eat sweet potatoes. They are rich in vitamin A and C.

Baked Sweet Potato Fries
Servings: 2 • Serving Size: 1 sweet potato

2 medium sweet potatoes, washed
2 teaspoons olive oil
1/2 tsp kosher salt
1/2 teaspoon garlic powder
1/4 teaspoon sweet paprika
fresh black pepper, to taste

Preheat oven to 425°F. Lightly spray a baking sheet with oil.

Slice each potato into 6 wedges. Toss with oil, salt, garlic powder, black pepper and paprika.

Bake flesh side down for 10 minutes on each side. Serve hot.
