This easy creamed spinach is made with frozen spinach, shallots, Parmesan cheese, and Boursin cheese for a rich and flavorful side dish.

Boursin Creamed Spinach

This Boursin creamed spinach is a lighter version of a steakhouse favorite and so easy to make. It’s perfect with steak and a baked potato but can also go great with turkey meatloaf, breaded pork chops or even as a Thanksgiving side dish.

Why This Works!

  • Lighter: This creamed spinach is lighter than most recipes, made without heavy cream.
  • Easy: This recipe uses frozen spinach which I always keep in my freezer.
  • Tons of flavor: Thanks to boursin cheese and parmesan, this creamy vegetable side dish is delicious.
  • Great texture!

Ingredients

(See full recipe below)

  • For Flavor: shallots and garlic, minced
  • White Sauce: butter, all purpose flour and fat free milk
  • Cheese: Parmesan cheese and Boursin garlic and herb cheese
  • Spices: nutmeg, fresh black pepper, kosher salt
  • Spinach: frozen chopped spinach, thawed and drained of all excess moisture

How To Make This Easy Creamed Spinach Recipe

  1. In a large skillet, melt the butter over medium-low heat. Add the shallots and garlic and cook until soft, 4 to 5 minutes.
  2. Add the flour to shallots, stir and cook 1 more minute to let the flour cook out.
  3. Reduce heat to low and slowly add milk, whisking well.
  4. Add the Parmesan cheese, nutmeg, salt and pepper and mix well.
  5. Add the Boursin cheese and mix with until smooth.
  6. Add the thawed spinach and combine well with sauce, cook 1 minute, until heated through. Adjust salt and pepper if necessary.

Variations

  • Use fresh spinach or baby spinach in place of frozen. Simply wilt the spinach in a large pot first, then proceed.
  • Use onion in place of shallots.
  • Add a pinch of cayenne for spice.

Note

Boursin can be found in the cheese section of most supermarkets. If you can’t find it, light cream cheese or Laughing Cow could work as a replacement.

Leftover Ideas

  • Top it with mozzarella cheese, heat it in the microwave or oven to make a spinach dip.
  • Make oysters Rockefeller using this method.
  • Stuff a chicken breast with the leftovers and roll it up for chicken rollatini.

Storage

Leftovers can be refrigerated in an airtight container up to 4 days or frozen up to 3 months.
