It was still good, but would have been even more wonderful slow-cooked. Can&#39;t wait to have Round 2 tomorrow.<br /><br />Our only modification was that my husband didn&#39;t want to shred the chicken, so chopped it up finely before he put it into the soup pot. My family loves it. Thank you so much for a great recipe. Things I changed over the remakes to fit us for anyone who is interested. With corn, beans and cheese my DH thought the chicken and beans was too much so I left out the chicken once and beans the last 2 times. The original was a little thin for us but didn&#39;t want to add flour so I added 1/2c corn mesa the last few times I made it. I put it into the cold soup then let cook in the crockpot it added great flavor like Chili&#39;s enchilada soup(with the chicken very good). When I added the mesa the corn was too much for my hubby but the kids loved it. I haved served with sour cream, cheese, avocado,corn cut off the cob, corn tortilla chips and even some oven toasted tortilla strips for on top. I used a can of Rotel instead of plain tomatoes and it was fantastic. I topped mine with FF sour cream and a few baked nacho cheese Doritos crumbled on top.
