Asparagus Salad with Egg and Bacon
I’ve been making this Asparagus salad for years, it never gets old! It’s the perfect Spring salad made with just a few simple ingredients – asparagus, hard boiled egg and bacon tossed with a Dijon vinaigrette. I usually eat this for lunch but this would also work as a side dish for Easter.
This is one of my go-to salads this time of year. Asparagus and eggs are a match made in heaven, but not just for breakfast, it’s great for lunch too! I always keep hard boiled eggs on hand in my fridge to use throughout the week, therefore this salad came together in less than 10 minutes. And did you know you can also make hard boiled eggs in the air fryer?
Helpful Tips for making Asparagus Salad:
- Double or triple the recipe for meal prep.
- You can keep it refrigerated 4 to 5 days.
- Multiply the recipe to bring it to a potluck and serve it in a large bowl.
- Eating seasonal means it’s inexpensive to make.

Another way to steam asparagus is in the microwave, just place it in a microwave safe bowl and microwave 2 to 3 minutes, no need to cover or add water.

Asparagus Egg and Bacon Salad with Dijon Vinaigrette
Ingredients
- 1 large hard boiled egg, peeled and sliced
- 1 2/3 cups chopped asparagus
- 2 slices cooked and crumbled center cut bacon, check labels for Whole30
- 1/2 tsp Dijon mustard, check label for Whole30
- 1 teaspoon extra virgin olive oil
- 1 teaspoon red wine vinegar
- pinch salt and pepper, to taste
Instructions
- Bring a pot of water to a boil, add the asparagus and cook 2 to 3 minutes, until tender yet firm. Drain and run under cold water to stop it from cooking further. Set aside.
- In a small bowl mix the Dijon, oil, vinegar and a pinch of salt and pepper.
- Arrange the asparagus on a plate, top with egg and bacon and drizzle with the vinaigrette. Enjoy!

Like all recipes, this was no exception to the quality of deliciousness. Because I like more protein I added spinach and 1/2 can of salmon with lemon juice for a bigger lunch portion.

Really liked this recipe! It’s up there w my other long time favs like Gina’s enchilada sauce, butternut squash and black bean enchiladas, chicken chili, chocolate chip clouds, flourless zucchini brownies and many others. I suggest tossing the asparagus w the dressing then top w bacon bits and egg. I made extra dressing and served on side for those who wanted a little more. For one bunch of asparagus I used 1 egg and 1 slice bacon and it was great.

I made this with a couple of changes. I had no red wine vinegar, so used balsamic vinegar. Also added a sprinkling of feta cheese on the salad. It was wonderful!

Holy moly, this is my fave lunch. I haven’t experimented with adding anything, but I don’t think it even needs it! I read someone’s comment about being a good side dish to steak. I’m gonna omit the egg and make this as a steak side dish this summer! Definitely can be done on the grill I’m sure, too!

So delicious, so simple, so easy with minimum planning required! This is going to be a staple on my spring lunch menu from now on. For people who like more dressing on their salads, the amount in the recipe might not be enough, but it was perfect amount for me. Eaten cold usually, I would leave the dressing on the side until you’re ready to eat it.
I made this today for lunch and it was FABULOUS! I did double the mustard vinaigrette and added a couple of drops of liquid Stevia per my own preference. But, don’t hesitate to make this! It is really tasty and different.

This salad is going into my lunch rotation. It reminds me of the wilted spinach salad my Grandma used to make. I make a weekly batch of a dozen eggs in the IP for my husband so throwing in a couple extra won’t hurt. I may switch out “zoodles” or spinach when the asparagus is out of season. Yum!

So good! I pan-fried the asparagus with some salt, pepper, and garlic powder. Tossed in the cold crumbled bacon to warm it up a bit, then laid everything on a bed of fresh spinach. Sliced the egg and poured the dressing over all. Definitely looking forward to having this again tomorrow!

My new favorite lunch! YUM! Spring in a bowl and really elegant. This dish, while extremely simple, brings together several of my favorite flavors. I think this would pair beautifully with leftover salmon as well for a slightly heartier meal. I used my Instant Pot to cook up several eggs (5 minutes on low pressure for a nice soft/medium boiled egg) and my asparagus (2 minutes on steam after the eggs come out of the cooker, and all thrown in an ice bath together), which brought this dish together in a snap, and I have a couple days of lunch ready to go! I think a few snipped chives in the mix would also be a nice bright touch if on hand! Thanks for your endless supply of beautiful and delicious recipes!!

I was looking for a way to lighten up a favorite Broccoli & Bacon salad that is made with 1 C mayonnaise. This looks like the ticket! I will use this dressing and substitute broccoli for the asparagus.

I used a bit more dijon than the recipe called for (because I am lazy about measuring) but it turned out absolutely fantastic. This is my first Skinnytaste recipe, but man, am I sold.
Like the Lemon Chicken stir fry recipe I thought this was also bland. I had to double the dressing and added more Dijon mustard than stated in the recipe. I had it with the mini turkey loafs, which I love BTW. Can’t wait to try more recipes!

When I calculate this using my ww phone app I get 4 pp. but when I calculate this on ww online under the recipes sections it comes out to 6pp. So when calculating the points for your recipes do you always use the recipe tool on ww online? I'm curious as to how this can be considered "skinny" when 117 of the 219 calories (more than half) come from fat (each gram of fat is equal to 9 calories; 9 times 13 grams is 117). Typically, a dish is considered "low fat" if less than 33% of it's calories come from fat. I'm sure it's delicious, just not sure it's "skinny."

technically this serves one, but if you are doing it as a side dish, it could probably be made into 3 servings. so i would just multiply the ingredients by 4

This sounds amazing; I cooked 3 pkg. of bacon on Sunday and put it in the freezer – I use the Martha Stewart recipe for cooking bacon in the oven – then I freeze it ready to take out as needed. flat plastic container – separate the levels so that it doesn't stick together – wax paper or foil, or plastic wrap.

It is really a perfect dish! I really love the combination of Asparagus, eggs and bacon. So nice.
Made this tonight for dinner and loved it. I think hubby would like it as a side to a meat, but it was perfect for a light dinner. I'll definitely make it again. My notes:
I needed about 2/3 pound of asparagus (trimmed) to produce 1 3/4 cups. Roasted the asparagus whole at 400 F. for 10 minutes, let it come to room temp and then cut it in 1 1/2 inch pieces. Felt that the dressing needed to be 1.5x the amount cited for maximum coverage and taste. Used a barely hard–boiled egg at room temp and bacon at room temp. This would be a beautiful salad for a group if you leave the asparagus whole and place it on a platter and then top with ingredients…multiplied of course.

My boyfriend and I made this a couple weeks ago as a nice Saturday lunch – so tasty! The flavors worked so well with each other, we both absolutley loved it.
I made an adjusted version of this for dinner last night and it was amazing! My adjustments were based on items I had on hand – my eggs were from a friend's hen and apparently don't taste great when hard boiled so I fried them over medium; I used leftover ham rather than bacon; and sauteed some leeks and garlic that were on their way out. Made this for my husband and I for lunch. YUM! On Sunday for lunch I made BLT's and reserved some bacon. For dinner, I made your chicken asparagus stir fry and just boiled and made this at the same time and used easter eggs from last week! We ate it for lunch on Monday and it tasted great!
I whipped this up last night and ate it for lunch today! Phenomenal, everyone in the office was jealous! They all asked for the recipe and I sent them your way! This is definitely going into my lunch rotation. You make eating healthy so much easier!

I love this salad… I made it the recipe way the first time. Second time I roasted the asparagus. Cooked the bacon with some shallots and added the red wine vinegar, salt, pepper, Dijon, olive oil and sugar to that pan. Stirred well and added to warm asparagus. Then I did a 2 minute soft boiled egg on top… along with a couple of parmesan curls to garnish… So.Good. Putting the dressing on when the asparagus is still warm helps it absorb and eating it at slightly warm or room temperature is the best
room temp for sure…cold numbs the flavour for me !!!

This is my new favorite! Ate as a side last night with a burger, and eating right now for breakfast with poached instead of hard-boiled eggs!
I usually only like asparagus drowned in butter or some rich sauce, but this was delicious! I didn't have any bacon in the house, so subbed two slice of deli ham instead, and it was perfect (though I suspect the bacon would've been even better). I also added a pinch of ground chili flakes for a bit of a kick. Absolutely a make again, perfect for a packed lunch!

I made this over the weekend and added some grilled chicken breast and made the Dijon dressing creamy by adding an egg yolk. It was amazing! Thank you!

I love asparagus. This was great! I made steak with it. I told my husband that the asparagus was the main dish and the steak was a side. You know what happened. His side was the asparagus but he said it was really good.

would the asparagus still be good the next day? I'm new to asparagus cooking so not sure if it would be soggy after refrigeration.

It's for one, you must be doing something wrong, try with Oscar meyer center cut bacon, be sure the asparagus is calculated uncooked, and double check your other ingredients to make sure they match.

I made this for dinner last night and my husband will not stop talking about it. I roasted the asparagus instead of boiling them and we didn't have bacon but I added a little feta and Gorgonzola cheese. For the dressing I made it out of regular mustard, a little olive oil, honey, white balsamic vinegar, salt and pepper, and paprika. Delicious and surprisingly filling!

Made this! Soooooo good 🙂 Roasted the asparagus tossed in a little olive oil, garlic and pepper on 425 for 5 minutes instead of boiling it. OMG the flavor of the asparagus was amazing.

Do you have any tips about what to chnge the bacon to if you are a vegetarian? Looks really fresh
Someone mentioned they left the bacon out and used Feta cheese. Sounds good to me!
How about if you put black beans instead of bacon
Pan seared tofu slightly seasoned? It'll add more protein too.
Use MorningStar Farms bacon. It crisps up very nicely.

So simple and delish! I always keep hard boiled eggs, chopped veggies, protein bars and cooked chicken breasts on hand. Also Greek yogurt and cottage cheese. Makes life of a fit busy mom easier.
This looks like an explosion of spring deliciousness and incorporates most of my favourite things. I bet some chopped avocado would be really tasty with it too!

Less than a bunch.
For me, a bunch came out to around 4 cups so I'm using it to make 3 smaller salads.
This is one of my favorite salads. Can't wait to try your slimmed down version!
