This is my FAVORITE Asparagus Salad is made with no lettuce, just asparagus, bacon and hard boiled egg with a Dijon Vinaigrette.

Asparagus Salad with Egg and Bacon
Asparagus Salad with Egg and Bacon

I’ve been making this Asparagus salad for years, it never gets old! It’s the perfect Spring salad made with just a few simple ingredients – asparagus, hard boiled egg and bacon tossed with a Dijon vinaigrette. I usually eat this for lunch but this would also work as a side dish for Easter.

Asparagus Salad with Egg Bacon and Dijon Vinaigrette

This is one of my go-to salads this time of year. Asparagus and eggs are a match made in heaven, but not just for breakfast, it’s great for lunch too! I always keep hard boiled eggs on hand in my fridge to use throughout the week, therefore this salad came together in less than 10 minutes. And did you know you can also make hard boiled eggs in the air fryer?

Helpful Tips for making Asparagus Salad:

  • Double or triple the recipe for meal prep.
  • You can keep it refrigerated 4 to 5 days.
  • Multiply the recipe to bring it to a potluck and serve it in a large bowl.
  • Eating seasonal means it’s inexpensive to make.
  • Perfect for low-carb diets, gluten-free and Paleo diets

Steam Asparagus in the Microwave

Another way to steam asparagus is in the microwave, just place it in a microwave safe bowl and microwave 2 to 3 minutes, no need to cover or add water.

  1. Easy, fresh, delicious go-to recipe when entertaining Keto friends. Made this multiple times and it’s always a hit!
    Thanks for a great recipe!

  2. I have made this multiple times over the last several years. It’s simple, delicious, and a great way to get a vegetable and protein lunch. Easy to make on a weeknight, too.

  3. Absolutely delicious, flavorful, and fulfilling! I didn’t have red wine vinegar on hand, so I used balsamic vinegar. Worked just as well!

  4. Like all recipes, this was no exception to the quality of deliciousness. Because I like more protein I added spinach and 1/2 can of salmon with lemon juice for a bigger lunch portion.

  5. Wow! This just hits all the right notes. It’s got a egg salad vibe, a deviled egg vibe, plus the bacon. Perfection. I love the base is asparagus, I got the thick ones from the farmer’s market. The only problem is I want to eat this again and again but I only got one bunch of asparagus 😢
The dressing is delicious, I only had white white vinegar and I think I’ll keep making it that way. Might even add red onions next time.

  6. What a fantastic salad! I am obsessed. I had a jar of homemade vinaigrette in my fridge somewhere (or I thought I did!) but couldn’t find it, so this time I used some of the good seasons vinaigrette I also had made up, but added a dollop of Dijon to it. So easy, so delicious, I can’t wait to make it for a friend, too. Though I might be too selfish, maybe I’ll
Just share your recipe so they can make it themselves. 😉

  7. Another easy and delicious recipe!! Added some romaine, tomato, and grilled chicken to make it dinner. So good!

  8. Thiis was really tasty! I added cooked shrimp and a crusty baguette on the side to fill me up a bit more and it was perfect!

Made this for Easter Sunday. What a hit ! I will definitely be saving this recipe.
I changed the dressing a touch. I used greek yogurt instead of the red vinegar and added some minced garlic.

  10. I love this recipe! As a vegetarian I skipped the bacon and added capers and feta for that saltiness and protein. So yummy!

I made this for dinner, but forgot the wholegrain roll….. oops! This is an EXCELLENT recipe, healthy, full of flavor, and one I will make again! The sauce was just the right amount and the flavor seriously complemented the entire dish.

  12. Really liked this recipe! It’s up there w my other long time favs like Gina’s enchilada sauce, butternut squash and black bean enchiladas, chicken chili, chocolate chip clouds, flourless zucchini brownies and many others. I suggest tossing the asparagus w the dressing then top w bacon bits and egg. I made extra dressing and served on side for those who wanted a little more.  For one bunch of asparagus I used 1 egg and 1 slice bacon and it was great.

  13. I made this with a couple of changes. I had no red wine vinegar, so used balsamic vinegar. Also added a sprinkling of feta cheese on the salad. It was wonderful!

  14. So so so good! I adapted slightly – 2c chopped asparagus, 2c chopped spinach, 2 boiled eggs, 2 slices bacon, doubled the dressing and added a handful of cherry tomatoes. The possibilities are endless! I will be making this often. Probably more often than I should haha Thank you!!!

  15. I just made and ate this for my lunch. So delicious, and it came together quickly. I will definitely make this again!

Loved this recipe! So easy to make for lunch or even as a side. I cheated and used the real bacon bits instead of cooking my own and it was still delicious! Will definitely be making this again!

  17. I love this recipe! I usually add whole wheat orzo to bulk it out, and use whatever green veggie we have on hand if we don’t have asparagus. It makes a great meal prep!

  18. I thought this seemed like a strange combo, but I had it for lunch today and it was delicious! I swapped ham for bacon and it was great!

    1. This is honestly one of my favorite recipes. I only make it once or twice a year when asparagus goes on sale, but it tastes like happiness and feels good besides. My husband loves it too! 10/10

  19. Holy moly, this is my fave lunch. I haven’t experimented with adding anything, but I don’t think it even needs it! I read someone’s comment about being a good side dish to steak. I’m gonna omit the egg and make this as a steak side dish this summer! Definitely can be done on the grill I’m sure, too!

  20. DELICIOUS!!! A wonderful compliment to the grilled steaks I made. This recipe is a keeper – made as directed and wouldn’t change a thing.

  21. Love this recipe. I get asked to bring this to Easter dinner. I need the recipe for 12 servings instead of one 🙂

  22. Great idea! Very easy to throw together. I also added chick peas (why not??) for an extra boost. And if you’re doing WW, that doesn’t add any points. Another great recipe by Gina!!

Was never a fan of vegetable salad. But with this one, I can make an exception. This looks delicious I can just grab it out of my screen. Will definitely try this one.

  24. This recipe was amazing! The dressing was perfect and tangy, I’d put it on everything. Even my fiance, a salad hater, gobbled this salad up. Will definitely be making again!

  25. I got home from the store and realized I forgot the asparagus, but I did have green beans. Made it with them instead and it was just as delicious! This is one of my go to’s for meal prep!!

  28. I just made this salad in a larger quantity and using turkey bacon for a Memorial Day cookout and it was such a big hit! I got so many compliments on it, how pretty it looked and how delicious it tasted! Thanks so much for an awesome recipe!

  42. An excellent salad/side dish. Had plans to make this today for lunch but realized I had only enough for 1 salad and I really needed two. I served it as a side with fish cakes. Loved the recipe.

  43. Wow Gina, I think this is my new favorite quick lunch. It takes absolutely no time at all to make. I did add some Reduced Sodium Garbanzo beans to mine just for a bit more after my workout today. SO GOOD!!!!! Thanks again for all the amazing recipes. My family loves everything I make from your site and cookbooks. And I make A LOT! Haven’t found a recipe we don’t like yet.

  44. So delicious, so simple, so easy with minimum planning required! This is going to be a staple on my spring lunch menu from now on. For people who like more dressing on their salads, the amount in the recipe might not be enough, but it was perfect amount for me. I don’t usually put any dressing on my salads but this was nicely sharp and a good compliment for the other ingredients.

  45. I just made this, exactly according to instructions and it was absolutely delicious! That dressing is amazing (I sprinkled a smidge of low fat feta on top of mine but it’s definitely perfect without as well)

  46. This looks so yummy however I’m not a fan of mustard. Is there anything else I could use? Or can you not really taste it?

  54. This salad is going into my lunch rotation. It reminds me of the wilted spinach salad my Grandma used to make. I make a weekly batch of a dozen eggs in the IP for my husband so throwing in a couple extra won’t hurt. I may switch out “zoodles” or spinach when the asparagus is out of season. Yum!

  58. 2 slices cooked and crumbled center cut bacon —> I live in Australia so just wondering what this would be equal to in grams? I’ve got lean cut bacon on hand. Thanks!!

  59. So good! I pan-fried the asparagus with some salt, pepper, and garlic powder. Tossed in the cold crumbled bacon to warm it up a bit, then laid everything on a bed of fresh spinach. Sliced the egg and poured the dressing over all. Definitely looking forward to having this again tomorrow!

Hi Gina: I made this this weekend. it was very simple. I made a triple batch (knowing it would be good) for my lunches this week. I love the flavor after it refrigerates a number of hours. Thanks for a great lunch and mid-afternoon snack recipe!

  70. Made this last night for today’s lunch and oh my goodness is this ever delicious! I will definitely make it again. I also added a few green onions, omg so good, this is a keeper!

  71. I made this and didn’t trust you on the dressing amount (shame on me) so I doubled it – I would’ve been fine with your amount! Haha, its got a strong flavor. Seriously loved it though! Pairs perfectly with seared salmon

  78. My new favorite lunch! YUM! Spring in a bowl and really elegant. This dish, while extremely simple, brings together several of my favorite flavors. I think this would pair beautifully with leftover salmon as well for a slightly heartier meal. I used my Instant Pot to cook up several eggs (5 minutes on low pressure for a nice soft/medium boiled egg) and my asparagus (2 minutes on steam after the eggs come out of the cooker, and all thrown in an ice bath together), which brought this dish together in a snap, and I have a couple days of lunch ready to go! I think a few snipped chives in the mix would also be a nice bright touch if on hand! Thanks for your endless supply of beautiful and delicious recipes!!

  82. I love this recipe.  I use the Alfresco pre-cooked, chicken bacon.  It is really tasty and just one point for two slices.  I also add a few goat cheese crumbles.

  83. This recipe looks amazing except for the dressing component for me. I don’t care for any mustards and can’t have vinegar because it makes me sick. Any alternative options that you can think of that would sub well?

    Thanks!

  84. I was looking for a way to lighten up a favorite Broccoli & Bacon salad that is made with 1 C mayonnaise. This looks like the ticket! I will use this dressing and substitute broccoli for the asparagus.

  85. Another winning recipe!!!! Didn’t and wouldn’t change a thing.  Made enough that we have leftovers for lunch!  Yea!!!!!

  86. I used a bit more dijon than the recipe called for (because I am lazy about measuring) but it turned out absolutely fantastic. This is my first Skinnytaste recipe, but man, am I sold.

  87. Like the Lemon Chicken stir fry recipe I thought this was also bland. I had to double the dressing and added more Dijon mustard than stated in the recipe. I had it with the mini turkey loafs, which I love BTW. Can’t wait to try more recipes!

  88. I am obsessed with this salad! I like it the day after for lunch with grilled chicken. It's an excellent spring salad!! Thanks!

  89. I love this combo. Definitely trying. I sometimes have eggs over asparagus (fried with a soft yolk) and a bit of parmesan cheese on top. So good. 🙂 Thanks for the idea!

Looks DELICIOUS! Cannot wait to try this. My family isn't a big fan of mustard (more specifically dijon) – any suggestions on what to substitute for that? So excited to eat this tomorrow 🙂

  91. I was worried there would not be enough dressing, because it doesn't seem like very much, but it was the perfect ammount!! This was so good and I'm sure I will be eating it again tomorrow (:

  92. I used turkey bacon and it was great! Next time I will add some grape tomatoes for color. This would be perfect on a brunch menu.

  93. OMG this was delicious Gina! I hadn't made up the dressing last night and brought all the ingredients for lunch today but forgot the oil. I have to say it was yummy without it!! I will definitely make this again

  94. When I calculate this using my ww phone app I get 4 pp. but when I calculate this on ww online under the recipes sections it comes out to 6pp. So when calculating the points for your recipes do you always use the recipe tool on ww online? 96. I'm curious as to how this can be considered "skinny" when 117 of the 219 calories (more than half) come from fat (each gram of fat is equal to 9 calories; 9 times 13 grams is 117). Typically, a dish is considered "low fat" if less than 33% of it's calories come from fat. I'm sure it's delicious, just not sure it's "skinny."

technically this serves one, but if you are doing it as a side dish, it could probably be made into 3 servings. so i would just multiply the ingredients by 4

*looks over shoulder* Are you in my office today?! I made your recipe last night and had it for lunch today – it's as if you knew! I haven't made it in a year and you re-posted this recipe on the very day I ate it. That's kind of cool. 🙂 Thanks for the delish recipe!

  102. Just made this tonight. IT IS FABULOUS! Used turkey bacon instead and it was great. Huge thumbs up from the hubby. Actually served it as a side to the Easy Macaroni Casserole. We loved it all. Definitely will be making again. Thanks for your wonderful recipes. ~Andrea

  103. Looks yummy, but am unsure how this is can be called "low fat" when almost half of the calories come from fat.

  104. Yummy bacon!! I'm literally obsessed with bacon right now. Not good since I'm trying to get in shape. Anyway, need to try this salad! Thanks for sharing.

i just posted chicken dish recipe on my blog. Also with bacon, but kinda healthy version anyway. 😀 Oh that bacon it's ruining my goals 🙂

    http://www.theperfectchapter.com/spinach-feta-stuffed-chicken/

  105. Just last week I made a VERY similar recipe, but used crumbled baked prosciutto instead of bacon…

    great minds salad alike… 😉

  106. This sounds amazing; I cooked 3 pkg. of bacon on Sunday and put it in the freezer – I use the Martha Stewart recipe for cooking bacon in the oven – then I freeze it ready to take out as needed. flat plastic container – separate the levels so that it doesn't stick together – wax paper or foil, or plastic wrap.

  107. This would also work on the Dukan diet. I have currently lost 20 lbs. using the Dukan diet and I love asparagus. Will be trying this. Thank you

  108. Made this tonight for dinner and loved it. I think hubby would like it as a side to a meat, but it was perfect for a light dinner. I'll definitely make it again. My notes:

I needed about 2/3 pound of asparagus (trimmed) to produce 1 3/4 cups. Roasted the asparagus whole at 400 F. for 10 minutes, let it come to room temp and then cut it in 1 1/2 inch pieces. Felt that the dressing needed to be 1.5x the amount cited for maximum coverage and taste. Used a barely hard–boiled egg at room temp and bacon at room temp. This would be a beautiful salad for a group if you leave the asparagus whole and place it on a platter and then top with ingredients…multiplied of course.

    Enjoy!

This was really good! I wouldn't say it's inexpensive… asparagus is very expensive and so is bacon even if you only buy a few slices. It will definitely have to be a budget splurge for me whenever I make it!

  110. This was delicious for my lunch today. I added edamame from another of your recipes that I had left over.

  111. My boyfriend and I made this a couple weeks ago as a nice Saturday lunch – so tasty! The flavors worked so well with each other, we both absolutley loved it.

  112. I made an adjusted version of this for dinner last night and it was amazing! My adjustments were based on items I had on hand – my eggs were from a friend's hen and apparently don't taste great when hard boiled so I fried them over medium; I used leftover ham rather than bacon; and sauteed some leeks and garlic that were on their way out. The dressing recipe I followed to a T and have to say it was super delish! Thank you for sharing this! Definitely a keeper.

  113. Made this for my husband and I for lunch. YUM! On Sunday for lunch I made BLT's and reserved some bacon. For dinner, I made your chicken asparagus stir fry and just boiled and made this at the same time and used easter eggs from last week! We ate it for lunch on Monday and it tasted great!

  114. I whipped this up last night and ate it for lunch today! Phenomenal, everyone in the office was jealous! They all asked for the recipe and I sent them your way! This is definitely going into my lunch rotation. You make eating healthy so much easier!

  115. How far in advance can you make this? Curious if I can make some on Sunday to take for lunch during the week…

  116. This recipe sounds amazing just wondering could you use green beans instead thanks,Love your blog have been cooking from it every night. Sorry if this post several times my computer is acting up.

  117. I love this salad… I made it the recipe way the first time. Second time I roasted the asparagus. Cooked the bacon with some shallots and added the red wine vinegar, salt, pepper, Dijon, olive oil and sugar to that pan. Stirred well and added to warm asparagus. Then I did a 2 minute soft boiled egg on top… along with a couple of parmesan curls to garnish… So.Good. Putting the dressing on when the asparagus is still warm helps it absorb and eating it at slightly warm or room temperature is the best

  118. This is my new favorite! Ate as a side last night with a burger, and eating right now for breakfast with poached instead of hard-boiled eggs!

  119. I usually only like asparagus drowned in butter or some rich sauce, but this was delicious! I didn't have any bacon in the house, so subbed two slice of deli ham instead, and it was perfect (though I suspect the bacon would've been even better). I also added a pinch of ground chili flakes for a bit of a kick. Absolutely a make again, perfect for a packed lunch!

  120. I made this a few days ago as a side salad; it was incredible! We will definitely be making this again.

  121. Made this for lunch at work today. Delicious! I cheated and used few bacon bits to make it a little easier.

  122. I made this over the weekend and added some grilled chicken breast and made the Dijon dressing creamy by adding an egg yolk. It was amazing! Thank you!

  123. Nice looking salad and I love asparagus. I have just fixed up a batch of Easter eggs and know for sure that I will need some inspirational ideas to use them up. Thank for sharing! 🙂

It's for one, you must be doing something wrong, try with Oscar meyer center cut bacon, be sure the asparagus is calculated uncooked, and double check your other ingredients to make sure they match.

I made this for dinner last night and my husband will not stop talking about it. I roasted the asparagus instead of boiling them and we didn't have bacon but I added a little feta and Gorgonzola cheese. For the dressing I made it out of regular mustard, a little olive oil, honey, white balsamic vinegar, salt and pepper, and paprika. Delicious and surprisingly filling!

This sounds wonderful. I raise asparagus crowns on my farm and sell to home gardeners to grow their own organic asparagus. My Gus is just starting to come in, going to make this very soon. Thank you for the recipe and idea.

Made this! Soooooo good 🙂 Roasted the asparagus tossed in a little olive oil, garlic and pepper on 425 for 5 minutes instead of boiling it. OMG the flavor of the asparagus was amazing.

    1. That sounds fantastic. I was going to make this tonight and think I will roast the asparagus instead! Thanks for the tip! 🙂

  135. I have been eating asparagus fried up in my eggs all week! Next week I need to change it up 🙂 this looks incredible! My kind of salad 🙂

This sounds brilliant, Gina! I've been all about the eggs in my salads these days and I love the asparagus and egg pairing. Yay for spring produce!

  137. Making this tonight (without the egg) as a side dish to grilled steak! I added a bit of chopped parsely. Perfect dinner for a perfect spring day!

So simple and delish! I always keep hard boiled eggs, chopped veggies, protein bars and cooked chicken breasts on hand. Also Greek yogurt and cottage cheese. Makes life of a fit busy mom easier.

  139. This looks like an explosion of spring deliciousness and incorporates most of my favourite things. I bet some chopped avocado would be really tasty with it too!

  140. Beautiful! I love the combination. I've also used rendered fat from bacon, steak and even turkey to make vinaigrettes for asparegus, and they rock!

  141. What a great recipe, so simple and healthy. Well, maybe the bacon isn't but if you don' t overdo it 🙂 count me in!

Local asparagus is one of the treats I look forward to every spring. I see this salad being made for my lunch soon. 🙂
