This is my FAVORITE Asparagus Salad is made with no lettuce, just asparagus, bacon and hard boiled egg with a Dijon Vinaigrette.

I’ve been making this Asparagus salad for years, it never gets old! It’s the perfect Spring salad made with just a few simple ingredients – asparagus, hard boiled egg and bacon tossed with a Dijon vinaigrette. I usually eat this for lunch but this would also work as a side dish for Easter.

This is one of my go-to salads this time of year. Asparagus and eggs are a match made in heaven, but not just for breakfast, it’s great for lunch too! I always keep hard boiled eggs on hand in my fridge to use throughout the week, therefore this salad came together in less than 10 minutes. And did you know you can also make hard boiled eggs in the air fryer?

Helpful Tips for making Asparagus Salad:

  • Double or triple the recipe for meal prep.
  • You can keep it refrigerated 4 to 5 days.
  • Multiply the recipe to bring it to a potluck and serve it in a large bowl.
  • Eating seasonal means it’s inexpensive to make.
  • Perfect for low-carb diets, gluten-free and Paleo diets

Steam Asparagus in the Microwave

Another way to steam asparagus is in the microwave, just place it in a microwave safe bowl and microwave 2 to 3 minutes, no need to cover or add water.

Asparagus Salad with Egg and Bacon

Ingredients

  • 1 large hard boiled egg, peeled and sliced
  • 1 2/3 cups chopped asparagus
  • 2 slices cooked and crumbled center cut bacon, check labels for Whole30
  • 1/2 tsp Dijon mustard, check label for Whole30
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon red wine vinegar
  • pinch salt and pepper, to taste

Instructions

  • Bring a pot of water to a boil, add the asparagus and cook 2 to 3 minutes, until tender yet firm. Drain and run under cold water to stop it from cooking further. Set aside.
  • In a small bowl mix the Dijon, oil, vinegar and a pinch of salt and pepper.
  • Arrange the asparagus on a plate, top with egg and bacon and drizzle with the vinaigrette. Enjoy!

    I made this for dinner, but forgot the wholegrain roll….. oops! This is an EXCELLENT recipe, healthy, full of flavor, and one I will make again! The sauce was just the right amount and the flavor seriously complemented the entire dish.

  2. Really liked this recipe! It’s up there w my other long time favs like Gina’s enchilada sauce, butternut squash and black bean enchiladas, chicken chili, chocolate chip clouds, flourless zucchini brownies and many others. I suggest tossing the asparagus w the dressing then top w bacon bits and egg. I made extra dressing and served on side for those who wanted a little more.  For one bunch of asparagus I used 1 egg and 1 slice bacon and it was great.  

  3. I made this with a couple of changes. I had no red wine vinegar, so used balsamic vinegar. Also added a sprinkling of feta cheese on the salad. It was wonderful!

  4. So so so good! I adapted slightly – 2c chopped asparagus, 2c chopped spinach, 2 boiled eggs, 2 slices bacon, doubled the dressing and added a handful of cherry tomatoes. The possibilities are endless! I will be making this often. Probably more often than I should haha Thank you!!!

    Loved this recipe! So easy to make for lunch or even as a side. I cheated and used the real bacon bits instead of cooking my own and it was still delicious! Will definitely be making this again!

  7. I love this recipe! I usually add whole wheat orzo to bulk it out, and use whatever green veggie we have on hand if we don’t have asparagus. It makes a great meal prep!

  8. I thought this seemed like a strange combo, but I had it for lunch today and it was delicious! I swapped ham for bacon and it was great! 

    1. This is honestly one of my favorite recipes. I only make it once or twice a year when asparagus goes on sale, but it tastes like happiness and feels good besides. My husband loves it too! 10/10

  9. Holy moly, this is my fave lunch. I haven’t experimented with adding anything, but I don’t think it even needs it! I read someone’s comment about being a good side dish to steak. I’m gonna omit the egg and make this as a steak side dish this summer! Definitely can be done on the grill I’m sure, too!
