This is my favorite oatmeal recipe to make ahead or serve for company! It’s also great for the holidays, or you need a potluck breakfast dish. It’s a warm, satisfying, heart-healthy breakfast your whole family will love. It feels like you’re eating dessert, only it’s loaded with fiber. What I love most about this dish is that it tastes like I am having dessert, for breakfast. In fact, if I am craving a sweet treat, I usually opt for baked oatmeal. I have seen recipes that blend the oats, but to be honest I prefer keeping them in tact, I think the texture is better.

Baked Oatmeal Variations and Tips:

  • You can make this with any combination of nuts and fruit you like, the possibilities are endless!
  • Make it gluten-free by using gluten-free oats, and you can make this dairy free using any milk you would normally have on hand.
  • Swap the bananas for thin sliced apples and walnuts.
  • Swap the blueberries for strawberries or mixed berries.
  • To make ahead, you can refrigerate for 3 to 4 days.
  • Reheat leftovers in the microwave for about 60 seconds, until warmed.

This is the BEST Baked Oatmeal with Blueberries and Bananas. It's perfect to serve guests for brunch, or make it ahead for the week for easy meal prep, as leftovers taste just as good reheated.

Ingredients

  • 2 medium ripe bananas, (the riper the better) sliced into 1/2" pieces
  • 1 1/2 cup blueberries
  • 1/4 cup honey, or maple
  • 1 cup uncooked quick or old fashion oats*
  • 1/4 cup chopped walnuts or pecans
  • 1/2 tsp baking powder
  • 3/4 tsp cinnamon
  • pinch of salt
  • 1 cup fat free milk, or any milk you desire
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 375F.  Lightly spray a 8 x 8" or 9 x 9" ceramic baking dish with cooking spray; set aside.
  • Arrange the banana slices in a single layer on the bottom of the ceramic dish. Sprinkle half of the blueberries over the bananas, 1/4 tsp of the cinnamon, 1 tbsp of the honey and cover with foil.

  • Bake 15 minutes, until the bananas get soft.
  • Meanwhile, in a medium bowl, combine the oats, half of nuts, baking powder, remaining cinnamon, and salt; stir together.
  • In a separate bowl, whisk together the remaining honey, milk, egg, and vanilla extract.
  • Remove the bananas from the oven, then pour the oat mixture over the bananas and blueberries.
  • Pour the milk mixture over the oats, making sure to distribute the mixture as evenly as possible over the oats.  Sprinkle the remaining blueberries and walnuts over the the top.

  • Bake the oatmeal for about 30 minutes, or until the top is golden brown and the oatmeal has set. Serve warm from the oven. Cut in 6 pieces.

  7. I just made this today and it’s so yummy! I added some protein powder to the milk mixture as I like extra protein in the morning to keep me full until lunch. I also had to cook it in my ninja foodie as my range is out of commission until later this week. I cooked it at 375° and it only needed about 15 minutes until it was cooked through. Will definitely be making this frequently! So delicious!

  12. Part of my Christmas morning brunch this year–everyone loved it! I prepped the dry ingredients the night before (used old fashioned rolled oats for those wondering if they work–they do!) so all I had to do Christmas morning was slice the bananas and throw the liquid ingredients in a measuring cup. When it was time to add the oatmeal and liquid ingredients I just combined them prior to pouring as others suggested and it works perfectly. I can’t wait to experiment with other fruits this coming year. Such a great recipe–thank you Gina!

  26. I have recommended this recipe to so many people! The basic recipe is adaptable to many fruit choices. I no longer even add the honey and don’t miss it as the fruit is sweet and vanilla enhances the natural sweetness. Currently eating this with diced apples. Leaving out the honey also reduced my WW personal points.

  29. Followed this exactly other than using old-fashioned oats instead of instant. Came out like mush on the bottom with the bananas. Need to cook longer?
    Or just mixed up better? How do you keep the bananas from being mush?

  32. Followed the recipe exactly and this is the best oatmeal! Almost a crisp. Made it in advance and refrigerated. Then I warmed a portion in the air fryer for just a bit more cripness and it’s so good with coffee for breakfast. Wish my mom had known about this all those mornings when we were kids. Five stars for sure. One possible tweak would be to add just a bit of lemon juice.

    • Good recipe. I used half maple syrup half honey and I mined all the wet and dry Ingredients together in 1 bowl added the other blueberries and poured it over the baked bananas. Worked out well!

  39. I have been making this recipe for years, it’s one of my favorite special breakfasts. After trying it as written to start, I now do the following: mix the wet and dry ingredients, no nuts (I’m just not a nut person) and leave out the vanilla (I thought it made everything taste too much like vanilla which wasn’t what I wanted). I also like to add raspberries on top. I’ll make this even without banana, so I just skip the whole first part and then do just blueberries and raspberries on top, I love it. It’s great reheated too. Having tried other baked oatmeal recipes, the ratios here for the oatmeal part are perfect for me so I keep coming back.

  44. I’m using old fashioned oats this time, after using the quick oats called-for in the recipe my first time. I loved the dish, but would have liked just a little more density. You don’t have to be a baker to make this dish. It accepts all sorts of substitutions of fruits, nuts, cinnamon amount, liquid choices like almond milk (I wonder how it would taste with goat milk).

  45. Unfortunately this was a miss for me. I cooked it for 45 minutes and it was still a mushy mess. Glad so many others liked it but it didn’t work out for me.

  55. This is really good. I needed to use some Gala apples and over ripe bananas.  I’ve been looking for something I can grab and go as I’m very bad about taking time to eat in the morning.  It was very good warm yesterday when I made it and this morning I tried it cold and decided it didn’t need to be heated. 

  56. I made this last weekend and loved it! Tried it again this weekend but substituted an apple (chopped) for the banana. Both methods were delicious! Biggest problem is keeping the husband from eating all the leftovers the same day! 🙂

  57. Love, Love this recipe, you can even cut recipe in half if you live alone and put it in a loaf pan. This is such a healthy recipe. I don’t use all the sweetener I just drizzle some real maple syrup or real honey, it is all you need as the banana is sweet. YUMMY!!!

  62. I always just combine the wet and dry ingredients then pour over the bananas and fruit.  Makes it way more evenly distributed.  I also switch up the fruit based on what frozen pack I have at the time.  Frozen cherries and blackberries is an excellent combo!

  64. I’m a single gal and love some of your lunch and dinner recipes! Usually, I lean towards the dinner options you provide and can figure out if it can be stored and will reheat easily.   65. To reduce the SP, I leave out the honey and nuts. I LOAD it up with fruit and make sure that my bananas are sweet. I only had old fashioned oats so I soaked them first. It is a soft dish, not firm like a granola bar.

    I do just mix it all together and bake it.

    I am wondering if you took cooked oatmeal, added the eggs, fruit, cinnamon/vanilla and baking powder then baked, would it be a 0 SP dish on purple?

    I do enjoy this for breakfast or a snack later in the day!

  67. This was fantastic. I made it with peach slices in place of the bananas, and added a couple more peach slices on top for good measure. The oat texture was quite fluffy, bursting with blueberries with a nice crunch from the walnuts.

  69. Another delicious recipe from Skinny Taste! I took a few shortcuts with the recipe and it worked for me.

    – My bananas were sweet enough so I didn’t add the honey to save on SP.
    – I had old fashioned oats instead of quick oats so I soaked them in the liquid mixture for about 15 minutes while the bananas roasted.

    The oatmeal bakes up very thin and it wasn’t filling enough for me so I ended up cutting it into 5 pieces and ate one each day this week. It does reheat very well.

  70. Best banana oatmeal blueberry recipe I’ve used! I’ve tried many different recipes usually they mix all ingredients together but tends to be good right after baking and dry the next day. This turned out super moist with the right amount of sweetness. Didn’t have that many blue berries so chopped up some strawberries for first part with banana then topped with blue berries. Also used chopped cashews. turned out great! Highly recommend

  78. your recipes are great, but way too high in sugar, for desserts and breakfast.  How is this skinny?

    • The sugar is coming from the fruit which is natural sugar.

      • The sugar is coming from the honey (as well as some from fruit). Personally, I will use much less honey.

    • You can make w/o honey as the bananas are sweet. I personally just drizzle w/real honey or real maple syrup. 

    • Compared to another similar baked oatmeal recipe that had 449 calories per serving, this is skinny. This has less sugar, less fat (the other recipe used 3 T coconut oil or melted buter and 1/3 cup honey or maple syrup), and half the calories. It may not be your version of skinny, but for someone trying to break a waffle or donut habit, this is way better. Her recipes are “skinny” compared to a regular recipe for a similar meal. If you don’t like it, don’t make it. I lost 94 pounds using her recipes, so they can’t be too bad.

  79. I love this baked oatmeal recipe. I have all the ingredients except quick oats. Just have old fashion oats. Can you substitute?  And how?  Trying to stay out of stores and most stores are out of oatmeal anyway. I do have bananas and blueberries. Thank you. 

    • I wish someone would answer about using rolled oats rather than quick. I had all the ingredients ready to go this morning, then re-read the recipe which calls for quick oats. Darn!

      • I use regular oats all the time. I mix them with the milk and let it sit while the bananas cook for the bottom layer.

I took out the honey and used 3 Tbsp of sugar free Toroni almond syrup.  I swapped 30 cal almond milk for the ff milk.  This reduces the points on purple to just the walnuts.  I love this and don’t think I will ever have to throw away another banana because it’s too ripe!💜 whole tray is 8 pots.

    • My kids LOVED this.
      I subbed thin sliced apples for the bananas and real maple syrup for the honey.
      I wish I would have baked it longer as it seemed a bit soggy to me. When I went back and looked I saw that it said 30 *or until golden* and I just went with the 30 minutes. I also accidentally mixed the oatmeal with the milk mixture and then poured it over, not sure if that would make a difference in texture.
      Next time I may leave out the maple syrup/honey and just drizzle it over before eating.

  83. Any suggestions on replacing egg?  I usually use apple sauce but probably won’t work in this case 

    • Flax egg. I tablespoon of flax meal with little bit of water and mix it, let sit for a min and you’re good to go.

  86. I made these yesterday! Very yummy. I omitted the nuts and only used 2 tbsp on honey. Recipe builder shows it at 2 blue points for 1/6 of the recipe.

  88. I’m so pleased with this recipe. Perfect combination of berries, oats, nuts, with a hint of banana. As the recipe mentions, you could add different berries and switch out the pecans for walnuts or almonds. I would definitely make this as a regular dish for breakfast or brunch! Nicely done!

    • You have to put it in the recipe builder, not just type in the nutritional facts. That being said, I did that and calculated 5 on Green.

  91. I made a mistake while making this (didn’t read the directions first!) and added everything together instead of pouring wet ingredients over top. I purposely also mashed the banana into the oats since I’m not a huge banana lover, but I do enjoy it in baked goods for the sweetness. I do love vanilla and cinnamon so I added extra. It was AMAZING, and I’m not a big banana or oatmeal person!! This will probably be in my weekly rotation every week it’s so delicious! I could eat the entire pan!! Thank you Gina!!

  93. Absolutely delicious, especially with a couple tablespoons of vanilla yogurt on top.  

    Next time I will use a bit less banana. My family is all weird about mushy textures. We found it a bit too soft on the bottom. We will definitely be making this again. 

    • I made it without the nuts. When I entered the recipe without nuts  into the WW recipe builder it was 4 points when the recipe serves 8 and 5 points when it serves 6.  

  94. Made the recipe as stated minus the walnuts. When I entered the nutrition information in WW, came up as 9 points on the green plan.

  95. I have gout and need to have low sodium, what can I take out of this recipe to lower it please?

    • I have to follow a low sodium diet also and 77mgs is low. (I’m supposed to stay under 1200 mg) There are only two salt sources in the recipe. Baking soda and salt, just don’t add either. That really all you can do to modify it. but it could affect the flavor or texture since baking soda is a leavening agent.

      • I also eat very low sodium, I leave out salt and do use the baking soda you can always cut the baking soda amount in half.

I made it the way the recipe states the first time and tried it the way some other reviewers advised the second time with mixing it all together and not baking the bananas first. We liked it better with the bananas baked first. Either way it was delicious and it keeps you feeling satisfied.

I love this recipe for meal prep for breakfasts or lunches.  It freezes well too.  The second time I made it I mashed the bananas and mixed in with the wet ingredients then mixed wet and dry ingredients together in a bowl.  I skipped the step of baking the bananas.  I liked it even better this time as I wasn’t a big fan of the consistency or appearance of the mushy bananas on the bottom.  Otherwise made just as directed.  So good!  

  118. Unfortunately my was a mushy mess after following all directions. Also tried adding 10 minutes to the bake time.I used frozen blueberries, and am wondering if I should have used less than the indicated fresh amount?

    • I always find it best to defrost and dry out frozen blueberries before using them in this recipe, pancakes, breads, etc. Hope that helps!

  125. Meh, this was very very bland.  A LOT more salt would help it.  Next time I would also double the walnuts, there wasn’t quite enough to have any sort of satisfying crunch. 

    Also the top says 35 min cook time, however there is a 15 min bake of the bananas, and then 30 min bake of the oatmeal (which actually takes more like 40 min to set).  So it is at least 45 min to bake. 

    Also, what is the purpose of spreading the oats then pouring the milk mixture over?  Why not combine them first to make sure they are well-mixed, then spread it all over the bananas – way easier. 

    Also it took 3 bananas to cover the bottom with measuring the thickness to half an inch in an 8×8 pan.  It seemed very thick.  I think 1/4 inch would be better.  Also – why not incorporate the bananas into the bake?

    • It freezers beautifully! I freeze portions and then when I want some I take a frozen block out of the freezer and microwave it for 3 minutes and it is PERFECT, just like the day I made it!

I don’t believe this recipe is supposed to have a bar/cookie texture (like some commenters were expecting); mine certainly doesn’t. But it’s true to its name – baked oatmeal.     For those who are disappointed, baked oatmeal is not equal to an oatmeal cookie. Imagine the softness of an oatmeal with a smooth bread pudding like consistency in the middle, then golden brown oats that are a little more firm on top. Will make again perhaps even Christmas morning.

  159. I made this today as part of my weekly meal prep. I wasn’t thrilled with the consistency of it, I was thinking it would turn out more like a “breakfast bar”, but it was mushy.  My hubby and I taste tested it, we agreed the flavor was good but it was too mushy and we threw it away.

  160. Wow! I first tried the pumpkin and was not impressed probably because as you cannot get canned pumpkin in Mexico I used just pureed one and it probably was lacking sugar. This however. WOW! I used instant oats since quick oats again do not exist in this country and frozen blueberries since regular ones are very expensive here and I figured since they were going to be baked it would not matter much. I used sweetened almond vanilla milk and added a bit of stevia, used maple instead of honey and just one tablespoon to cut down the total carbs. Made them in individual ramekins.   165. This was great! I used 365 (Whole Foods brand) Old Fashioned Rolled Oats (not quick cooking) since they were one of the few brands that tested zero for traces of weed killer! They still baked no problem. I also used half the amount of honey figuring those who like it sweeter could just drizzle a little more on top if they liked.  Personally I could use more cinnamon but that’s just me ?

The SmartPoints® calculator isn’t meant for recipes and will often give you the wrong points (usually higher) because it’s counting 0 points foods such as eggs, chicken, fruits and vegetables.   186. Oh my! I just made this Baked Oats this morning and it sure is yummy. I followed the recipe to a T and it turned out delicious. I like how it’s not too sweet.     • I would like to omit the pecans too. How many points would it be?

    • Just look at your WW points to see what 1/4 cup nuts is worth and subtract that from your recipe. 1/4 pecans is 6 points. So if the whole recipe is 6 servings at 6 pts each, then not using pecans reduces each portion to 5 pts each. Just do the math!

      • I make a similar version of this in muffin form, and I put 3-4 pureed dates in as my sweetener (in addition to the bananas). _I_ think it tastes lovely but it is definitely less sweet than most breakfast oatmeal/muffins. I tried it with no dates, just bananas and it was too plain tasting for me. I’ve been slowly reducing my added sugars for a while, so I’m used to it. I just did a quick calculation with 4 dates and it looks like about 8 grams of added sugar per muffin – all from fruit.

    • Just be careful….there are 23 grams of sugar in this recipe. Honey has a very high sugar content.

  231. I made this for breakfast this week with my modifications (low FODMAP, no dairy, gluten free, etc) and it was DELICIOUS. I subbed pure maple syrup for honey/agave because I can’t have those and it was so incredibly delicious! I’m making a second tray tonight so I have it for the next few days!     • Made this tonight for a quick and healthy breakfast option throughout the week for my kids…hope it makes its until the morning!! Made a few adjustments to make GF and used an almond/coconut milk blend, Gina and the skinnytaste recipes have helped fall back in love cooking again.

    • There’s so many egg subtitiutes. I use a flax or chia seed “egg.” I’ve also used applesauce as well as water, baking soda and vegetable oil. All work great!

This is amazing.  I made it this morning with a couple of minor revisions since I didn’t have all the ingredients on hand.  I used frozen blueberries instead of fresh and I used maple syrup instead of honey.  I cut the maple syrup down to 1/8 of a cup.  I also added sliced almonds instead of the walnuts or pecans.  

    It was so delicious.  It smells wonderful while it is baking.  Honestly, it was hard to keep myself from eating the entire pan!

  263. So, it took just 4-1/2 years to find and make this, but what a find! It tastes as wonderful as my house smelled while baking it, and I “sampled” my way right through 1-1/2 servings before forcing myself to stop. My bananas were so ripe that I didn’t need to cook them down first. Just layered everything together, put all the walnuts on top (so they would be nice and toasty) and placed it in the oven. Took just a little over 30 minutes to arrive at YUM!

I just baked this but I tweaked it to add more fiber and calcium:  Step 1 is the same.  In Step 2 I used quick cook STEEL oats and pumpkin  pie spice, with pecans.  Step 3: Biggie:  Instead of milk I used sweetened light vanilla soy milk–1 1/4 cups to compensate for the denser oates.  NO honey, NO extract.  This can also be done with sweetened vanilla almond milk, etc.  Same cooking time–it was perfect.  6 oz container of blueberries is perfect.  I’m 64 and need the higher fiber and calcium.

  274. My grocery store was out of blueberries, so the first time, I tried it with strawberries. I sliced the strawberries on the bottom layer and cut them into chunks to sprinkle on top and I used honey. Today I made it with blueberries and agave nectar. I like the classic strawberry-banana combo better, but prefer agave nectar, as I found the taste of the honey overwhelming. I love the combination of apricots and cherries, so I am going to try that when those fruits are in season. This is a really great and filling breakfast, love the simplicity of the recipe.

I've made this in a number of different versions, for example: with and without blueberries, with apples, with other berries, with old fashioned rolled oats, with and without nuts, with coconut flakes… the list goes on. The blueberries came out so tart and I couldn't even taste any sweetness from the honey. Hubby also hated the texture of the walnuts. I'm going to try again in a couple of weeks, though…pulverizing the nuts to mix in with the oatmeal, subbing raisins for the blueberries, and adding a touch more honey.     • No cane sugar, correct.  But agave has higher fructose content than high fructose corn syrup.  If you’re trying to go sugar free, try xylitol, stevia or other plant based sweetener.

I used steel cut oats that I soaked in an equal part of water overnight, so I'm slightly concerned that the oats won't soak up more moisture, but crossing my fingers that in the cooking and evaporating process it'll happen!   371. I used regular oats for this and it came out great! I love your recipes, Gina! The one thing I tried was baking these in my Pampered Chef brownie pan. I cut down the cooking time by 5 minutes for my gas stove and baked at 350°. I couldn't wait for them to set before I had to eat one. This helps with my feeling like I get to eat more, sine you get to eat two. Your recipe filled this pan perfectly! I only had to add a little milk for the last one. Good gauge when splitting ingredients I put enough oat mix on to just barely cover the fruit, then the milk mix just to cover the oatmeal. I think these will freeze well, and I will just take out of freezer night before into the fridge and nuke in microwave to reheat.

  416. What a great alternative to plain oatmeal. I've tried it so many ways and never been a fan but this I liked. We only have 2 people in our house so there was a lot of extra that I was hoping to eat during the week. I did have it a few days but by about the 4th day it had turned sour – I'm assuming it was related to the cooked fruits. Anyway, next time we'll have to eat it faster 🙂

  421. I make a version of this quite frequently, use some raisens . I cut mine into 9 portions . I use 9+9 pan. Let cool and wrap on plastic wrap and freeze pull out for bfast or snack…I also use egg beaters instead of egg , Splenda for sweetner , my recipe calls for small amt yogurt .
