Beef, Tomato and Acini di Pepe Soup

This AMAZING soup was inspired from a small deli I visited after the funeral of a woman who was like a grandma to me, and this soup was aptly called Grandma’s Soup. I loved how the bits of meat tasted almost like meatballs, without having to do the extra work.

I recreated that at home and it’s become one of my most popular soup recipes!! Tommy and my oldest Karina like to top theirs with shredded mozzarella and grated Pecorino Romano with a slice of crusty toasted bread (they call it pizza soup). I like to top mine with grated Pecorino Romano and a dollop of ricotta, which is completely optional but SO worth it! Madison complained about the chunks of tomatoes (kids!) so I started making it with crushed tomatoes instead.

I decided to do this in my  Instant Pot (affil link) because I love the saute feature and how quick it cooks and how tender the lean beef gets, but you can also make this on the stove, conventional pressure cooker or slow cooker – I’ve included directions below for all!

Beef, Tomato and Acini di Pepe Soup (Instant Pot, Slow Cooker + Stove Top)

  • 1 lb 90% lean ground beef
  • 1- 1/2 teaspoon kosher salt
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced carrot
  • 28 oz can crushed or diced tomatoes, I prefer crushed tuttorosso
  • 32 oz beef stock*
  • 2 bay leaves
  • 4 oz small pasta such as Acini di pepei*
  • grated parmesan cheese and ricotta, optional
  • *check labels for gluten-free.


Instant Pot Recipe:

  • Press the saute button, when it's very hot add the ground beef and salt and cook until browned breaking the meat up into small pieces as it cooks. When browned, add the onion, celery and carrots and saute 3 to 4 minutes.
  • Add the tomatoes, beef stock and bay leaves, close and using pressure cooker press soup (35 minutes).
  • After that use the quick release, once the pressure is out open, add the pasta and stir, cover and press manual pressure 6 minutes (I did half the time directed on package of pasta). Remove bay leaves and serve.

Stove top directions:

  • In a large pot or Dutch oven, saute the beef and salt on high heat until browned, breaking the meat up into small bits. Add the onion, celery and carrots and saute 3 to 4 minutes.
  • Add the tomatoes, stock and bay leaf, cover and cook low until the beef and the vegetables are tender, about 1 to 1 1/2 hours (you may need to add more broth or water if it evaporates too much).
  • Add the pasta, stir and cook according to package directions.

Slow Cooker directions:

  • In a large nonstick skillet, saute the beef and salt on high heat until browned, breaking the meat up into small bits. Add the onion, celery and carrots and saute 3 to 4 minutes.
  • Transfer to the slow cooker along with the tomatoes, stock and bay leaf, cover and cook low 8 hours.
  • Just before it's ready cook the pasta on the stove according to package directions. Add the pasta, stir and cook according to package directions.

  1. I finally made this today. I used the instantpot version. It was super easy. It did not require any ingredients that were probably not already in your pantry/fridge (except maybe acini de pepe). The meat ended up a little softer than I prefer but that happens when it’s cooked in tomato for awhile (and in a pressure cooker). It’s a keeper for me. I will definitely make it again.

  4. I make a lot of soups and this is one of our all time favorites! I usually make a double batch and freeze it. And as in all my soups with pasta in them, I do cook the acini di pepe separately and then add it in by the bowl when we eat the soup. Otherwise, it tends to soak up all of the broth if you refrigerate any leftovers.

  6. Finally made this, with all the good reviews needed to try it. Love pressure cooker recipes. I did use the 96 percent lean ground beef. I liked idea of reviewers who added more veggies and spices and I did as well, I doubled carrots, onion and celery and am glad I did. To me it needed that. I also added some Italian sauasge Seasoning, oregano, two garlic cloves, a bit more regular italian seasoing, and parsley. Used reduced sodium beef broth and cut salt back to one teaspoon kosher salt as some of my seasoning blends had a bit of salt in them already. My pasta said 9 minutes on the box for stove top, so I did at end for 4 minutes on high pressure rather then 6. We declared it a favorite soup and would be nice for company and freeze if needed to for later meals if we want to, but not sure it will last too long. Thank you!

  7. I love this recipe! Tried it many times.  It can be hard to find acini de pepe but orzo has worked as well. Last night I cousin even didn’t that so I made its it with dry mini-tortellini stuffed with pesto from Trader Joe’s. Still fantastic! My husband may have liked it more since he strains out  the broth in soup. So simple and tasty!

  18. This was delicious!  I added some dried oregano, basil and a small pinch of red pepper flakes (we tend to like more flavorful dishes). Hubby suggested half ground beef and half Italian sausage next time. Very versatile indeed. May try adding a piece of Parmesan rind.  Thank you!

  25. We love this soup! I don’t know how so much flavor comes from such minimal ingredients. We use 28 oz crushed tomatoes & add 2 cups more stock so leftovers are still brothy. Otherwise overnight the pasta soaks up all of the broth. My favorite soup!!

Absolutely delicious!!!!  Made some changes, though… added zucchini, yellow peppers,poblano peppers, tomato paste,dried, chopped sundried tomatoes, Hamburg seasoning, Italian seasoning, chopped garlic…This soup was a great basic recipe which lends itself to endless embellishments , and improvements.   28. My hubby just told me this was the best soup I’ve ever made! I think it’s very tasty especially given the simplicity of the recipe/ingredients. I didn’t have ground beef ready so I used ground turkey. I also used chicken broth as we didn’t have beef. Lastly I added about 5 small cloves of garlic and celery seeds since we didn’t have celery. I also added salt and pepper and a half tsp of Italian seasoning and some fresh dill. I’m giving it 4 stars since I modified a lot of the recipe lol.

  37. This is my favorite recipe for meal prep! I don’t review recipes often and I love the flavor and simplicity! I go heavy on the carrots and celery and use crushed tomatoes instead of diced. Awesome all around!

I’m on the green plan and I substituted 93% lean ground turkey in place of the beef, 1/3 cup dry lentils in place of the acini de pepe pasta (because I eat gluten-free), and added 1/4 cup grated parmesan cheese to the point count. I only had one 15 oz. can of diced tomatoes so I chopped up 2fresh, small vine ripe tomatoes to add up to the 28 oz. total of diced tomatoes and I split the recipe into 4 instead of 6 servings. Doing this only added up to 6 points on the green plan.

    I thought this recipe was delicious and easy. I always come to your website to look for recipes because they are always a hit. Perfect and thank you so much for devoting your time to helping others succeed too!

  41. I’m confused as to how this recipe has more SP on purple than blue or green. I don’t think that is correct. Purple should always have the least amount of SP since it has a more comprehensive list of zero SP foods.

  55. I make this soup on the stove top, but I use the ingredients exactly as written, and it is delicious!  It is one of the few soup recipes that “Mr. Picky” will eat and really enjoy.  I don’t understand the reviews that say the soup is “bland.”  We love it! I’m making it again today.

  56. I have made this twice and LOVE it! The first time I only had small elbow macaroni and it was good but I finally got some Acini de Pepe and it was even better the second try. I did add garlic, baby bell peppers and one jalapeno.

  57. Love this soup! I have made it a few times with ground turkey, but still use the beef broth! So delicious!! Just make sure that you don’t let the soup go to long on ‘warm’ if you make it in the Instant Pot or else the pasta gets over done.

  61. I LOE THIS SOUP! I have made it countless time, however I have always made it in my Instant Pot. I recently purchased a new Staub Dutch Oven and I wanted to break it in so I made this soup in there. WOW! It is so much more flavorful when you make it on the stovetop. The only adjustment I make to this recipe is that I use 96% ground beef to cut down on the fat. Thank you Gina for this delicious recipe.

  62. This was delicious! Made on stove top. I sautéed the beef in a skillet then added to sautéed veggies. I deglazed my Veggie pot with 1/4 cup of red wine. I used riced cauliflower instead of pasta. Definitely a winner.

I’m curious why it’s one more point on the Purple plan than on the Green and Blue? I recently switched to Purple and I thought that Purple had more zero point foods than the others?

  68. Wow! Made this for family tonight (kids 10 and 13) and it was a HIT! I used 320z can crushed tomatoes b/c kids won’t eat if chunky. Turned out FAB! I didn’t expect so much flavor. I followed a couple suggestions and added some dried Italian seasonings and minced garlic. I cooked and have saved the leftovers separately (pasta in own pot) to avoid the pasta getting mushy. Really happy with this recipe, especially as Chicago is dipping into the 20s! YUM!

  70. In your One and Done cookbook the directions are set instant pot to high pressure. Here it says soup setting. Does it matter? Are the times different if you use one or the other?

    • I freeze this all the time with the pasta.. The pasta soaks up a lot of juice so you may want to add some stock when reheating.

My sometimes picky husband just said this morning, “that soup we had last night was amazing.” I did it on the cooktop and only changes were adding Italian seasoning, Trader Joe’s mushroom umami seasoning in lieu of any salt, and red pepper flakes.   88. An all time favorite recipe! My oldest son isn’t a fan of ground beef (or any ground meat) so I buy the strips of steak used for stir fry and dice it into tiny cubes. Cook it the same way. Comes out fantastic!!  Made it tonight and wanted a little extra kick so I diced up 1/2 of a jalapeño. Delish!!

  89. I absolutely love all your recipes so far. Not to much of a fan of a lot of arugala, but I deal with it. I was a restaurant cook and had one of my own. I always found when a recipe seemed bland, I always added onion power, but the granules. You can use as much as you like and it does not over power the food. It gives it what’s missing and does not give it a taste of on. It’s amazing.Would love to know your thoughts if you ever try this.

  90. Made this soup as is and… OMG!!! I could live off of this recipe alone. It is so darn good!! I saw some others say it was bland and I’m not sure how?! I am a huge salt freak, and without changing a thing this soup has such amazing flavor. It will be going on regular rotation for my house.

    • I found this to be true as well! I found that if i let the beef cook a little extra (crispy on the bottom) then the great taste comes through, but if I cook until just done its not as great. Just my own experience. I regularly have this for lunch, I make a double batch and freeze in mason jars for on the go for work!

  92. Love this soup. I make it 3 – 4 times a year and everyone who eats it enjoys it. I leave out the celery and add more carrots, as well as a tablespoon each of basil and oregano, a teaspoon of black pepper, a chopped clove of garlic, and a few splashes of cooking sherry. Also, squeeze a few dollops of tomato sauce from one of those tubes and it’ll come out flavorful and delicious.

    • In addition to the above additions of garlic, oregano, pepper, I add 2 T dried basil, couple of handfuls of chopped fresh parsley and a shake or 2 of dried pepper flakes to the meat while it is cooking and 16 oz spicy V8. My family begs me to make this soup even in the hot summer days in AZ!

  93. can you use chicken stock instead of beef stock?

    • I make it in my 6qt and it’s pretty full. I don’t think you’d want to do in the 3 qt. You could definitely do it on the stove though.

  95. Any suggestions to make this gluten free? My daughter has celiac. I haven’t seen any small gluten free pastas.

  97. My all-time favourite soup recipe! I find that when we have leftovers, the acini de pepe can tend to absorb too much liquid, has anyone tried replacing it with rice? Would also make a good gluten free alternative

  98. Added some black pepper with the salt to the meat when sautéing, .  A few fresh minced garlic cloves and about a tablespoon of better than beef bouillon.   Served with pecorino romano and Texas garlic toast. 😋👍🏼

  99. I’m never a fan of cooking my pasta in my soup bc I HATE how it gets soggy. I haven’t cooked a soup with acini di Pepe — does it hold well for leftovers ? Or should I make on the side and add it as I warm up?  I’m so excited to make this today !!

    • I always cook my pasta on the side.  Once cooled I add a little broth to the pasta to save leftovers.  Whenever I mix the two together all the broth gets sopped up.

  101. As others have said, this soup did not have much flavor at all. It tasted like beef and water. I am obsessed with Skinnytaste recipes and have been cooking them for years now, but this is one of the very very few recipes that was not great. It wasn’t terrible, but I definitely recommend adding some herbs or using Italian seasoned diced tomatoes. I will make this recipe again sometime because I think it could be good with the right seasoning. 

  102. I really don’t like cooked tomatoes and always pick around them in any foods that contain them. Can I put tomato sauce in it to get that flavor without using the tomato?

  106. This came out really well and was a total hit with my kids, which is shocking because chunky soups usually don’t go over well with them. But these flavors were perfect (I did add garlic for an immuno-boost) 

    I do have a question.  My soup in the IP yielded way more that (6) 1 cup servings. Was definitely more like 8. Did anyone else experience that?

    • Mine made more than 6 as well. My son and I had this for dinner the night I made it, and I’ve had it for lunch every day since, and another dinner one night. I’ve measured my servings with a measuring cup too.

  111. A favorite of mine. Make a batch and eat it all week, never tire of this recipe. Occasionally I use a mini bowtie or other larger pasta which thickens it quite a bit.

  114. I absolutely love this recipe. I make it in my Instant Pot and then freewe it in individual containers for my lunches. I’ve made one small change, I use 96% lean ground beef which lowers the points for me…which I just add to the soup with more Parmesan cheese.

  115. I made this in my Instant Pot and it turned out great. I did season it allotted more than what the recipe called for. Thru some mined garlic in with the carrots, celery, onions and meat. The thru some Italian seasoning in before cooking it for 35 minuets on soup.  It was pretty good.  Will make it again.

  144. This is my kids favorite soup! I have a couple of modifications to throw out there. First, I always double or triple the vegetables the recipe calls for. Also, because beef is currently out of style at our house, we simple substitute ground turkey and chicken broth. It is just as good.

  145. Just made this last rainy weekend, adding some chopped garlic, 1 tsp tomato paste and 1/4 tsp smoked paprika. I could not find low salt beef broth so omitted any additional salt just to be safe. I used Isreali cous-cous which worked very well. A hearty soup, indeed, but missing something. It could be the broth, but the taste was just “flat.” I appreciate everyone’s creativeness, and will certainly make this again with some of the other ideas, like turkey or chicken. The best part is that it got me to purchase an InstantPot, which I now LOVE!

  146. This recipe is so versatile, able to use whats on hand. I made it with ground chicken breast instead of beef, and added diced zucchini and mushrooms. SO good! (My favorite way is still the original version though!)
    Great paired with a garlic knot from the bagel recipe!!

Only change I have made is before I cook the pasta I reserve half for the next day in a seperate container and cook half the pasta with the remainder.   196. I love soup – could eat it every day.  MY husband, not so much. I made this soup Thusday and he loved it. Ate 2 bowls. Freshly grated Parmesan on top just finished it off perfectly.  I am on a low salt diet, so my tomatoes were no salt added as was my beef stock. I didn’t add any salt at all. I’ll be honest, a little salt would have been ni ce – but for a very low sodium soup, it was amazing!

I often double the recipe, and just cook the pasta on the stove top while the soup comes to pressure and cooks (doubling the recipe takes a bit longer to come to pressure). To get my kids some extra veggies, after releasing the pressure, I add in 1 cup (packed) of chopped baby spinach, and 1 cup of frozen peas . It’s so filling and flavorful!

    • I have an 8Q and double most soup recipes for having lots of freeze leftovers. 6Q May be cutting it close. If you look on the inside of the IP it shows the max liquid level so as long as you are under that you are fine. My max is 6Q, so guessing yours is 4Q? one single batch of this soup was a little over 2Q so would be cutting it close but probably doable!

    • While I haven’t tried it, I would go with vegetable broth.

    • I use vegetable broth and I actually prefer it to the beef. The beef stock makes it very rich but it still has so much flavor with the veggie broth. I also omit the salt in the recipe because I found it to be too salty. The is one of my most favorite recipes. The Locatelli Pecorino Romano is the *icing on the cake*! Delicious!

      And I always double the recipe…it’s great reheated!

  236. I’ve made this before and loved it. Last night, I was too hungry to wait that long, so here’s what I did and it was fabulous! Sauteed beef, onion, added garlic, tomatoes (Italian spiced), broth, bay leaf, and pasta. I left out the carrots and celery since they take too long to cook. I let simmer until pasta was done, about 10 minutes, then added a large diced zucchini. Awesome and only 15 minutes, tops. Thanks for the inspiration !

  238. This is my daughter’s favorite meal. My whole family loves it! I made 2 modifications to the original recipe: I I add 3 cloves of minced garlic (we are garlic lovers) and I use crushed tomatoes instead of the diced tomatoes because my son is not a tomato lover and doesn’t like chunks of tomatoes in his food. This is a delicious soup. I make it at least twice a month. We were eating gluten free for a while and I couldn’t find the acini pasta GF so instead used GF macaroni elbows and it was still just as delicious.

    • Made this again a few nights ago again in a dutch oven on the stovetop. I made it exactly as written, except I threw a bunch of spinach in at the end, cuz I love spinach in soups. It went together so easily! Have enjoyed leftovers for lunch all week.   250. After the last step in the Instant Pot, what kind of release do you use? I tried Quick Release and got soup-steam that left a residue as ll over my counter (and the toaster oven, and the fruit bowl, and …). 

    • It will be fine if you don’t do quick release, the pasta will just be a little more cooked. I usually take a kitchen towel and put it over the valve to avoid a mess.

  251. I grew up with this soup, from my great grandmother making it, to my grandmother, my mom, and now me. The only difference is we a solid piece of beef in the soup as it cooks. . Then take it out and shred, mix it with jarred sweet peppers and some vinegar and have it on the side with a simple salad.   Always warms my heart as well as my belly!

    I added 3/4 cup of the acini pasta to bulk it up a bit , which by the way wasn’t needed in the end 🙂 Both my husband and I ate it for lunch and dinner for the past two days and finished the pot off completely !!! Look forward to enjoying more recipes . Zuccini lasagna is next !!!

I’ve made some of your other recipes and often salivated over your pictures, and when I found this one while perusing for recipes to try in my new instant pot, I decided to make it on the spot-it looked easy, tasty and filling! I am usually pretty annoyed when people don’t at least try a recipe the way it’s written, so excuse me while I tell you that I used cabbage instead of celery, but ONLY because every time I buy celery, I use a couple of stalks and then don’t have another use for it before it goes bad, while I could saute up the cabbage for a veggie side later in the week. It was delicious with the cabbage, and I’m sure it would have been perfect with the celery. I got lazy and ended up making it on the stovetop, but I’m sure it’s great any way it’s made.

    I used organic vegetable broth, instead of beef I used Italian pork sausage, did not add any salt, I also added a can of reduced sodium pinto beans, drained, and about 2 little zucchini, about the last 5 minutes cooking time, julienned.

  290. I am from an Italian family and this soup came from my grandmothers side of the family. We called it “beedy soup”. Our recipe is a little different. We use beef soup bones and a piece of chuck roast and we use oregano instead of a bay leaf. The other difference is: when the soup is done cooking, after many hours, we take the meat and bones out and take all the remaining vegetables and grind it up in a folley mill. This makes the soup thicker. Then we put the meat and “beedys” in. However, this recipe sounds easier so I think I will try it.

  300. Wow this was amazing!!! Reminds me of the heavenly soups my Italian grandma used to whip up out of anything she had on hand- the recipe was never the same but always perfect. The beef broth in this have it a richness and even umami that kept us going back for more! My whole family loved this, even the 8 year old who “doesn’t eat meat” and the 3.5 year old who “doesn’t eat things that are mixed.” This will become one of our regular meals!

    • Instant pot is a brand and it refers to a combo pressure cooker and slow cooker with misc other functions like brown or sauté..  I have the same thing but it is a Fajor brand.

This soup was great!  I added a parmesan rind to it during the second round of cooking, which added flavor.  I realized why I like it so much – it reminds me of spaghetti-o’s with meatballs!  I upped the amount of veggies, too.  GF people can also put in cooked rice at the very end (to warm it through) if they can’t find small GF pasta.

FYI, I entered this in the WW Recipe Builder and it came up as 6 Smart Points per serving (I didn’t include the parmesan in the recipe). I also noticed an incorrect WW SP value for the Crock Pot Chicken Taco Chili (4 SP instead of 5).  I love these recipes and while it’s not a big deal for me to enter the everything into the recipe builder, it’d be helpful to have accurate SP values for weekly meal planning purposes 🙂

    • I know this is correct as I too have entered this in recipe builder. Keep in mind that different brands of products can slightly alter the points when you plug in a recipe.

Made this last night and it is DELICIOUS… however, I entered it into the recipe builder on WW because we used crushed tomatoes instead of diced (it's all we had on hand) and it's saying 8 SmartPoints, not 5. Would that really have made that big of a difference? We did everything else exactly the way you did. :- It's still delicious and 8 points is still not that many so I'm not worried about it, I just don't typically have that big of a discrepancy with your yummy recipes! 🙂

    • I think the bigger concern with doubling is the space! I attempted to double it tonight and just *barely* had enough room in my IP. I also cut the cooking time down a bit so that I could do Natural Release instead of Quick Release because I didn't want to spray my ceiling with soup. I'd say 1.5 time the recipe would be fine (with no adjustment in cooking time), but probably not double 🙂

  382. I happened to read this the other day, and immediately went home and threw a pound of ground beef in the fridge to thaw. I had all the other ingredients on hand, and definitely wanted to give this a try. I made it last night (stovetop) when I got home. It was SO GOOD! I didn't measure the veggies, but we like chunky soups, so I was okay going a little heavy on them. I also used a mini chopper for them, so they were a little more finely diced than shown in the picture. I also added a can of crushed tomatoes and a can of diced tomatoes with garlic & olive oil. I was also a little heavy-handed on the pasta, so I added about 3/4 cup of water to balance that out. 😉 We loved this, though. I got home later, so it wasn't our meal… but my taste-tester loved it and came back for more with a bigger bowl (AND he had already eaten his dinner – haha!). He's usually skeptical that soups are going to fill him up, but I think this one will do the trick! So yummy. This is going in our regular rotation for sure. Thank you!

  410. Gina, with a conventional pressure cooker, would you cut down on the liquid or the length of time? Also, would you cook it on high pressure or low?

  411. I'm going to substitute Italian Chicken Sausage–probably Hot– for the ground beef and add oregano. I might even cook a whole clove of garlic cut in half with the meat. Then toss garlic because I only want a hint of it.
