Some of my favorite varieties of meringue cookies include the Chocolate Chip Clouds, Sprinkle Dipped Meringues, Coconut Meringues and Peppermint Meringues.

Sweet treats and some sweet news!

Life is pretty hectic these days in my home, but I’m not complaining, I love every minute of it. Here’s a little peek into a typical day in my world.

My sweet little one year old is at the stage where she wants wants “mama” all day long, especially whenever I’m in the kitchen about to cook, this is usually what I see when I look down…

My sweet little pup is usually hanging around waiting for some food to fall on the floor which seems to happen a lot lately…

When my teen isn’t busy with homework and college hunting, you can usually find her baking something sweet in my kitchen for her friends or for Skinnytaste (but never without her iPod and cell phone!)

Lately finding time to cook, photograph and post recipes has been my biggest challenge. I have so many ideas and recipes in my head, just not enough hours in the day to make them. You are all such wonderful followers, you’ve been spreading the word about my site on Facebook, Twitter, meetings, community boards, voting for me in blog contests, and I really can’t thank you enough so I’m sure you will like what I’m about to tell you…

Sweet News and a Sweet Recipe!

I’ve decided to leave my day job to spend more time with my family, children and yes, Skinnytaste. It’s a sweet new chapter in my book of life and I’m very excited about what’s to come. I’ve always loved my career in photo retouching, I’ve had the pleasure to work with some fierce talent and it’s sad to see that behind me, but I feel good things ahead and hopefully I’ll have more time to cook.

And now for these sweet treats…

Black and white chocolate chip meringue cookies are the perfect fix to cure your sweet tooth. They are light and airy and melt in your mouth and somehow get better with time. I like to make them the night before and store them in an air tight container, the next day they are nice and chewy and even chewier the day after. Low fat, gluten-free and delicious! Make sure your bowls and spatulas are squeaky clean, your egg whites are room temperature and you use a metal bowl to guarantee success.

Black and white chocolate chip meringue cookies are perfect for your sweet tooth. They're light, airy, melt in your mouth, low fat, gluten-free and delicious!

Ingredients

  • 3 large egg whites, room temperature
  • 1/8 tsp cream of tartar
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup white chocolate chips
  • 1/2 cup dark chocolate chips

Instructions

  • Heat oven to 300°F.
  • Cover cookie sheet with nonstick silicone pad or parchment paper.
  • Using a mixer, beat the egg whites and cream of tartar together in large bowl at high speed until soft peaks form.
  • Gradually add sugar a little at a time, then vanilla, beating well after each addition until you get stiff peaks, the sugar is dissolved and the mixture is glossy.
  • Fold in chocolate chips.
  • Drop mixture by tablespoons onto cookie sheet.
  • Bake 35 to 45 minutes or just until dry.
  • Cool slightly; remove from cookie sheet.
  • Cool completely on wire rack.
  • Store covered, at room temperature.

Makes about 30 cookies.

  7. These are so awesome. I make them often. It is really important that the egg whites are at room temp. Tried it once cold, and it doesn’t thicken up (flat cookies, still tasty).

  9. To celebrate Halloween we left out the chocolate chips and used three M&M's. One as mouth and two as the eyes. They looked like ghosts. My kiddo's loved it and I felt better giving them this than candy.

  13. Wow! I just made a batch of these and I am trying to figure out how much exercise I need to do to burn off the dozen I just consumed! Thank goodness they are low fat…These were great!!! Light, melt in your mouth goodness like cotton candy. (And they will be even better tomorrow??!!) I bet peppermint extract and peppermint crunch would be good as well… Gives me an excuse to experiment with more flavors. Thank you for the recipe.

  16. Yum these were so good and addictive. I had doubts about how they would turn out because I made meringues once before and they tasted like Styrofoam. These however were so soft and chewy! I will be making these again in the future for my chocolate cravings.

  20. I Tried to make this today and FAILED miserably. 🙁 I was really wanting to taste them too. I dont know what went wrong. I'm thinking it might have been the eggs. I will have to try again tonight. I guess i can leave out some eggs in the meantime. I left the eggs out for an hour to get to room temp but they still were a little chilly. Any idea about how to get the eggs right so everything is not watery.

    • If your beaters and bowl has the slightest amount of grease on it, it won't work. Make sure it's squeeky clean and metal is always suggested.

  22. I justed wanted to say that I love all your recipes and as a WW member for 18 months (down almost 70 lbs) you have made it so much easier to eat healthy delicious food.

    I tried these cookies with Splenda instead of sugar as an experiment and while they were edible, they weren't nearly as nice as when I made them with sugar and the points savings probably aren't worth it.

    Saw this recipe upon finding your site last week, and today I decided to make these.

    I did a few variations–for example, I had some extra vanilla sugar (best. thing. ever!), and used it in place of plain sugar. Also, instead of dark chips, I used some festive swirled white + semi-sweet, along with the called for white choc. chips (because I'm crazy for white chocolate). 🙂 They turned out lovely, though they only made 24 (I used my smallest ice cream scooper to dish them out).

    I *had* to taste one after I pulled them from the oven (What? To make sure no one else gets sick, of course! *cough*) and they were very light and delicious, I can imagine they will indeed only get better after a day or so. I will definitely be making these again, they are quick and easy to make changes to (for different flavors and occasions) and best of all, great tasting! The fact that they are *semi* sort of healthy dessert for you? Only adds to the enjoyment!

  26. The raw meringue tastes like marshmallows! Couldn't wait for them to bake:) Question: Any suggestions for what to do with egg yolks? Between egg white breakfasts and other baked goods I throw away alot of them.

    • It's not the best idea, but with the three I had from today's batch of these cookies, I made some quick scrambled eggs (well, yolks, I guess), with a bit of milk and cheese. Not the healthiest or most original, but hey, didn't have to throw out the yolks today. 🙂

      But I'm also curious about some other uses/ideas for extra yolks. Could they be frozen? If so, would they thaw right?

  48. If you live somewhere that is very humid, or a rainy humid day can be an issue. Everything must be squeeky clean, bowls, spatula, etc or they won't work. Eggs need to be room temperature.

  50. These cookies are delicious. Made them tonight for an at work Weight Watchers meeting. One problem…they went gooey on me. I let them cool completely. The texture was great…I taste tested them to make sure 🙂 Store them in an airtight container but when I just checked them they were getting kind of gooey. Could it be the extreme humidity? I put them in the refrigerator to try and save them. Not sure if that is a mistake or not 🙂 Any ideas?

Gina for us first timers and newbee's, we need exact info, like me for example I had no idea until my mom told me (after I tried 2 times and failed) that you need to beat eggs and cream of tartar in a glass bowl or metal not plastic it will not work, and of course mom know's best, when I used the glass bowl cookies came out perfect, so for anyone like me, must be beaten in a glass bowl or metal. good idea to note that in your recipe as I did not no that and wasted ingredients two times, but great recipe when does work out. thanks gina

    Anonymous, rainy days can effect them, also if the bowl and mixer aren't squeeky clean they won't work. But my teen makes them ALL the time and she never has any issues. Maybe you just need to mix a little longer.

Ok, so I am loving these, I made a batch last night and I have a question for you…although I believed them to be dry after about 40 minutes of cooking, they're quite chewy today (props to me for even having any left today, I had to seriously self monitor last night, they're sooooo good!) and I'm wondering if I should cook them longer, or is the chewiness to be expected? I didn't store them in the fridge, just airtight on the counter.

I went to a reunion cast party, tonight and took them (along with another batch of cookies, and a batch of sausage balls)…the co-host is a gluten-free eater, and so…I made everything gluten free. EVERYBODY loved these cookies…it was inSANE! I didn't tell them that they were not only gluten free, but also LOW IN POINTS+! :o)

    I used mini chocolate chips, and no white chips…OMG…sooooooooo good!

    I wanted to ask you about using parchment paper. I had my first experience with it recently when making some (tsk tsk) slice and bake store cookies. The bottoms were burnt solid black! I was trying to protect my new pro-grade cookies sheets but ended up having to toss the whole batch. Did I do something wrong? Can you only use parchment paper if it specifically suggests it? Maybe it was bad cookie kharma for buying pre-made cookie dough.

I make a similar meringue cookie, that is amazing…if you like mint and chocolate. 🙂 Recipe varies a bit from yours and I use mint extract and mini chocolate chips – but they are amazing! Each cookie is 22 calories, 1 g. fat, 4g carbs. If you'd like, I'd be glad to share the recipe.
