Why Silk nog? I checked the labels of all the eggnogs available in the supermarket, and Silk Nog had the cleanest ingredients, and only 90 calories per serving. It’s also non-GMO, and perfect if you are lactose intolerant. If you like another brand of light eggnog, you can certainly use it in it’s place. I topped mine with a little honey and powdered sugar, but you can use maple, agave or your favorite toppings.

Serving Size: 2 pancakes or 4 mini

Ingredients

  • 2 cups white whole wheat flour
  • 4 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 2 tsp sugar
  • 1 tsp nutmeg
  • 2 large eggs
  • 2 cups Silk Nog
  • 2 tbsp water
  • 2 tsp vanilla
  • cooking spray

Instructions

  • Mix all dry ingredients in a bowl.
  • Add the wet ingredients to the mixing bowl and mix well with a spoon until there are no more dry spots; don't over-mix.
  • Heat a large skillet on medium heat.
  • Lightly spray oil to coat and pour 1/4 cup of pancake batter.
  • When the bubbles settle and the edges begin to set, flip the pancakes.
  • Repeat with the remainder of the batter.

Notes

Makes 14 pancakes.
If using the Nordic pancake maker, use 2 tbsp of pancake mix to make 28 mini pancakes.

  4. Before reading your recipe , I didn't know what "eggnog" meant , now I know , in french it is "lait de poule" fowl milk , it isn'nt realy the same 😉
    These pancakes look really great and cute and I am going to see the other panckes recipes .

    Doesn't it just gross you out when you are looking at the ingredients of all of the things you love and you see that high fructose corn syrup is either the first or second ingredient in a dairy product?!? Ugh *shudders* I'm not a fan of eggnog at all, but my husband is so it's good to see that they have a "healthier" version of the stuff. Did you, by chance, happen to notice if they had an almond milk version?

      As of 2015, Silk now makes an Almond Milk version of Eggnog!! Using it to make these pancakes tonight. Had the chance to try it for free as a BzzAgent and honestly love it!

  13. Just FYI: I calculated the WW Points Plus for light egg nog vs. regular egg nog at the store the other day, and the light egg nog was the same amount of points as the regular egg nog. This was for one brand, so it may be different for other brands. It was one of those cases where the producer substituted fat for additional sugars. Just something to be aware of!

  15. What a great recipe idea! I'm going to try it using a light regular egg nog. It should work because we have non-fat milk at home and it doesn't change the recipes when we bake. Thanks for sharing!
