What is the best way to grill chicken?

If you’re doing this on the grill, make sure to have the sauteed spinach and peppers ready. First grease the rack with non stick spray or oil. Then turn on the grill on and let the grill (or grill pan) get hot. Once it’s hot, place the chicken breasts and let stand until there are grill marks and chicken has browned. Then flip and do the same. This is anywhere between 2-5 minutes per side depending on it’ thickness. You can turn the grill off, top with sauteed spinach and mozzarella and let stand for a minute or 2 with the grill closed to let the cheese melt.

You can make this with skinless chicken thighs as well. Just trim the fat and adjust cooking time, thighs take a bit longer.

  1. So easy to make and so delicious! Used fresh spinach and garlic peppers and it came out perfect. Definitely making again! Thanks Gina!

  2. So I loved the flavor of this chicken. I ended up using fresh spinach and next time need to use more. I also just oven baked it for 15min at 400 and then layered with the toppings for another 5 min. They were so juicy.

  3. This a beautiful dish. I smoked the roasted peppers on the grill, while I grilled the chicken, and paired it with your “Perfectly Grilled Zucchini” as well. My wife adored the meal.

  4. This is a favorite recipe. Can’t believe I just made it for the first time. I used grilled chicken that I had marinated lemon, and rosemary and herbs. I used fresh spinach and also added a 1/3 cup of onion to that. Got some local Caputo Brother fresh mozzerella to splurge on these and it was so good. A winner, would be enjoyed by company. Saw a recipe in Skinny taste book for pearl couscous with veggies–also saw on on the web site, and had a version of that with this–aspargus, zucchini yellow squash, (in the couscous) Thanks for a great recipe

  5. Simple and delicious!

  6. This is absolutely wonderful! I used fresh spinach and the smell of the garlic cooking – wonderful. These are very flavorful and a far cry from most recipes that tend to dry the chicken out. Thank you!

  7. Flavorful weeknight recipe! I served with leftover roasted veggies on the side, but could easily be served alongside a simple salad and steamed veggie noodles.

  8. I used fresh spinach and roasted garlic (I had time…quarentine) and added a small dash of nutmeg at the end. Delish!

  9. I’ll be honest, I had my doubts when making this but it’s truly delicious – reminded me of a Mediterranean pizza 🙂 I grilled the chicken on the BBQ and finished melting the toppings in the oven (my chicken wasn’t exactly uniform 😉 Thanks for a great (and easy!) recipe Gina.

  10. Do you mean thawed frozen spinach? I used frozen spinach- so I couldn’t drain it? And it took longer to cook on the stove.

  11. I have had many fabulous meals from the Skinny Taste website; this was not one! I read the reviews and go from that. I do not know how anyone could give this a 5 star rating. This was all right, but I certainly won’t make it again. And, yes, I followed the recipe.

  12. Cooked spinach with anything is usually not my favorite, but it was perfect in this recipe. Loved it!

  13. My family devoured this!  I subbed kale for spinach and used tomato confit (tomatoes cooked in olive oil and garlic) in place of the roasted red pepper because it is what I had on hand.  It was a delight watching my kids shoveling those greens in their mouths!

  14. Hi! When I calculate the nutritional information on my WW app, one serving comes up as 3, but I’m on blue. Should I count it as 3?

  15. Great recipe, hubby and I loved it, only change was that I sautéed fresh spinach instead of using frozen spinach

  16. Family loved it! Thanks for another great recipe.

  17. Is it possible to do this entirely on the grill? My AC is broken and it's too hot to turn on the oven.

  18. I used fresh spinach. It was delicious!

  19. I have the same question, can you use fresh spinach in lieu of frozen? Thanks!

  20. Can you use fresh spinach leaves instead of frozen spinach?

  21. Making it today for our company canteen (about 100 people)

  22. what side dish do you recommend?

  23. I made this the other night and everyone loved it. Thank you so much for the delicious and healthy recipes!!

  24. this is delicious. I tweaked a bit by baking thin chicken cutlets for about 5 minutes. Then adding the toppings and finishing until cheese melted. Used a very yummy roasted red pepper and artichoke bruschetta from Trader Joe's (zero points).

  25. Made this tonight for dinner…..Loved it!! Thanks for the recipe

  26. For those of you who've made it, what did you serve it with? Open to suggestions!

  27. I made this last night and loved it so much that it's currently in the oven for dinner again! Thank you, Gina, you haven't steered me wrong yet!

  28. My husband and I have been trying to become healthier people since finding out that our parents are each having cholesterol, blood pressure, and heart problems early in their lives. We've even somehow managed to cut out canned vegetables, broths, and soups (they are extremely high in sodium and you usually add even MORE salt when cooking them). It has been such a challenge to find a variety of healthy recipes that weren't bland and left much to be desired. I made this tonight and we LOVED IT! I used red bell peppers instead of red peppers because Kroger had them on sale lol I think next time I'll add a little lemon juice to the spinach for a slight zing. Thank you for making my life a little easier. This was nutritious AND delicious! Even our 16 month old ate his entire plate!

  29. I made this tonight. I used sweet peppers that I cooked with the spinach instead of roasted red peppers. I also served it over a bed of quinoa. Super yummy!

  30. We made this last night and it was FABULOUS and so easy. Thank you the entire family LOVED it.

  31. Wonderful and so simple! I used fresh baby spinach and wilted it in the sauté pan. Thanks Gina!

    • Awesome idea! I don't have a grill, but really want to try this recipe out. I was thinking about sauteeing the chicken breast stovetop. I got a giant bag of baby kale from Costco, gonna be an awesome sub for the spinach!

  33. I'm obsessed with all of your recipes! I recently joined Weight Watchers, and using your delicious recipes as a guide to my meal plans is fantastic. I can't wait to add this one to the list! Thank you!!!

  34. Made this tonight, but marinated the chicken in fat-free Italian dressing beforehand. Came out super flavorful and moist. Thanks so much!

  35. I didn't have roasted red peppers, so I used tomatoes instead, with fresh mozzarella.. Delicious recipe, thank you!!

  36. I must tell you this was the first time i looked and cooked from your site and this was AMAZING!!! My 9 yr. Old daughter turns her nose on anything healthy and she couldn't get enough of it! Thank you for such a great site!

  37. My kids love spinach and they loved this dish served it with a side of black bean corn salad and a delicious well balanced meal.

  38. I made this the other night and it came out fantastic! I did modify a few things, instead of using chicken breasts I used chicken thighs. Instead of using roasted red peppers I used sun-dried tomatoes (I'm so glad I did this!). And the leftovers heated up really nicely.

  39. I did this with Fresh baby spinach. The spinach gets such a yummy garlic flavor. We also didn't have any mozzarella cheese but I thought we did and I used Swiss instead and it was actually pretty tasty!

  40. This recipe is a great base to help me clean out the fridge. I used turkey cutlets and caramelized onions. It did increase the calories a bit but I'm sure it will still be delicious!

  41. I know I should've gotten that bunch of spinach at the market. This looks delicious and healthy!

  42. can this be made with fresh spinach as well

  43. Made this for dinner tonight. HUGE hit with mother-in-law, husband, teenage nephew, elementary age kids and toddler! Thanks, Gina. This is going to become a staple in this household!

  44. I just made these tonight for the first time. They were amazing! The flavors were so wonderful!
I wasn't able to grill them outside so I just did a quick oven-cooking. Even like that, they were fabulous! Thanks for all these wonderful recipies! I can't wait to try more :o)

  45. Hi – do you think that I can put the toppings on the chicken then put it back on the grill to melt instead?

  46. Had this tonight with your cauliflower fritters. Just so yummy!! Thanks for all these wonderful recipes. You've saved me (and my waistline) for sure 🙂

  47. Made this tonight, I was looking for a new way to prepare chicken breasts and this was perfect. I love spinach so I thought this was great, and my husband loved it too. I can't wait to eat the leftovers for lunch tomorrow!

  48. Made this over the weekend & kids loved it. We all loved it. But kids had 2nds, so didn't have leftovers! Served with simple pasta (bowtie) salad with fresh tomatoes & vinaigrette.

  51. Just made this! I had Green Giant Lightly Sauced Spinach Steamers. I thawed in microwave then sauteed with the garlic. I had a bit of left over shredded chicken. I placed it at the bottom of a dish, put the spinach on top and topped with Kraft Swiss cheese singles. It was yummy! I have 3 toddlers in the house who loved this over some rice. I had mine over salad.

  52. Made this last night and it was AWESOME…substituted fresh spinach for frozen and goat cheese in place of mozzarella….BIG hit

  53. This was delicious but I got 6 pts+ on my calculator… (from Arlington VA)

  54. Made this twice now (first with froz spinach then with fresh– we preferred the fresh). However my question is with your Carbs calculation. You say it's 4 carbs here, but once I input it in MyFitnessPal's calculated, it told me 20 per serving.

  55. I made this tonight for dinner using broccoli rabe instead of spinach and it was delicious!!!!!!!!!!
How do you roast peppers yourself?

    • The way we roast our own peppers, is to put them on a baking sheet in the broiler until charred, blistered and black (you could do it on a grill also). Once they are out of the flame, put them in a ziploc bag for about 20 minutes. The skin will peel right off, and you have homemade roasted peppers!

  56. We loved this but the chicken was a bit dry so we have decided that we will marinate them in low cal italian dressing first. My first time making/eating fresh roaster red peppers – AWESOME!!

  57. I made this yesterday, super easy and delicious! I didn't have time to prepare the roasted red peppers so I improvised with sun-dried tomatoes and it turned out awesome!

  58. I made this tonight with a few changes and it turned out phenomenal. It was a huge hit with my friends and it was so easy… definitely making again!

  62. Made it for lunch today. For the first time EVER my chicken breasts came out soft and juicy. It was amazingly delicious and fast. Gina, thanks again. And the cauliflower spagetti was soooo good too.

  63. Hey Gina,
Thank you soooo much for this blog. I've been following it for quite some time now and I love it. I made this last night for dinner except I used fresh spinach and seasoned the chicken with Italian seasoning instead of pepper and salt. Went over great with my boyfriend. We are both watching what we eat and how many calories we take in. Paired it with a nice fresh spinach salad. So yummy. I love your blog and cant wait to make more. I'm making the baked potato soup tonight.

    Thanks again!

  64. This is the second thing i made, and it was mouth watering. so YUMMY!! even hubby loved it.
Thank u for this one it's a keeper!!!

  65. Thanks Barb, enjoy!

  66. My SIL turned me on to your site. This is the first thing I made and there is only one word to describe this dish – YUMMY. The only thing I did different was I marinaded the chicken cutlets in a little lemon juice, olive oil, garlic and parsley for a couple of hours. All the tastes blended together were just perfect. Tonight I'm trying the Chicken and Mushrooms in the Garlic Wine Sauce. My mouth is already watering. Thank you for sharing all these wonderful recipes.

  67. This was great! I made it last night. We loved every bite.

  68. This was incredible! Thanks as always!

  69. Made this and it was good ! YUMMY

  70. just made this for dinner tonight! DELICIOUS. only difference we made was instead of roasted red peppers we used a roasted red pepper and artichoke tapenade from trader joe's. will be making this again! thanks!

  71. Mmmmm…just made this for dinner. I only had a few points left for dinner and I made it with the roasted garlic broccoli! Both were delicious and my picky husband even had two servings! Thank you Thank you!

  72. It's the raw weight.

  73. Is this 24 oz raw or cooked? If cooked, how do you know how much raw before including all the ingredient on top?

  74. Delicious! Another winner! My family (especially my husband) loves all the recipes I've tried. Thanks!

  75. So happy you all liked it!

  76. Love Love Love this recipe!! I've been a "fan" for a long time, but had never tried the recipes. This was my first! I can't wait to try more! Thank you so much!!

  77. This recipe is wonderful. I even substituted the red peppers with sliced tomatoes and mushrooms.

  78. This was great! I used feta cheese instead of mozzarella though. Super flavorful and it was so pretty to look at!

  79. Such a great idea! I made this using leftover grilled chicken and it was delicious! Thanks for all of your great recipes, you have honestly changed my outlook of weight watchers (I was getting bored eating the same things over and over).

  80. Love this…I used fresh spinach and it was so good.

  81. Great idea using fish!

  82. I just wanted to let people know that I made this last night with tilapia (I am pescatarian). It was great! My husband, who rarely compliments my cooking since he really is the chef of the family, even liked it! And, again, it was so easy. Thank you for the tasty, healthy, and quick idea!

  83. My boyfriend and I just finished eating this. Amazing! I used fresh spinach, super easy to throw in a pan while the chicken in cooking on the Forman.

Love your recipes! Will be trying more of them this week!

  84. Glad you liked it Jennifer

  85. Just made this, loved it. I used baby spinach and sauteed it with the garlic. Added a wee flour coating to the chicken with cayenne.

    Thanks for the recipe Gina.

  86. Dispatches, it's a meal in one for me, but a side of pasta like orzo would be great.

Kassie, to cut the chicken breast, press down on the chicken with your hand then using your other hand take a sharp butcher knife and slice through. If you still can't do this, you can use thin pre cut cutlets. It's really a simple dish.

  87. This may sound ridiculous, but I am giving up on trying this recipe. It seemed easy to me, too, but I can't seem to cut a chicken breast in half evenly (or even CLOSE!) Could I just use smaller breasts if I find them? Also, maybe once the grill is out and ready to go it will work, but doing the George Foreman, stovetop for the spinach, AND the broiler is too much for me. Don't get me wrong, I am a BIG FAN. Probably 3/4 of the meals I make are "Gina recipes". But I just can't seem to get this one to work out for me. Disappointed because it looks delish!

    • Don't give up!! There are videos on youtube you can watch. I couldn't figure it out at first too, but the videos helped and so does a sharp knife!

  88. what would you suggest for the side with this dish thinking of making it this week.

  89. This was simply delicious!!! I made it with fresh spinach and lots of garlic…Thanks for another winner recipe..Lyn

  112. Oooh yum. Looks easy and delicious but I think it looks fancy enough for a casual dinner party too!

  113. Fresh sauteed baby spinach of course would be amazing if you prefer!!!

For a fish, I would use a white fish like tilapia, flounder or sole. Great idea! Maybe add a little lemon to the spinach!

  118. YUMM! This looks so good Gina! I do believe I'll have to try this when I break in my new Staub grill pan!

  119. Looks tasty. Though I may skip the grill pan and cook it in the skillet instead to save on dishes. I agree, no reason to eat boring ANYTHING.

  120. Looks YUMMY – something else from you to add to my meal planner!

We sing your graces nearly every night!

  121. Great idea for a healthy Italian meal! I put salsa and low fat Mexican cheese on grilled chicken for Mexican night!

  122. Oh YUM! I *have* to make this now!

  123. I will be making this over the weekend! It looks great.. I would assume there's no reason fresh spinach couldn't be used after wilting it on the stove w/the oil and garlic??

  124. Don't you love how colorful it is? The colors of the Italian flag. Super easy, I actually made this for lunch today, took about 15 minutes start to finish!!

  125. Yes please! That looks super yum!

  126. I was just introduced to your website and I am so happy! Love that you list the WW points plus! Cannot wait to start cooking and trying these recipies!!
