My mom adds hard boiled eggs to her guacamole, so I thought why not add guacamole to hard boiled eggs? The results are lovely, and since I was testing them out for the blog, I actually enjoyed them for lunch. Of course, if you wish you can also stick with this classic Deviled Eggs recipe.

This is a fun, “clean” deviled egg recipe perfect to eat as a snack or appetizer. Typically deviled eggs are made with mayonnaise, mustard and dijon mustard, so how do you make them without mayonnaise? Instead this healthier deviled egg recipe version is filled with avocado guacamole. You can prep the eggs ahead by boiling them (see how with this perfect hard boiled egg recipe here) or make Instant Pot Hard Boiled Eggs, then cut the eggs in half lengthwise until you’re ready to fill them. To avoid browning, make the guacamole just before you’re ready to serve.

Ingredients

  • 6 large eggs, hard boiled (recipe here)
  • 1 medium haas avocado, about 5 oz
  • 2-3 tsp fresh lime juice
  • 1 tsp red onion, minced
  • 1 tbsp minced jalapeno
  • 1 tbsp fresh cilantro, chopped
  • kosher salt and fresh ground pepper, to taste
  • 1 tbsp diced tomato
  • pinch chile powder, for garnish

Instructions

  • Peel the cooled hard boiled eggs.
  • Cut the eggs in half horizontally, and set the yolks aside.
  • In a bowl, mash the avocado and 2 whole egg yolks; discard the rest.
  • Mix in lime juice, red onion, jalapeño, cilantro, salt and pepper and adjust to taste. Gently fold in tomato.
  • Scoop heaping spoonfuls of the guacamole into the 12 halved eggs.
  • Sprinkle with a little chile powder for color and arrange on a platter.

  4. I made these tonight! Yum! We’re doing the Whole30 and these were a delicious, fun side dish for our meal. I make my own paleo mayo so I added a tablespoon or two of that, omitted the tomato and left all the egg yolks in. It came out super creamy and tasty. I also sprinkled diced bacon on top. I get regular cravings for guacamole so I’m excited to have this recipe to use instead of “needing” chips. Adding to my favorites!

  5. My husband hates mayo, so this is perfect! He LOVED them! And instead of discarding the other yolks…I just made more of the guacamole mixture and put it on toast. Yummy breakfast/snack!

  9. Sorry did you actually tell people to use only 2 of the hard boiled yokes and DISCARD the rest?????
    Like throw them out
    Dump them in the disposal or garbage?

    Use them in a salad people or to garnish a big salad
    I made this similar recipe and used all the hard boiled yolk part Very good

  10. Cooked this last week! Absolutely delicious. Used more avo and all the yolks (I also didn’t like to see the waste) and added the extra guacamole to boiled sweet potatoes in a similar way to baked potatoes. The filling and the sweet potato was like a marriage made in heaven. Thanks for the recipe.

    Why would you discard the rest of the egg yolks? If you are buying pasture raised, naturally fed eggs… throwing out the yolk is wasting cell nourishing whole food loaded with vitamins, minerals, essential fatty acids, anti-oxidants, phyto-nutrients…

  25. Hard cooked egg yolks work well as an emulsifier for homemade oil & vinegar-based salad dressings. Put the dressing and the hard cooked egg yolks in a food processor or blender and you will have a blended salad dressing that appears creamy-ish. I don't used fixed proportions; I do it by sight. Just be sure none of the diners have an egg allergy.

  27. I made these for a Senior Potluck therefore I did everything times 2. I did add 1 teasp of mustard, coarse salt and topped them with a sprinkle of paprika, a cilantro leaf and a strip of red pepper. The presentation and taste was great. Would make them again.

  28. Made these today, I do not like eggs hard boiled, I have not ever like deviled eggs… but these are SO good. Made them with all the ingredients and measurements listed, will definitely make again in the future.
