Whenever you are craving bacon and eggs, this quick, easy sandwich will hit the spot! This is both filling and healthy! I like to buy egg whites from Trader Joe’s, they’re great to have on hand.
Guiltless Egg and Bacon Sandwich
Whenever you are craving bacon and eggs, this quick, easy sandwich will hit the spot! This is both filling and healthy!

Serving Size: 1 sandwich
Ingredients
- 3 egg whites
- 2 slices turkey bacon, cooked
- 1 tbsp chopped green pepper
- cooking oil
- salt and pepper
- Thomas' Whole Wheat mini pita pockets
Instructions
- In a small bowl, combine egg whites salt and pepper and scramble.
- Set a medium frying pan on low flame, spray pan with oil when hot.
- Add pepper and saute 1 minute, then add eggs and cook stirring frequently.
- Add crumbled turkey bacon and mix well until eggs are cooked.
- Place the pita in the microwave for 30 seconds.
- Remove and cut pita in half. Stuff with eggs and enjoy!

in the picture, PRETTY SURE, that is NOT egg whites, egg whites are NOT yellow, nor is that turkey bacon, too red.
Is your calorie count for one half pita or both halves?
To get your turkey bacon crispy, place them on a folded paper towel in the microwave for 2-3 minutes. They'll be nice and crispy!
i cant seem to get turkey vacon crisp. its just chewy and not very good. any suggestions?

Breakfast burritos freeze well (eggs, bacon or sausage, cheese, salsa is the way my dad used to make them). I freeze pitas separately, but not sure how it would work stuffed and stored.
Hi Gina, do you know if this would freeze well?Maybe replacing the pita bread with a tortilla…for a kind of breakfast burrito? I would like to make a healthy breakfast that I can freeze for the week, but I'm not sure how scrambled eggs or egg whites would freeze (or bacon for that matter). Maybe I could replace the bacon for ham?
Make sure you shake it well before cooking and maybe cooking them longer will prevent them from becoming too liquidy.
Gina, any idea how to prevent egg whites from making everything liquidy and dripping when I try to put it in a tortilla/sandwich?? This always happens no matter what brand of egg white cartons I use (Trader Joe's included)!
No, it was turkey bacon strips, not Canadian bacon.
Wait.. I used the Oscar Mayer Canadian Bacon and it's three slices for 60 calories which is about 1-2 pts (I forgot exactly since I haven't cooked it in a while). I'm wondering if that is what you're using and how you got to 1 point per slice.

Just checked that. Three crisp slices of regular pork bacon is 4 pts. One slice of Canadian bacon is 1 pt. Good to know, I love Canadian bacon.
