These easy loaded chicken “nacho” tostadas – topped with cheese, tomatoes, guacamole, olives and jalapenos are a great way to take nachos and turn them into a main dish.
Loaded “Nacho” Chicken Tostada
Perfect for lunch or dinner with a side salad. To make this kid-friendly leave the jalapenos out. I made them with grilled chicken but they would also great with leftover chicken. More of my favorite ways to make loaded nachos or “nachos” are Jalapeno Popper “Nachos”, Greek Nachos and Loaded Nachos with Turkey, Beans and Cheese.

Loaded "Nacho" Chicken Tostada
These easy loaded chicken "nacho" tostadas – topped with cheese, tomatoes, guacamole, olives and jalapenos are a great way to take nachos and turn them into a main dish.
Yield: 4 Servings
Serving Size: 1 tostada
- 4 to stada shells
- 1/4 cup shredded cheddar cheese
- ½ cup reduced fat shredded Mexican blend cheese, I used Sargento
- 1/2 cup mashed avocado, about 1 small
- 1 medium lime, halved
- Kosher salt
- 1 cup chopped tomato
- ¼ cup chopped white onion
- 2 tablespoons chopped cilantro
- Freshly ground black pepper
- 7 ounces cooked boneless, skinless chicken breast, cubed*
- 1/3 cup canned drained black beans, rinsed
- 1 jalalpeno, sliced thin
- 2 tbsp sliced black olives
- In a small bowl, combine the cheeses.
- In another small bowl, combine avocado, juice from half the lime, and a pinch of salt.
- In one more bowl, combine tomatoes, onion, cilantro, juice from the other lime half, ¼ teaspoon salt and black pepper, to taste.
- To assemble: Layer each with 1/3 cup chicken, 1 tbsp black beans, and sprinkle with 2 1/2 tbsp cheese. Broil for 2-3 minutes or until the cheese is melted. Top each with a dollop of avocado and a spoonful of the tomato salsa, jalapeno black olives. Top each with a small sprinkle of salt.

*I seasoned 1 8 oz breast with 1/8 teaspoon salt and pepper and threw it on the grill pan for 8 to 10 minutes on each side over medium heat.

So delicious! 6 points each on my weight watchers plan. I used rotisserie chicken, so no cooking!
These are fantastic! Easy to customize with shrimp, vegetarian with just black beans, etc. Great lunch with leftover chicken.
This is delicious! Needed to make a few tweaks because I didn’t have all of the ingredients. I used flatout brand flatbreads cut in half, 1/2 can black beans, 1 can rotel brand diced tomatoes w/ cilantro and green chilies and skipped the salsa. Even without all the fresh ingredients this is delicious – next time I’ll use all fresh.
Instant family favorite! I made the pico the night before, highly recommend. This was very fast, easy, and delicious. My husband and sons are already asking for it again!
These are amazing! I made these as part of the meal plan this past week (love the meal plans btw) We tried them with the “Quick and Delicioso Cuban style Black Beans” recipe and they were both delish! My husband said they’re a 10 and definitely a make again meal.

This will definitely be a go-to recipe in my house! It was so delicious. The only change that I made is that I seeded and chopped the jalapeno (rather than slice) and included it in the tomato salsa. Rave reviews from the family here!
When I ran the nutrition info through the Smart Points calculator it came out to 8 Smart Points. Same when I created a recipe using the recipe builder. Am I doing something wrong?
The only accurate way to determine any recipe’s SmartPoints® value is to plug the ingredients into the recipe builder on the Weight Watchers website (Click on “My Foods,” select “Recipe,” and click “Create a recipe.”) which does not count fruits and vegetables in recipes in the calculations as they are now 0 points.
The SmartPoints® calculator isn’t meant for recipes and will often give you the wrong points (usually higher) because it’s counting the fruits and vegetables. So if you see a recipe with a SmartPoints® value that’s different from what the calculator tells you, that is why.

I made this last night for dinner. These tostadas are absolutely delicious, very easy to make and very healthy. I highly recommend this recipe!
You can make tostadas on the stovetop or grill.
Stovetop-warm griddle/skillet on low, add tortillas, constantly turning, until you get the crunch you’d like.
Grill-directly on grill, low heat, place tortillas and turn constantly.
These are easy to burn, so low heat is key.

This recipe looks so good! I love nachos so this is a great alternative, it also looks very simple to make! It doesn’t take time to make and has a good amount of calories in it. Does it matter what kind of chicken you use for this recipe?
