I love a quick grilled chicken salad in the summer. Other variations I love to make are Halal Food Cart Style Chicken Salad with White Sauce. Or Tex-Mex Grilled Chicken Salad with Peanut Sauce and even a refreshing Chicken Salad with Strawberries and Spinach.

Last week I got tickets to see the Dr. Oz Show live in the city, talk about a fun day! After, I had lunch with my friend at a Turkish restaurant and I fell in love with their Shepard’s salad. They served it with fresh grated feta on the side and fresh lemon, I don’t think I’ll have feta any other way now. I savored that salad and took notes so I wouldn’t forget it.

Today, I fell in love with it all over again.

The fresh flavors of the lemon, a hint of dill, cucumbers, and tomatoes with the grilled chicken makes a wonderful main dish salad. Even perfect for lunch or dinner. If you want to make it more substantial you could serve it in a pita. I went with real feta, I’m not a fan of the chalky taste in reduced fat feta and a little goes a long way.

Photo above served with skinny tzatziki sauce. (Pita not included in nutritional info)

A wonderful high protein, low fat, low carb, low point, gluten-free main dish salad! To make this Paleo-friendly, leave the cheese out.

Serving Size: 1 /4th

  • 1 lb skinless boneless chicken breast, cut into 1 inch cubes

For the marinade:

  • 2 tbsp fresh squeezed lemon juice
  • 1 tsp dried oregano
  • 1 tsp garlic, crushed
  • kosher salt to taste
  • fresh ground black pepper to taste

For the salad:

  • 1 1/4 cups cucumber, peeled

  • 4 cups shredded lettuce
  • 1/2 cup feta cheese, grated (omit for paleo)

  • Marinate the chicken at least 2-3 hours or overnight.
  • If using wooden skewers, soak in water at least 30 minutes if grilling outdoors.
  • Combine the first 12 salad ingredients (cucumbers through salt and black pepper, not the lettuce) and set aside in the refrigerator to let the flavors set.
  • Thread chicken on 4 skewers and cook on a hot grill (indoor or outdoor grill) until chicken is cooked though, about 10-12 minutes.
  • Divide lettuce between four plates, top with tomato-cucumber salad, fresh grated feta cheese and grilled chicken.

  1. Love this recipe. It’s a regular go to for me. The only thing I don’t like is this new website. I can enter the exact name of the recipe I want, and still have to scroll through a bunch of other recipes to find it.

  2. This was a light meal that we really enjoyed.!  Chicken came out very tender and tasty.   Easy to make with very little clean up.  Will definitely make this again!

I wonder if you could incorporate these same marinade ingredients in an instant pot shredded chicken recipe

  4. This marinade is not trying to cover up the chicken flavor..better it brings it out to deliciousness! I will keep this chicken cooked ahead of time to use in many ways.

  5. Chicken was really tasty. Salad was a great blend but needs a little more of a dressing.
This meal was satisfying but light enough where we didn’t feel like porkers after eating it.
    Will definitely make again.

Finally some good weather in Massachusetts so I’m going to be making this for dinner tonight! Can’t wait to try it

  7. Made this last night and it was delicious. I made a lemon dressing and strained fat free feta cheese into the lemon dressing. It was enjoyed by all of us.

  8. I made this last night for dinner and had the left overs for lunch. It was delicious. Nice and light! I will make this again.

  9. Gina, This was amazing. My husband was raving about it- so packed of flavor! There is not one recipe I have made that we didn't love. Thank you! 🙂

I went to Greece almost 20 years ago, and one thing I found a most restaurants was a large slice of feta cheese (around 3"x3" and about a 1/2" thick) that was dipped and fried and came with fresh lemon wedges to squeeze over top. Your comment about the feta with lemon reminded me of that. I'm sure the fried block wasn't very healthy, but man was it good.

  11. I made this tonight and had it after my gym class, like everything else on your website it was AMAZING, I've only got about 7 lbs to lose but you are making it easy! I look forward to trying all your recipes, my husband and son are enjoying them as well and asking me to make them again and again, keep up the good work!

  17. I've never commented before- but I must say this was AMAZING. I am 35 weeks preggo & have always been a WW. Skinnytaste has kept my weight gain to a minimum (20lbs so far) while letting me eat REAL yummy food. My husband already had me book mark recipes for after the baby comes so he can try his hand at making them for me!

  18. Made this again for the second time last night and loved it! One of our favorites! So refreshing and filling! Yum!

  21. Really love this recipe, thanks Gina! I even got my boyfriend to enjoy a salad for dinner (quite an accomplishment!).

I ended up with more points + though. Did you calculate this using recipe builder or just track it as a meal? I used recipe builder, I'm guessing that's why I got more points?

  22. Made this tonight for dinner and served it with pitas and Skinny Tzatziki. It was PERFECT for today's hot weather and everyone loved it. I didn't realize until I read the comments that you used white vinegar. I used a combination of red wine vinegar and white balsamic oregano vinegar. SOOOO yummy!!! It is incredible that something so light can pack such a flavor punch. Your site continues to amaze!!! Thanks so much for all you do, Gina!

  23. I made this the other night and we had it in a pita with the salad on the side. I made the Tzatziki too. Hubby loved it!!!!

  24. I just made this for dinner. I wanted something lite and fresh. I definitely got what I wanted! It was so delicious, even my 3 year old son ate it and loved it. I LOVE LOVE this site for my meal ideas. 🙂

  25. I made this last night. It was amazing. The whole family loved it. My husband said he could eat it once a week. Thank you for the wonderful recipes.

  26. Hi Gina… I plan on having this for lunch tomorrow. I am going to pre-mix the dressing but should I store it in the fridge or is it ok to leave it out? Thanks… Monica

  27. Yum, Yum, Yum! I made this yesterday for dinner and it was wonderful. I can't wait to make this in the summer for dining on the deck! Thanks, Gina!

  28. Absolutely delicious! Took me back to honeymoon in Greece last June! Added marinated artichokes and used kalamata olives instead of black olives. Great recipe I can't wait to make again!

  29. I made this Monday and it was really good! Even my 4 year old cleaned his plate. I used my George Foreman grill for the chicken and it came out great!

  30. wow this was so yummy!! Made it with Tzatiki and because we had an unexpected snowy day I just cooked the chicken in the frying pan with no oil.

I'm not a huge fan of bell pepper. Would leaving it out make a huge difference to the salad? And should I replace it with something like extra onion?

  33. I made this last night with the Skinny tzatziki, it was really good! Even my husband loved it – very filling. Thank you!

  34. Just made this for dinner tonight…very light and delicious. I added some chopped mint (because I had it)but did not have fresh dill and had to substitute dried parsley. I served it with skinny tzatziki. I will definitely make this again!

  35. Made this today with shrimp instead of chicken, it was DELISH!!! Thanks so much for all the time and effort you put into making "diet" food worth eating!

  36. I made this earlier in the week since I was craving something Greek. Served the chicken with whole wheat pitas and the skinny tzatziki sauce, tomatoes and grilled onions. Absolutely delicious! Next day I had the leftovers as a salad with the sauce as the dressing. Love your site and recipes…thanks so much! Beth

  37. Truly, truly fabulous. I was a bit skeptical about not needing extra dressing, but the veggies with the dressing tossed in was perfect. I was thinking about adding chickpeas next time for an extra bit of fiber (and because we love them in salad!) 🙂 It was amazing with wonderful flavors and no guilt… a winner Gina. Thanks!

I made this recipe last night opting instead to make "gyros" rather than the salad. I can't even begin to tell you how good it was, I'm still dreaming about it this morning! Thanks so much!

  40. Made this today, its really good, i would encourage every one to try this. I'll be posting a video of me making on my blog soon.

I don't know how I was surviving before I found your blog! I went to weigh in on Friday and I was down 4.8 pounds and that was just from cooking and eating your recipes. My daughter is 10 and the dr. has said she needed to drop a few lbs. I had no idea how I was going to feed her diet blah food. Then along came skinnytaste. You have made my family so happy they get so anxious when they see me cook now.

I just finished eating Skinny Loaded Nachos with Turkey, Beans and Cheese for dinner. I wasn't sure if my husband would eat it since he doesn't really like nachos but it was a hit.

I have tried so many of your recipes and I love everything. My favorite comment I have had from my family is when my daughter was eating baked chicken parmesan and she said "the angels are singing" That is why I can not wait to make this salad it to looks like it will make the angels sing.

Thank you for all the time you put into these recipes. It is because of you I am making progress on my weight loss journey.

  42. I made this last night for my non-dieting family and my husband RAVED about it. (If he had known it was "diet" food, he would have been politely receptive and not had multiple helpings. 🙂

  43. Hey Gina! Thanks!!
I didn't understand why If using wooden skewers, soak in water at least 30 minutes ? Do you mean soaking the skewers in water? why?

    Thank you..:)

If you are grilling the chicken kebabs with wooden skewers, you'll want to soak them so they don't burn if grilling outside.

  44. cant wait to make this salad looks so yummy. Going to use Kalmata Olives in place of the black. As usual your recipes are right on point. Thanks for all you do….

  45. Hi,

We did the recipe last night and it was a huge success. Thank you for the recipe and have a good day! Elise

there is a KEY ingredient that should be there for a really authentic middle eastern marinated chicken…that is GROUND SUMAC…that is the secret of the Middle Eastern restaurants. I just adore it and I put it on salads as well. I marinate mine the same way as yours except for adding the ground sumac and red pepper flakes and of course olive oil. Try the ground sumac, I guarantee you will LOVE IT!

  47. Gina, I want to personally thank you for all your hard work in preparing and sharing your wonderful healthy recipes. I look forward to going in my kitchen and cooking now. There has not been one dish that I have prepared that was disappointing.

When people make mention of my weight lost, and ask how am I doing it. I always remember to mention your website, and all the healthy recipes that I choose from. I let them know eating healthy does not mean boring foods. It is about being educated. You have informed so many of us. You have proven that eating delicious foods can be healthy, appealing and very tasty.

    Again thanks,

I love blogging, I really do. cooking and blogging are two of my lifes great pleasures. But recently I walked away from blogging for awhile to refocus on several areas of my life.
Health being a big one! I'm back to focusing on my diet and exercising and one of the things I did was unsubscribe to the majority of the food blogs I follow. I had about 30 and am down to five.

SkinnyTaste is one that remained. I simply love your recipes and they're just what I need to keep me inspired.

I love this recipe! Going shopping today and will be picking up the few missing ingredients to make this tonight for dinner. Wonderful!!!

    thanks Gina this look fabulous!!!!

  57. Gina, I love love love your site. This looks like another great recipe! Weird question – if I don't have a grill could I broil the chicken? Would that change the cooking time?

  58. This looks like a salad I had at a Mediterranean style restaurant once that was absolutely delicious, so thanks for coming up with this! Definitely going to be on my list of things to make!
