Happy New Year Everyone!

It’s a new year, a great time to start fresh and undo the damage some of us may have done over the holidays!

Too many cookies? cupcakes?
Not enough time to exercise…
We all fall into that trap in December!

My resolutions are to get to the gym more, and get organized! I’m even getting rid of some of my lightly or barely used cookbooks because my shelves are over-flowing! If you are interested, you can enter the cookbook giveaway on Skinny Bits which ends this friday.

I thought I would start the new year with a post of my personal skinny favorites from 2011, ones I like to keep in my rotation because everyone in my family loves them. These are not all my favorites, just the ones I posted in 2011. Hope you enjoy and don’t be too hard on yourself, today is a new day!!

Bananas Fosters Topped Overnight French Toast
A favorite for brunch!

Chicken Rollatini Stuffed with Zucchini and Cheese
These are delicious, great for company or any family meal!

Steak and Cheese Sandwiches with Onions and Mushrooms
I’m a sucker for a good cheese steak.


Carne Bistec (Colombian Steak with Onions and Tomatoes)
The men in your house will thank you for this one!

Crock Pot Pernil (Puerto Rican Pulled Pork)
My husband’s favorite!

Chicken Shiitake and Wild Rice Soup
Excellent soup!

Pasta with Chicken Sausage and Broccoli Rabe
My favorite pasta dish, lightened up.

Arroz Con Pollo, Lightened Up
Great one pot meal!


Zesty Lime Shrimp with Avocado Salad
Light and delicious.

Swedish Meatballs
My teen loves these!

Easiest Pasta and Broccoli Recipe
Perfect dish for picky kids! My toddler loves this!

Sofrito Chicken Stew
Delicious and inexpensive.

  1. I second everyone else. I love your recipes and have been following your blog religiously for over a year. I just made your chicken rolatini with spinach and it was amazing. My husband said it was the best meal I have ever made. I am looking to purchasing a crock pot. Which one do you recommend. I saw one at William Sonoma for $200 which looked really nice and sautes inside as well, but I don't think I need the Rolls Royce of crock pots to do a good job. Which one would you recommend?

  4. I love so many of these recipes, especially the chicken rotallini, have made it so many times. I have even deconstructed the recipe when I am in a hurry (cooking chicken separate from filling), served over brown rice and I have made just the filling and tossed with pasta, adding the cheeses to the pasta at the end. In all cases it turns out delicious! I have many other favorites and so many yet to try. Thank you Gina for all of the recipes and can't wait to see what you make this year 🙂

  7. I think you should create an app. I'd pay for it! I would love a way to organize and bookmark my favorite recipes through an app on my iPad – or maybe you should consider writing a cookbook! I love sooo many of these recipes. Thank you!

  12. The chicken with wild rice soup and the leftover turkey noodle soup are probably my favorite from 2011. There are so many favorites that it's a tough choice, but I make those two often and love them so much! You are the best, Gina. I hope 2012 brings a fabulous Skinnytaste cookbook! 🙂

  15. Every recipe I have tried from your site has been AMAZING!! I made the Swedish meatballs for Christmas Eve dinner and the roasted parmesan green beans and my family raved about the meal!! Also made the carrot cake recipe for my hubby's b-day and it was the BEST carrot cake I've ever eaten!!! Love, love, love your site! Looking forward to cooking more of your recipes 🙂

  19. i think you just became my new best friend 🙂 just found this site thru someone else and i just started weight watchers a few weeks ago. i can not wait to try some of these recipes they look delicious. after reading above i have a meatball stew recipe that doesnt have many ingredients… dont know the points or points plus values tho but here it is

    Meatball stew:
    2 cans beef broth
    2 cans stewed tomatoes
    2 cans sliced new potatoes
    1- 16oz packages of carrots
    meatballs to cover the top
    cook on high for 6 hrs and enjoy

    its makes a lot anyways if you try it i hope you like it as much as i do. and i am so excited to find this site.

  20. Yes, the meatballs are great in the crock pot, for 2012 I'm going to try some of my recipes in the crock and see how they turn out. So many are easily adaptable. And I agree, that zucchini cheese filling is great!
