Recipes For A Skinny Valentine

What can be more romantic on Valentine’s Day than sharing a special home cooked meal with your sweetie.

For those of you not making reservations for Valentine’s Day I thought I would compile some elegant yet simple skinny dishes your sweetie will enjoy, and you won’t be spending hours in the kitchen. Hope you enjoy!!

Crock Pot Bolognese
Because you don’t want to spend your Valentine’s Day cooking, let the crock pot work for you! Vegans can use veggie crumbles instead of beef.

Chicken Rollatini with Spinach alla Parmigiana
If it’s chicken your significant other craves, you can’t go wrong with this simple yet elegant dish.

This fabulous Herb Crusted Rib Eye Roast is coated with sour cream, horseradish, herbs de provence and breadcrumbs, perfect for the beef lover in your house!

For a quick seafood option, try the Angel Hair Pasta with Shrimp and Tomato Sauce. The shrimp is cooked with tomatoes, a touch of cream, white wine and a hint of lemon. The whole dish takes under 20 minutes to make and it’s delicious.

  6. I made the Skinny Chocolate Cake in a Bundt pan for dessert tonight and it was awesome! I am going to have to give away the leftovers though- even skinny chocolate cake is too tempting to leave sitting around the house.

  20. Thanks, Gina! Question about the slow cooker…do you recommend the Hamilton Beach one in your post, or the one in your Amazon store from Cuisinart? I am concerned that the Hamilton Beach one is too big, and the Cuisinart one too small! What to do if you sometimes slow cook for 2, and other times for 4 or 6?

    • I currently am using the Hamilton Beach and love it. And it's fine to cook small quantities as well as larger ones. I keep it parked on my counter!

  25. Thanks for posting some of your older recipies! Is there some way to find the older recipies without having to know what Im looking for? For example, if I have chicken I can search under chicken but the I dont get to see all the other recipies that do not include chicken that I might want to make. I started following your blog last summer and I would like to make some of your older recipies since Ive made most of the newer ones but im not really sure what Im looking for. Maybe a list receipies by year would be helpful so we can go back faster and easier.

  27. Thanks for putting this together! I've been thinking about what I am going to cook all day for my Valentine, and then you posted this and solved all my problems. I am going to make the crock pot bolognese and the srtawberries romanoff for desert. I may add in a TINY bit of orange liquor or coffee liquor to the mix but may make a seperate one for my boyfriend because he loves a little bit of liquor in the mix! Thanks love your site

  37. I'm ahead of the game!! Already made the Bolognese this weekend for V-Day Dinner with the hubs! Nixed the half and half and instead I top it with a little Goat Cheese. SOOOO YUM 🙂
