I am always looking to get more protein in for breakfast after my workouts! I love healthy protein smoothies, like this to start off my day. This skips protein powder and uses cottage cheese which is naturally high in protein. More cottage cheese recipes you make like, this savory cottage cheese bowl, this cottage cheese frittata, and these cottage cheese waffles!

I discovered a new way to add protein to my smoothies… cottage cheese! This is a great discovery for me because I’m not a fan of the tang of yogurt in my smoothies. Cottage cheese makes it creamy with no tang, and has more protein than yogurt so it’s perfect! I also love adding chia seeds to my smoothies which is an excellent source of fiber and omega-3’s.

Ingredients

  • 1-1/2 cups fresh strawberries quartered
  • 1/2 tablespoon raw sugar
  • 1/3 cup reduced fat cottage cheese
  • 1/2 cup fat free milk
  • 1 cup crushed ice
  • 1 tsp chia seeds
  • 6 to 8 drops liquid stevia optional

Instructions

  • Preheat oven to 425°F.
  • In a medium bowl, combine strawberries and sugar.
  • Pour the strawberries on a parchment paper lined baking sheet.
  • Place in the oven and roast for 12 to 15 minutes until the strawberries start to release their juices but are still firm.
  • Carefully pour the roasted strawberries and their juice into a blender along with cottage cheese, milk, ice and chia and blend until smooth.
  • Enjoy!

    My favorite smoothie recipe is similar to a favorite sandwich of mine—

    PEANUT BUTTER AND BANANA SMOOTHIE
    1 frozen ripe banana cut into pieces
    3/4 cup milk
    1 scoop of vanilla protein powder
    2 tablespoons PB2, peanut butter powder
    1/2 cup of plain Greek yogurt

    Any amounts can vary with your taste.

    3/4 cup frozen blueberries, put your blueberries in the freezer!
    3/4 cup sliced fresh strawberries
    3/4 cup unsweetened vanilla almond milk, I used Almond Breeze
    1 tbsp peanut butter
    5 to 6 drops liquid stevia or sweetener of your choice, NuNaturals Vanilla
    1/4 cup ice

    I have been playing with matcha lately. Matcha, spinach, oat milk, bananas, ice. No exact amounts, just throw and go. Now reading the chia seeds maybe I will add that! Thanks for the opportunity!
