I was very impressed with the melting factor of Cabot’s 75% reduced fat cheddar. I will definitely be buying it again for other recipes. I shredded it in my mini food chopper. The reduced fat Pepper Jack cheese would be an amazing option as well.

Ingredients

  • 16 large shrimp, cleaned and deviened
  • cumin
  • garlic powder
  • salt and fresh pepper
  • cooking spray
  • 4 scallions, chopped
  • 6 oz Cabot's 75% Light Vermont Cheddar, shredded
  • 8 6" low carb whole wheat flour tortillas (I used La Tortilla Factory)

For the Tomato Avocado Salsa:

  • 1 medium tomato, diced
  • 1 hass avocado, diced
  • 1 lime, juice of
  • 1 tbsp cilantro, chopped
  • 1 tbsp red onion, finely minced

Instructions

  • In a medium bowl, combine tomatoes, avocado, red onion, lime juice, cilantro, salt and pepper.
  • Season shrimp with salt, pepper, cumin, and garlic powder.
  • Lightly spray a hot skillet on medium heat with cooking spray, add shrimp and scallions. Cook 2-3 minutes on each side until shrimp is cooked though.
  • Remove from heat and cut shrimp in half lengthwise, set aside.
  • Heat skillet on medium heat and lightly spray with oil.
  • Add tortilla, top with 1.5 oz cheese, 8 shrimp halves, and tomato avocado salsa. When the cheese is melted and the bottom of the tortilla is golden brown, place the other tortilla on top.
  • Put a plate on top of the quesadilla to flip it over onto the plate. Then slide the other side onto the skillet.
  • Cook another minute and remove with a spatula.
  • Cut into wedges and serve immediately.

  1. Quick and tasty meal. I used pico de Gallo as a shortcut. Also, since I couldn’t find a low carb tortilla, I only used one and folded it over. Will definitely make again !

  2. Super tasty! I ended up just spreading the avocado on the top tortilla because when stuff falls out of my children’s quesadillas they never eat it. The lime juice is crucial to brightening everything up.

  3. Hey Gina, we make a version of this, in case you ever want to try. My husband created it after eating them on the coast in Mexico.  He sautéed diced bell red peppers, garlic, diced mushroom and little onion.  Drains the liquid, adds the shrimp and voila, deliciousness! I like to cut up the shrimp, easier to bite the quesadilla.  Ps is it ok to offer suggestions?  I am not asking you to change your recipe, but since you love tasty food wanted to offer another way to do them.  If I told isn’t ok, I apologize!

  5. Made these tonight for dinner.-yum! I would 1/2 shrimp before cooking and just sauté w scallions. Could  only find 50% cheddar-still 11SP.  Tip on flipping and plating was very helpful. Hubby liked them too. Will add recipe to rotation. Thank you!

    Made these last night and they were fabulous! I do have a question, though, about the Smart Points listed. When I enter the above nutrition info into the WW calculator, I get 6 points. Could it be because I'm not factoring in the sugar and saturated fat which aren't listed above? Thanks!

  7. These were fantastic. My husband and son inhaled theirs, and both requested that I make them again in the near future. I went with regular pepperjack, because the store was out of the Cabot 75%. The tomato/avocado salsa absolutely made the dish. I served your Southwestern Black Bean salad on the side – because they share so many ingredients, they tasted great together, and were so easy to make. Looking forward to having these again soon.

  10. How much do 16 large shrimp weigh? I plan on making this tomorrow night BUT I only have 1/2 a pound of small shrimp in my freezer. Do you think I'll need more??

  11. I made these tonight for my husband and myself – they're fantastic! He's really picky about quesadillas, too – he loves the greasy, fatty quesadillas you get at Mexican restaurants, so I wasn't sure if he'd like these. But he loved them (and so did I). I didn't tell him that I used low carb whole wheat tortillas (I use the ones from Trader Joe's, only 45 calories each) and low fat cheese, and he didn't even notice. Success!   13. Just made these for lunch and felt compelled to pass along my husband's comments. He isn't a picky eater, but he is critical of flavor combinations. With that said, he gave these 10 out of 10 points! (I honestly don't think that has happened before.) He said the flavors were well balanced, and he enjoyed the citrus flavor from the lime. Nothing to add, nothing to take away. Just a perfect recipe.

    BUT, like others have mentioned, it's hard to eat more than one. These things are filling!! Guess we're going to have to find another use for 1/2 an avocado so we can half the recipe.

    La tortilla factory is 1 point for 2 tortillas if I remember correctly. It's hard to find a tortilla as low in points.

    I used Nature's Promise whole wheat tortillas, and when I put it into recipe builder I got 13 points-plus per serving. All the other ingredients were the same. How many points-plus are the La Tortilla Factory tortillas? I remember I bought them once and now I can't find them!

These look so delicious, but unfortunately I am allergic to shrimp 🙁 But I LOVE the idea of the avocado salsa, do you think the quesadillas would still taste good if I substituted roasted or grilled chicken? I'm assuming it would add a point or so per serving, but just wondering if you thought it would taste ok. Thanks!!

  22. This recipe is to die for, it's my all time favorite, but when I calculate it im getting 10 pointsplus. What am I doing wrong? Im assuming each serving gets 1/4 avacado which is 3 pts+ 2 tortillas which is 4 pts+ 4 shrimp which is 1 pts+ and the cheese is 2 pts+ Please let me know how to make this 7 or 8 pts+ because I love it!   24. I made this the other night with a whole wheat weight watchers pita (since I didn't have an tortillas on hand) and it was incredible! Mmmm nothing like a low fat tasty quesadilla! Even my boyfriend who is down on health food loved it!

  33. I just joined WW and I am loving it simply because of your site. I made this delicious meal last night and it was to die for. I didn't have cheese on hand and made it without and it was still excellent. I also made the pasta with asparagus the other night which was very very good.

  36. these look wonderful. i bought some of the cabot 75% reduced fat cheddar to put in my tuna pasta salad and it wasn't great to just eat plain, it was kind of dry and crumbly. i'll have to make this so i can use it up! looks like another winner, as usual.

    This looks awesome! A perfect, quick summer dinner…

    We don't have the same availability of foods in the supermarkets here in my part of Canada but Cabot cheese is one of the products I always bring back with me when I travel to the US. I'll have to look for the reduced fat cheddar – haven't seen that one yet.

  45. The sell it in my supermarket. I noticed you can also buy it online (see the link). Frozen shrimp is fine! Cooked shrimp would work too if you are pressed for time. Toss with some lime, salt and cilantro first.

  46. Yum! These look amazing! Any suggestions of where to find that cheese? Also, I am the only shrimp lover in my house – would frozen work?

  48. Yes Dawn, love them! They are packed with fiber! Shrimp is just so quick and easy to make, love it. My daughter is allergic so that complicates things a bit.
