I think most of you know I’m pretty obsessed with my spiralizer, (I LOVE my Paderno Spiral Vegetable Slicer) but my friend Ali is even more obsessed than me, if that’s even possible. So obsessed, she devoted her entire blog to this gadget and just came out with a cookbook that you will need to get your hands on! The book is called Inspiralized: Turn Vegetables into Healthy, Creative, Satisfying Meals. Tons of great spiralized ideas, everything from breakfast to dessert – the girl is a spiralizing genius!

I had a hard time deciding what to make first, but since I typically make spiralized zucchini and cucumber dishes with my spiralizer, so I chose a dish using beets instead. As a kid, I hated beets because I only tasted the pickled kind, that came in a jar. As an adult, I started enjoying them roasted in salads, and even discovered how delicious they are raw. Here, the beets are spiralized, tossed with vinegar, oil and herbs and roasted for 20 minutes. Once roasted, the beets are tender yet firm, exactly how I like my vegetables. If you’re unsure about beets, I know this dish will convert you!

The only changes I made to her recipe was using less cheese, I cut the block in half horizontally and it was still more than plenty.

  1. This recipe is a new favorite!  This is an easy vegetarian dinner and I love the unique combination of flavors.  I did roast longer than the recipe calls for, but I prefer my beets less crunchy, and increased the amount of feta.

  2. 🤤🤤🤤🤤 SO good!!! All the ingredients work so beautifully together. Especially the oregano. Served this for lunch.

  3. I have made this for a couple years and never tire of it — beet, feta, and tomatoes, are some of my favorite food staples. To be able to have them together is even better! Have even made this for get-togethers and it is always a hit!

  4. I made it for a dinner party last night along with Milk Streets Salmon and a kale salad from there as well.
The beet dish was wonderful. I made it ahead and covered it with foil, per directions, popping it in after friends were here and appetizing. I bought the beets pre spiralized at my market so it came together pretty quickly. The saltiness of the olives and the feta….the best….yum.

  5. I made it for a dinner party along with salmon and a kale salad. I doubled the recipe and it was a big hit. The saltiness of the feta and the olives are perfect. I used beets that were already spiralized so it came together pretty quickly. I could make it ahead and leave it in the fridge until I was ready to pop that foil covered loveliness in the oven. Yum

  6. You nutritional breakdown says 9g carbs, while mine comes to 22g. Must be the amount of beets! Any idea how many grams 2 small beets amounts to? (not how many carb grams, I mean how many grams or oz or lbs your beets weigh?) Thank you!

  8. My first spiralized vegetable was a beet. It was so sweet and crunchy and fresh tasting. I've been chasing that sweet beet ever since and it never quite measures up.

  9. I have this dish in the oven as I type! I stumbled upon the Paderno Veggie Slicer today, just by chance, and when I saw that it was marked down from 49.99 to 29.99, I was so excited! Never did I think I would find this locally!

Cant wait to see how this dish turns out, it looks beautiful!

My next purchase is that awesome cook book!

  10. Thoughts on doing this as a cold dish? I'm thinking that doing it raw with crumbled feta sounds light and delish! Or would I need to quickly blanch the beets to soften a bit? Would love to hear your thoughts!

  11. I just made this for dinner tonight. It was wonderful. It's definitely a real keeper. I always thought I hated beets till I tried a couple of your recipes using them. Thanks for helping to keep my eating interesting and delicious.

I made the beets tonight and it was delicious. I had beets that I needed to use but the next time I make this I will look for beets that are the size that will fit my spiral slicer. These did not, way too fat, and made a mess. I ended up shaving small slices going around and around the beet. That was fine, the taste was still the same! I didn't have parsley but did have cilantro so used that, fresh thyme, and fresh oregano. The garlic and red wine vinegar really make the flavor unique and I will definitely make it again.

  15. I'm pretty new to spiralizing, but last night I made the
Spiralized Vegetable Cornmeal Fritters and they were perfect with our black eyed peas!

  48. I am not a big fan of zucchini, but my son hasa sprial cutter and used it while staying with us for a while. Actually, my favorite way of using it was plain ole zoodles sauted with butter and a little salt!

  49. Just made this last night, and it was delicious! I made with a combo of golden and red beet, eliminated most of the cheese (just finished with a sprinkle of fat-free feta crumbles), reduced the olives down to 4, and cut out the olive oil. The result was so delicious and flavorful filling and very filling, but still really light.

I did encounter some challenges spiralizing the onion. Mine just kind of fell apart when I started to spin.Any tips/tricks on working with onions in the Padermo?

    Definitely one to try!

My favorite so far is zucchini noodles, roasted red peppers and pesto, but I can't wait to try this beet recipe! They had nice beets at the market this morning and I bought a bunch, I must have known I'd need them for this recipe!

  57. Based on your recommendation, we purchased a spiralizer and used it frequently throughout the spring and summer. Even though Mother Nature cannot embrace pending warmer weather for us in the Northeast — spiralized food can give us a jump on the season. Among the many SkinnyTaste recipes we have enjoyed is Shrimp Scampi Zoodles for Two, but have put this beet and feta dish on our weekend menu.

The first thing I'm trying is your Kung Pao zoodles for two. I never thought to spiralize beets. Love beets!

  64. Out of your recipes my favorite is the shri scampi zoodle for 2 (that I made for 4 ?). Delicious and so simple. Delicious and fresh 'salad' (veggie side dish) in the summer. Great for bbq's.

Gina, I'm sure you may have already heard that I am your biggest fan. You have inspired my love for cooking. That alone is more than enough to admire you. According to those around me, I am an amazing chef, best wife ever, great friend who throws delicious parties, a great nutritional motivator, and…my favorite…a cool mom. Simply because I can read a recipe! I grew up in Astoria, New York, the Greek capital here in the US. My friends and I cruised around Astoria always in search of our favorite food…A greek salad with grilled shrimp. We were young and always "dieting" but those salads always seemed special. So hands down, my favorite spiralized recpe has to be the Spiralized Greek Cucumber Salad with Lemon and Feta . After a great workout, I like to add the Pan seared shrimp for the extra protein. Before you know it, I'm reliving my teenage years again minus the big hair of course! Not only have you turned me into a fantastic cook, but you've also made me young again! Maggie

  78. I can only pick one…that's tough. I guess it would be your shrimp scampi zoodles for two since I make that over and over. This beet recipe looks great. Can't wait to try it!

  85. I had thought I really couldn't spend the money on a spiralizer but recently found, what seemed to be an unused, one at Value Village. One of the first thing that I tried was the Shrimp Scampi Zoodles for Two. So tasty! I have gone crazy turning *everything* possible into veggy noodles (voodles?) and would love a cookbook like this. 87. Skinny Taste Gina,
We have started a Skinny Taste lunch club at work. Every Thursday 12 of us bring something out of your cookbook/website. WE LOVE IT!. Some things are a challenge because we do not have an oven here. I want to make the beets but do you think it would be alright to cook the night before and then carefully re-heat in a crock pot the next day? Any suggestions? Thanks for a life style change at work! P.S. Just bought a spriralizer, love zoodles with olive oil, roasted garlic and red pepper flakes, Plain and beautiful.

  124. This looks like an amazing book! Zucchini are my current favourite, but I think this recipe could sway me to the dark (beet) side. I'd love to win!

  125. I would love to add spiralizing to my healthy food choices. Looks like this book would be so helpful for that.

  126. Zoodles are a big hit at our house. I think my 5 and 3yo like them because of the name. I'm thinking of adding a "Z" to the name of everything I make from now on!!

  127. I want to start spiralizing but don't know where to begin, the cookbook would greatly help me get started

  128. I'm new to spiralizing and have only had zucchini, so for now that is my favorite. I suspect it will be sweet potato fries when I get the chance to make those.

My favorite spiraled recipe is definitely good ol' spiraled zucchini 'spaghetti'. I love that it is so quick to whip up; perfect for when I get back home late from class and extremely filling when paired with some bread 🙂

  133. Chicken Zoodle "Lo Mein". But then anything "zoodled" is delicious! Love my "zoodler" as my husband calls it.

  135. My favorite is a tarragon chicken recipe from Ellie Krieger, and I spiralize the zucchini and squash.

Unfortunately, I haven't gotten the chance to taste any spiralized recipes, but I have to say, your zucchini noodles all look fantastic!

  138. My favorite is spiralized tuna noodle casserole, using zucchini as the noodles–it's healthy, low cal/low fat, and still feels really hearty and comfort food-y!! Everyone in the fam loves it. I finalized just got the paderno a couple weeks ago, was using a vegetti before, the spiralizer is awesome! Side note for Gina–I finally made your crockpot taco chicken chili yesterday for the snow day, YUM! Have made so many of your other recipes, but had this one on the list forever 🙂 Thank you!

  139. I do a lot of zucchini. I love it with tomatoes, cheese, and pesto. But I've also enjoyed sweet potatoes, butternut squash, and beets!

  140. I am looking to get a spiralizer so that one day I CAN have a favorite spiralized veggie! Hoping to win…pretty sure it would be either zucchini or sweet potato if I did have one! Thanks for your great blog!

  141. this recipes looks tasty.

  143. I bought a spiralizer last week and tried zoodles for the first time for dinner last night. I loved it! I would love to win this cookbook too!

  144. Once again – this looks great, Gina! This will be a great addition to how I eat my beets. I'm with you… I normall spiralize zucchini and cucumbers. In fact, my favorite go-to recipe is my Dad's homemade tomato sauce with zucchini noodles, er, zoodles 🙂

Just made your Zoodle Lo Mein and I have to say that might be my favorite! Such a healthy and delicious swap!

  148. The Only vegetable I have used it my spiralizer is zucchini. As someone who is gluten free and has had severe stomach problems her whole life, having a delicious, easily digestible pasta swap has been a game changer. I need to expand to new vegetables!

  149. Yum! That looks delicious! Would love to win then I would have good reason to buy a spiralizer!

  150. I love making a cold sesame zoodle recipe. Who knew that zucchini could taste that good. My meat and potatoes husband has become a believer! To change that man's mind means you've really done something great! Keep the fantastic recipes coming!

  151. Would love to win this cookbook, add it to my collection! My favorite way to use my spiralizer is carrots, cooked lightly with a brown sugar glaze. Need to try this recipe when beets are in season!

  152. My son loves when we eat spiralized carrots! (Sometimes they're more like carrot curls… I need more practice!)

  153. I just saw your gorgeous cookbook propped in a kitchen design showroom at NEBRASKA FURNITURE MART in KC! How crazy is that? I would love this in my cookbook collection. I need new inspiration to keep my husband on track with our healthy diets! ➿➿➿those are spirals- LOL. CHOOSE ME???

I am very new to spiralizing…having only got mine 2 weeks ago! I am a total convert to it…I adore it and the many possibilities for it. I cannot wait to try this recipe as I love beets and halloumi cheese. So far my favorite recipe has been a zucchini noodle with a tomato basil sauce with mushrooms and shrimp. Love your site!

  156. I love my spiralizer, and I love Ali’s blog! My favorite spiralized recipe is Ali’s jalapeno and chorizo carrot rice with avocado. I usually sub butternut squash rice and use chicken chorizo – SO good! I’d love to win a cookbook!

  157. I've only made zucchini noodles with turkey meatballs since I've bought my spiralizer (thanks to your suggestion!!), but am anxious to try more – the cookbook would be awesome!

I definitely need to try this spiralizer!!! Though I'm not a huge fan of beets so I think this might be a bit too heavy on that "dirt" flavor for me.

  163. My favorite currently is a salad with lettuce, spiralized vegetables (whatever, but last night was carrots and zucchini) as well as coriander leaves- chopped, a few chopped nuts and a Thai salad dressing (lime, fish sauce, palm sugar, chopped chili and garlic) and topped with some leftover meat or seafood from an earlier meal. We have been having this once a week this summer (we live in New Zealand – but my sister lives in the USA and would like the cookbook). Thanks for your blog – I love it.

  164. I would have to say that my favorite spiralized recipe would be your Spiralized Greek Salad!! I made this for my boyfriend and I one night last summer, and paired it with a herby and crisp sauvignon blanc and it was outta this world!!! So easy and fresh tasting… I love using my spiralizer and would love to learn more ways of getting some use out of it!

  165. I love my spiralizer too!!! My favorite recipe is Shrimp Scampi Zoodles for Two! Can't wait to try the beets!

  166. My friend and I just tried spiralized zucchini for the first time yesterday and LOVED it! We sauteed the "noodles" in homemade herb butter, added some polish sausage, and then topped it with freshly grated Parmesan cheese. It was absolutely delicious and we are now eager to spiralize EVERYTHING we possibly can 🙂 This cookbook is definitely a must-have for us!

  168. I have been spiralizing veggies for a few years now. This looks so good. Think I will make it tonight.

  170. My sister has been pushing me to buy a spiralizer because, apparently, I don't know what I'm missing with zoodles. I'll have to get one so I can start trying some of these recipes.

  171. Shrimp Scampi Zoodles! But I must admit, this beet recipe looks worthy of trying! I do wonder about the mess to the spiralizer – will it stain? Carol

  172. I LOVE my spiralizer!! I mostly just do zucchini!!! Would be awesome to branch out with a cookbook!! Definitely going to try this recipe 🙂

  173. Spiralize a zucchini with roasted red pepper antipasto, fresh baby spinach and seared scallops! That was my first creation and it's amazing!

  174. My favorite is the Greek Salad. But I will try this receipe and maybe my favorite will change! I just ordered a padermo spiralizer and can't wait to use it! I would love to win the cookbook to get more ideas on what to make!

This recipe could certainly be my favorite. This cookbook would be a good reason to buy a spiralizer.

  180. I just started spiralizing and would so love to win that cookbook. The beets look terrific. My favorite recipe so far is zoodles and mushrooms aioli. I could eat it Yummm!

    1. Where is the zoodles and mushroom aioli recipe? Or is that two separate things? Sounds like something I would love…

    2. Where do I find this recipe? Or is it two separate things? I love mushrooms and would love to try it.

  181. I love roasted beets! This looks absolutely fabulous and I'm planning to try, but I have to ask… how did you keep the mess from spiralizing beets contained?

    1. THANKS for asking/answering the mess question. I absolutely LOVE beets…but was worried they would stain my spiralizer. Now that I have the answer, I'm ready to make this salad! 🙂
