Spiralized Mediterranean Beet and Feta Skillet Bake

I think most of you know I’m pretty obsessed with my spiralizer, (I LOVE my Paderno Spiral Vegetable Slicer) but my friend Ali is even more obsessed than me, if that’s even possible. So obsessed, she devoted her entire blog to this gadget and just came out with a cookbook that you will need to get your hands on! The book is called Inspiralized: Turn Vegetables into Healthy, Creative, Satisfying Meals. Tons of great spiralized ideas, everything from breakfast to dessert – the girl is a spiralizing genius!

I had a hard time deciding what to make first, but since I typically make spiralized zucchini and cucumber dishes with my spiralizer, so I chose a dish using beets instead. As a kid, I hated beets because I only tasted the pickled kind, that came in a jar. As an adult, I started enjoying them roasted in salads, and even discovered how delicious they are raw. Here, the beets are spiralized, tossed with vinegar, oil and herbs and roasted for 20 minutes. Once roasted, the beets are tender yet firm, exactly how I like my vegetables. If you’re unsure about beets, I know this dish will convert you!

The only changes I made to her recipe was using less cheese, I cut the block in half horizontally and it was still more than plenty.

Serving Size: 1 /4th of recipe

Ingredients

  • 1/2 cup halved yellow cherry tomatoes
  • 1/2 cup halved yellow red tomatoes
  • 2 medium cloves garlic, minced
  • 2 tbsp minced fresh parsley, plus 1 tsp for garnish
  • 1 tsp dried oregano
  • 1 tbsp red wine vinegar
  • 10 pitted Kalamata olives
  • 1 tbsp extra virgin olive oil
  • 2 small beets, peeled and spiralized
  • 1/2 small onion, peeled and spiralized
  • Kosher salt and black pepper, to taste
  • 4 oz feta or halloumi cheese, half block cut horizontally

Instructions

  • Preheat the oven to 400°F.
  • In a large bowl combine all the ingredients except for the cheese and parsley for garnish.
  • Place the cheese in the center of a large oven-safe skillet or casserole dish. Top and surround it with beet noodle mixture.
  • Cover with foil and bake 20 minutes, until the beet noodles wilt.
  • Serve hot garnished with remaining parsley.

  1. This recipe is a new favorite!  This is an easy vegetarian dinner and I love the unique combination of flavors.  I did roast longer than the recipe calls for, but I prefer my beets less crunchy, and increased the amount of feta.

  3. I have made this for a couple years and never tire of it — beet, feta, and tomatoes, are some of my favorite food staples. To be able to have them together is even better! Have even made this for get-togethers and it is always a hit!

  4. I made it for a dinner party last night along with Milk Streets Salmon and a kale salad from there as well.
    The beet dish was wonderful. I made it ahead and covered it with foil, per directions, popping it in after friends were here and appetizing. I bought the beets pre spiralized at my market so it came together pretty quickly. The saltiness of the olives and the feta….the best….yum.

I used beets that were already spiralized so it came together pretty quickly. I could make it ahead and leave it in the fridge until I was ready to pop that foil covered loveliness in the oven. Yum

  6. You nutritional breakdown says 9g carbs, while mine comes to 22g. Must be the amount of beets! Any idea how many grams 2 small beets amounts to? (not how many carb grams, I mean how many grams or oz or lbs your beets weigh?) Thank you!

  9. I have this dish in the oven as I type! I stumbled upon the Paderno Veggie Slicer today, just by chance, and when I saw that it was marked down from 49.99 to 29.99, I was so excited! Never did I think I would find this locally!

  10. Thoughts on doing this as a cold dish? I'm thinking that doing it raw with crumbled feta sounds light and delish! Or would I need to quickly blanch the beets to soften a bit? Would love to hear your thoughts!

    I made the beets tonight and it was delicious. I had beets that I needed to use but the next time I make this I will look for beets that are the size that will fit my spiral slicer. These did not, way too fat, and made a mess. I ended up shaving small slices going around and around the beet. That was fine, the taste was still the same! I didn't have parsley but did have cilantro so used that, fresh thyme, and fresh oregano. The garlic and red wine vinegar really make the flavor unique and I will definitely make it again.

    I've never tried spiralizing a vegetable before, but recipes like this make me want to get a spiralizer. I have had spiraled beets as a garnish at a restaurant and they were delicious. The little strands were also a lot of fun.

    I just purchased the spiral slicer and I'm not sure where to start, I could really use this cookbook! I love beets and feta so I'm anxious to try this recipe. My goal is to improve my health, eat cleaner non processed foods and hopefully be able to get off my cholesterol medication.

    I already have the cookbook and have to say that everything….absolutely EVERYTHING I have made out of it is fabulous! I cook from it every day! I am commenting on my favorite zoodles dish to enter to win the cookbook for my good friend. I went to buy a copy of it for her as a gift at B&N and they didn't have it on the shelf! Bummer 🙁 I think my favorite is the Shrimp Scampi and Zoodles BUT I purchased the ingredients for this beet casserole today. We'll see if it outshines the other zoodle recipes 😉

    I make a green zucchini salad with my spirizer and so far it is my favorite recipe. This recipe with beets sounds awesome and I am sure I will be making it soon!

  48. I am not a big fan of zucchini, but my son hasa sprial cutter and used it while staying with us for a while. Actually, my favorite way of using it was plain ole zoodles sauted with butter and a little salt!

  49. Just made this last night, and it was delicious! I made with a combo of golden and red beet, eliminated most of the cheese (just finished with a sprinkle of fat-free feta crumbles), reduced the olives down to 4, and cut out the olive oil. The result was so delicious and flavorful filling and very filling, but still really light.

    I did encounter some challenges spiralizing the onion. Mine just kind of fell apart when I started to spin.Any tips/tricks on working with onions in the Padermo?

    I love to use spiralized vegetables as a substitute for grain-based noodles in Asian dishes, include soups and stir fries. I really like zucchini noodles in Szechwan sauce. Rounded out with some mushrooms and sometimes shrimp, it is filling and flavorful!

  64. Out of your recipes my favorite is the shri scampi zoodle for 2 (that I made for 4 ?). Delicious and so simple. Out of my recipes my favorite is raw zucchini marinated with line juice and a little olive oil + salt and pepper. Served with thin flakes of Parmesan cheese + a few roasted pine nuts. Delicious and fresh 'salad' (veggie side dish) in the summer. Great for bbq's.

    Gina, I'm sure you may have already heard that I am your biggest fan. You have inspired my love for cooking. That alone is more than enough to admire you. According to those around me, I am an amazing chef, best wife ever, great friend who throws delicious parties, a great nutritional motivator, and…my favorite…a cool mom. Simply because I can read a recipe! I grew up in Astoria, New York, the Greek capital here in the US. My friends and I cruised around Astoria always in search of our favorite food…A greek salad with grilled shrimp. We were young and always "dieting" but those salads always seemed special. So hands down, my favorite spiralized recpe has to be the Spiralized Greek Cucumber Salad with Lemon and Feta . After a great workout, I like to add the Pan seared shrimp for the extra protein. Before you know it, I'm reliving my teenage years again minus the big hair of course! Not only have you turned me into a fantastic cook, but you've also made me young again! Maggie

    You turned me on to the Paderno Vegetable Slicer and I ordered from Amazon immediately after seeing your zucchini recipe. When it came in went to work on the zucchini and wow, fast and delicious. My husband loved it and with him and I both trying to lose some weight, we were hooked. I can't wait to try this beet recipe, we love beets.     We have started a Skinny Taste lunch club at work. Every Thursday 12 of us bring something out of your cookbook/website. WE LOVE IT!. Some things are a challenge because we do not have an oven here. I want to make the beets but do you think it would be alright to cook the night before and then carefully re-heat in a crock pot the next day? Any suggestions? Thanks for a life style change at work!     My favourite spirallized recipe is simple spiralled potatoes with garlic, salt & pepper tossed in olive oil and baked in the oven!
    This has become my fave kitchen tool to eat healthy.

    I absolutely love spiralized zucchini noodles. My favorite way to eat them is just lightly sauteed in olive oil, garlic and a touch of salt. Delicious.

  138. My favorite is spiralized tuna noodle casserole, using zucchini as the noodles–it's healthy, low cal/low fat, and still feels really hearty and comfort food-y!! Everyone in the fam loves it. I finalized just got the paderno a couple weeks ago, was using a vegetti before, the spiralizer is awesome! Side note for Gina–I finally made your crockpot taco chicken chili yesterday for the snow day, YUM! Have made so many of your other recipes, but had this one on the list forever 🙂 Thank you!

My favorite currently is a salad with lettuce, spiralized vegetables (whatever, but last night was carrots and zucchini) as well as coriander leaves- chopped, a few chopped nuts and a Thai salad dressing (lime, fish sauce, palm sugar, chopped chili and garlic) and topped with some leftover meat or seafood from an earlier meal. We have been having this once a week this summer (we live in New Zealand – but my sister lives in the USA and would like the cookbook). Thanks for your blog – I love it.

I made this for my boyfriend and I one night last summer, and paired it with a herby and crisp sauvignon blanc and it was outta this world!!! We sauteed the "noodles" in homemade herb butter, added some polish sausage, and then topped it with freshly grated Parmesan cheese.
