Although you can easily make a salad by chopping it with a knife, I love using my spiralizer because it’s quick! A few spiralized salad favorites, Zucchini Noodles with Tomatoes and Pesto, Spiralized Summer Roll Bowls, and Spiralized Greek Cucumber Salad.

This salad was inspired by an amazing vegan appetizer I had in Seaside Florida prepared for me by the staff at Raw and Juicy. It was so fresh and simple, I knew I was going to recreate it at home. I added some cooked shelled edamame for some protein. The results were fresh and fantastic – a MUST try!

Spiralized Raw Zucchini Salad with Avocado and Edamame is a fresh, quick and delicious salad that takes less than 5 minutes to make, start to finish and there's no cooking involved. It's perfect for the summer because you won't heat up your kitchen!

Ingredients

  • 1 medium zucchini, ends trimmed off
  • 1/2 lemon
  • 1/2 tbsp olive oil
  • kosher salt, to taste
  • fresh black pepper, to taste
  • 2 oz diced avocado, 1/2 medium haas
  • 1/3 cup shelled cooked edamame
  • 1 basil leaf, minced
  • 1 tsp minced chive

Instructions

  • Use a spiralizer or a mandolin fitted with a julienne blade and cut the zucchini into thin spaghetti-like strands.
  • Trim the strands into bite size lengths, about 8 inches long and place it in a large work bowl.
  • Drizzle the olive oil, lemon juice, salt and pepper and toss.
  • Dice the avocado into small pieces and add to the bowl along with the edamame, basil and chives.
  • Serve right away and enjoy!

  1. Absolutely LOVE this recipe! Recommend adding a little lemon zest, toasted pine nuts and some freshly grated Parmesan and holy Moley it takes it to another level!

  4. Outstanding! I like all of the ingredients, so was fairly confident I’d enjoy this, and I did. My husband does not love zucchini or edamame, so was quite skeptical, but he loves this too. I’ve made it 6 or 8 times in the past 4 weeks.

  6. I was hesitant about the raw zucchini but I loved this salad! I added tuna for protein, and omitted the basil (only because I didn’t have it). I combined everything in the morning and refrigerated for about 4 hours and thought it tasted great.

     I didn’t have basil but still tasted great. Imade extra for lunch tomorrow. I think next time I try it I may use it without the shelled edamame, as this is all I had in fridge.  Will be making it more often

  12. Starting a new job and was wondering since my break isnt for a few hours would it still taste fine? I noticed it said serve right away…. but if i made it the night before and had it the following day for lunch would that be alright?

  14. This is absolutely delicious! I used a hand-held julienne peeler; it worked great. Doubled the recipe – next time I will add more edamame, that is all I would change! SO GOOD.

  26. To be honest I wasn't sure how I would like "raw zucchini". although after I mixed everything together, it tastes delicious!

    I bought my Paderno months ago and had been so hesitant to try a single dish I ended up storing it away and completely forgetting about it, crazy I know. But once I saw your post on Facebook with this picture, I knew it was time to dive in and try it and I am so glad I did.   27. My Paderno Spiraler arrived today, which I bought specifically because of you! This is the first thing I made with it, and it was freaking incredible. I wasn't sure how I'd feel about raw zucchini, but it has a nice crunch to it and it pairs very well with the basil, chive, and lemon in the dressing.

    I made zucchini noodles with a julienne peeler and it did the trick, but it took forever and I had a lot of waste. The Paderno machine did a huge zucchini in like 15 seconds and I had many more noodles than I got with my julienne peeler. Everyone should have this machine! And everyone should make this recipe!

  29. Shoving this salad into my mouth as I type and groaning in pleasure. WOW! I finally broke down and bought the sprializer after seeing this recipe. I just received it Wednesday and this salad is it's maiden try. HOLY COW! I was not expecting to like it this much. Everything about it is to die for!     • I tried the recipe for lunch today, omitted avocado, added grilled chicken pieces and some sheep's milk feta… this recipe was a tremendous success. Both my husband and our guest were very pleased with it (our guest was surprised that the spaghetti was really zucchini). My husband doesn't offer compliments lightly.   44. This recipe sounds delightful. I just got a spiralizer and have only used it once, but love it. When I make this recipe I would sub feta cheese for the avocado, partly to up the protein level, but also because my husband does NOT like avocado. Really looking forward to trying this; it will be nice when we're at the beach and I do not have access to a stove…

    • Hi, I love avocados but one of my daughters is allergic, you could replace the avocados with humus or I have used mashed green peas. We do a lot of Avocado stuff but when looking for a replacement the green peas seem to be the most popular.

    • This will still taste great without avocado, you can add some shaved parm!
