Thai Chicken Peanut Lettuce Tacos

A few months ago while visiting Asheville, NC with my friend Sandy (such a great food scene there!) we stopped for lunch at the White Duck Taco Shop, a creative taco joint where we had Bulgogi Tacos, Bangkok Shrimp Tacos and Duck with Mole Tacos.

How To Make Lettuce Wraps
Lettuce wraps are low-carb, keto, gluten-free and low calorie, and don’t interfere with the flavors of the filling. A few tips when making lettuce wraps:
- Look for lettuce leaves that are large enough to hold the filling. I like to use iceberg lettuce for larger cups. Romaine lettuce and baby romaine are also great.
- The leaves of butter or boston lettuce are smaller, but also wonderful.
- If you prefer, you can turn this into a big chopped salad by simply serving this over a bowl over chopped lettuce.

Thai Chicken Peanut Lettuce Tacos
Ingredients
For the Peanut Sauce:
- 1/2 cup reduced-sodium chicken broth
- 3 tbsp PB2, or 2 tbsp peanut butter
- 1/2 tablespoon Sriracha chili sauce
- 1 tbsp honey
- 1 tbsp soy sauce, use Tamari for gluten free
- 1/2 tbsp freshly grated ginger
- 1 clove garlic, crushed
For the Chicken:
- cooking spray
- 16 oz ground chicken
- 1 tbsp Sriracha chili sauce, more or less to taste
- 4 cloves garlic, crushed
- 1 tbsp fresh ginger, grated
- 1 tbsp soy sauce, use Tamari for gluten free
- 3/4 cups shredded carrots
- 2/3 cup scallions, chopped
- 3/4 cup shredded red cabbage
- 2 tbsp chopped peanuts
- cilantro leaves, for garnish
- 4 lime wedges
- 8 iceberg lettuces outer leaves
Instructions
- Make the peanut sauce; in a small saucepan combine chicken broth, PB2, 1/2 tablespoon sriracha, honey, 1 tablespoon soy sauce, 1/2 tablespoon fresh ginger, and 1 clove crushed garlic and simmer over medium-low heat stirring occasionally until sauce becomes smooth and thickens, about 6 to 8 minutes.
- Meanwhile, heat a large non-stick skillet or wok over high medium until hot.
- When hot, spray with oil and sauté the chicken until cooked through and browned, breaking it up as it cooks; add the sriracha, remaining garlic and ginger and saute 1 minute. Add the tablespoon of soy sauce, cook 1 minute.
- Add the shredded carrots, and 1/2 cup of the scallions and sauté until tender crisp, about 1-2 minutes. Set aside.
- Divide the chicken equally between 8 lettuce leaves, top each with shredded cabbage, remaining scallions, drizzle with peanut sauce, chopped peanuts and cilantro, for garnish and serve with lime wedges.
This is a wonderful recipe. I doubled the peanut sauce so I could use it when I make it again. The only thing I did differently (after the peanut sauce was made and tasted) was add some sweet chili sauce for an added layer of flavor. It was great!
I NEVER post reviews. But I felt the need to for this recipe because I read the reviews and thought I’d give it a try. I followed this recipe exactly as written and I’m sorry but it just didn’t meet my nor my picky husbands’ expectations…IT EXCEEDED IT!! I’m a “hit or miss” cook mostly miss, seriously. This is maybe the 4th or 5th time in 3 years of marriage that he’s said, “you’ve got to add this to the “make again list””….the list consist of now 4 recipes in 3 years! ♥ snoopy happpy dance..
This dish is so flavorful. I just love the peanut sauce. I ate it over a plate of chopped lettuce. It’s easier than trying to pick it up.

Holy moly. I literally NEVER do a review on recipes but I had to with this one. It was to die for! And super filling!
I followed the recipe as-is with the exception of the peanuts – I replaced them with wonton strips. I loved that it had a little kick, it really helped take it up a notch. Also, I remember someone mentioning the sauce was too runny so to combat that I did a couple extra minutes on medium heat to burn off some of the liquid and I got a perfectly creamy peanut sauce that yielded 6 tablespoons.
This was very good. It was time consuming, but I felt good eating this, as it was very healthy. Good flavor, everyone liked them! I am also not sure how to get the lettuce to not break as I’m holding them with the meat in it. The lettuce cups break apart instead of bend.
Loved it!!! Was licking the plate. Left off sriracha but the sauce and lime added such rich flavor. Also didn’t have lettuce so just ate off the plate and didn’t even miss it!
Delicious!!! I thought I would need 4 tacos but I had 2 and I was so satisfied! So fresh and bright.
If I had one complaint it would be that most of your recipes don’t fit on one page for printing. 😢

I can only comment on the peanut sauce. I made it to compare with another recipe. This has great flavor but the texture was a lot more liquid then I had wanted. So I added maybe another 2 T of the PB2 peanut butter. But then had to add more of the other stuff. But it has a nice flavor. I’d never hesitate using this again.
I’m sure it would be delicious,. I was wondering too, but after much thought I believe we’re talking too slightly different flavors. But I’m going to try both and see what happens. How bad could it be?

This was my first foray into using PB2 and I was very pleasantly surprised! Made just as written, except husband is allergic to chilis so sriracha came after on top, and we only had pre-chopped lettuce. I can’t believe how healthy and flavorful this was for so few calories!

I love these this recipe!! My partner and I are trying to eat less meat so I made it with cooked green lentils and it tasted just as good as ground meat.
Decided to make these after having something similar at Lazy Dog and was still craving that taste. These are now my favorite meal prep for lunch- I could probably eat them everyday!! Plus it was so quick to whip up. I knew it would be good since I was practically licking the sauce out of the pan. I used Better’n Peanut Butter since I didn’t want to buy PB2. It does add a point per serving when put into the WW Recipe Builder. This has great flavor and the perfect amount of spice. I like my food very spicy though. So if you aren’t into heat you may want to tone down the sriracha.
How much chicken and sauce per wrap? I made it all ahead of time and don’t have enough eating to divide equally into 8.
Really delicious. Spicy but such great flavors. It was a hit with my husband and I. He ate the leftovers before I could even pack them for lunches the next day!
Question: Would I be better off to substitute Thai chili dipping sauce or Frank’s if I am out of Sriracha? Thanks for the help!
I added red pepper flakes to the sauce to make it hotter, and served on chopped lettuce (instead of taco style), was great. I would make this as a salad again and add fried wontons on top to add more crunch.
