They also taste great! Not too sweet, with a hint of coconut, these pops are healthy and delicious for adults. This recipe is from the cookbook Glow Pops; Super-Easy Superfood Recipes to Help You Look and Feel Your Best by Liz Moody. I’m excited about this book because it’s packed with fun, healthy, nutrient-filled frozen treats infused with superfoods and bursting with flavor. Recipes like Avocado Chile Lime Pops, Cookie Dough, Chocolate Fudge, just to name a few. My only change to the recipe was to use light coconut milk, to lighten it up.   • Place all the ingredients in a blender and blend until smooth. Strain.
  • Pour the mixture into popsicle molds and freeze 1 hour. Insert the sticks and freeze until solid, about 4 hours more.
