This easy recipe is made with tender, pickle-brined grilled chicken breast with a zesty slaw and spicy mayo for an easy weeknight dinner or weekend cookout!
Pound out the thicker ends of the chicken breasts, marinate them in pickle juice, and refrigerate.
Coat chicken breasts with olive oil and spices, then add to grill and cook for 4-5 minutes each side.
Spread spicy mayo on both sides of the rolls and top each piece with slaw. Then add the chicken and pickle slices.
Serve with sweet potato fries, macaroni and cheese, potato salad, or any of your favorite sides.
