This moist, delicious bread with walnuts, cinnamon, and vanilla, is made healthy and light with applesauce – a great way to use up that summer zucchini!
Mix the dry ingredients and nuts in one bowl, and the wet ingredients and grated zucchini in another. Then combine.
Pour batter into a prepared 9×5-inch loaf pan and top with the remaining nuts. Then bake.
