Skillet Sazon Chicken Tenders
More easy chicken recipes I love are Grilled Bourbon Chicken, Roast Chicken with Rosemary and Lemon and Chicken Zucchini Stir-Fry.
When Karina, my oldest daughter (and the pickier of the two) was younger, and I was making something spicy I knew she wouldn’t eat, I used to quickly whip up this dish. Nothing fancy, just ingredients I always had on hand.
Funny because once she went off to college I never made it again. Recently I ask her which of my recipes she likes most, this one is in her list of top 10. Considering how much she likes it and how quick and easy it is to make, I figured I’d have to share it with you all here. I always served it for her over rice with avocado but you can serve it over farro, quinoa or any grain you prefer. I’ve also taken the leftovers and shredded them in my blender for amazing shredded chicken to use in fajitas and quesadillas.
Weeknight Skillet Sazon Chicken Tenders
Ingredients
- 8 1.25 lb chicken tenders
- 1 1/2 tsp dry sazon seasoning, use my homemade sazon
- kosher salt, to taste
- 2 tsp olive oil, divided
- 1/2 cup diced scallions
- 3 cloves garlic, crushed
- 1 medium tomato, diced
- 1/3 cup reduced sodium chicken broth, check your labels for Whole 30 Compliant and Gluten Free
Instructions
- Season chicken with dry sazon seasoning and salt.
- Heat 1 tsp of oil in a large nonstick skillet over medium high heat and add chicken, cook 4 minutes, turn and cook 3 to 4 minutes until golden brown. Set aside on a dish.
- Add remaining teaspoon of oil and scallions and cook over medium heat 2 to 3 minutes.
- Add garlic and cook 1 minute. Add tomato, season with salt and cook 3 to 4 minutes until soft and thickened.
- Add the broth, mix and return the chicken; cover and simmer 1 to 2 minutes to loosen the sauce.
This recipe was delicious and easy. A winner.
It’s OK for something quick. Nothing to write home about.
While I love many recipes on this site, this one is probably my all time favorite. I have made this recipe several times over the years and it’s always a huge hit. I hadn’t made it in a while and last night I did and was like… man, this is still SO good! So today, I thought it was time I actually post something to praise this recipe. I usually cut up chicken breast instead of using tenders and it’s great! I don’t know how I lived my life without Sazon seasoning… the best!
I am so happy I found this recipe. It’s so good for lunch or dinner. Add the avocado.
I skipped the scallions and used a can of rotel with green chili’s instead of fresh tomatoes and this turned out so yummy! I also sprinkled a little bit of the kraft expertly paired asedero cheese on it and this was amazing!!!!! 😍😍😍
My husband and I have been LOVING so many of the Skinnytaste recipes, but we just finished dinner and he said that this was his favorite, by far! I defrosted chicken cutlets by mistake, but they worked just fine. No scallions, so I used onions and fresh chives and added some left over sliced black olives. This chicken dish was absolutely, off-the-hook delicious!!
One of the easiest,quickest, most delicious work day dinners to make. Definitely in my rotation. Used the recipe to make my own sazon so it’s on hand all the time.. Served it like the photo- over some rice with a little avocado, plus some roasted asparagus on the side, Heavenly!
