baby arugula

medium ripe peaches
(pitted and sliced)

extra virgin olive oil

balsamic vinegar

Instructions
Place the arugula in a large bowl, top with peaches, yellow pepper and walnuts. In a small bowl whisk the olive oil with the balsamic, lemon juice, salt and pepper and drizzle over the salad.
