Instructions
Whisk lemon juice, olive oil, salt and pepper.
Lay the roast beef over a plate.
Add half of the vinaigrette to the roast beef.
Top with arugula, salt, pepper, remaining vinaigrette and shaved Asiago.
Serve immediately.
