Food Cart-Style Chicken Salad with White Sauce

We’re obsessed with street-cart Halal chicken, but since all the good chicken trucks are in the city which is over an hour commute from me, I had to figure out a way to make this to make it part of our dinner rotation!

When I worked full-time in New York City, I often hit up the halal chicken trucks for lunch, the smell of the sizzling chicken always lured me in! I usually swapped out the rice for salad and loaded on the white sauce and hot sauce. My husband is also obsessed, and has been asking me to recreate the chicken and white sauce for years.

After many attempts at trying to get the white sauce right, I finally created a version that we all loved, which also happens to be good for you and your gut! I partnered with Stonyfield, my favorite yogurt brand to create this sauce with their new Stonyfield Whole Milk Yogurt with Probiotics, which is so creamy and delicious and so perfect in this sauce. Now there are 1 billion more reasons to love Stonyfield Yogurt even more! And trust me, you might want to double the sauce recipe, it’s that good! Is it exactly like the ones you get from the street carts? No, but who cares, we all love it!

How To Make Halal Style Chicken Thighs

Variations

If you wish to serve this over rice instead, you certainly can. I would cook up some brown basmati rice in chicken broth to serve on the side. For the hot sauce drizzled on top, I used some prepared harissa and it was perfect.

What is Halal White Sauce Made Of?

To figure out the infamous white sauce recipe, my husband actually took a packet of white sauce the last time he ordered out, which listed most of the ingredients on the back. It was easy to figure out mayonnaise was a key ingredient, but the buttermilk powder and spices was pretty vague. A quick search on the internet turned up many recipes I tried, but most had too much mayonnaise and didn’t taste right. After several attempts, we all loved this final version made with plain whole milk yogurt (not Greek or low-fat) a touch of mayonnaise, a little lemon juice, vinegar, a pinch of sugar, salt and pepper. And since I’m always looking for ways to incorporate more probiotics in my day, this recipe is a winner!

Tips and Variations

  • Can you use 0% yogurt? Sure, but it won’t taste as good.
  • Can you use chicken breast for halal chicken? Street carts always use chicken thighs, which my family loves because they are moist and juicy. If you prefer breasts, you’ll want to cut down on the cook time so it doesn’t dry out.
  • How long will the white sauce last in the refrigerator? 4 to 5 days should be fine.
  • How can you make this for meal prep? Keep the salad and chicken separate so you can heat up the chicken separately if you want to eat it hot. Pack the dressing and hot sauce in small containers. These are the glass meal prep containers (affil link) I have and love.

Ingredients

For the chicken:

White Yogurt Sauce (makes 1 1/4 cups):

For the Salad:

  • 6 cups chopped iceberg or romaine lettuce
  • 2 medium tomatoes, quartered
  • 1/2 small red onion, sliced
  • prepared mild harissa, optional for drizzling

Instructions

  • Season the chicken with lemon juice, garlic, cumin, oil, salt and spices. Set aside at least 15 minutes, or as long as overnight.
  • Combine the ingredients for the white yogurt sauce and refrigerate.
  • When ready to cook, heat a large nonstick griddle or skillet over medium high heat. When hot, add the chicken and leave until the bottom is completely browned, about 5 minutes before flipping.
  • Cook on the other side for another 4 to 5 minutes, until browned.
  • Reduce the heat to low and let the chicken continue cooking, about 10 minutes, until just about cooked through in the thickest parts (no worries if it’s not completely cooked).
  • Set aside on a cutting board and chop the chicken into thin strips and add back to the pan to brown and finish cooking, 8 to 10 minutes over medium heat.
  • Assemble the salad by dividing the lettuce, tomato and red onion.
  • Top with chicken and drizzle with yogurt sauce (this is your dressing) and harissa, if desired.

    Made it, and it was delicious! We love rice here I made homemade basmati rice which was super easy and delicious as well. I did slice some cherry tomatoes, English cucumber and red onion to add that crunch I love when I order halal. It was a hit with my husband and kids so definitely will keep it in the rotation!

  18. Omg! Absolutely delicious! I made 1.5x the recipe and served over rice (on top of the salad) for 8 servings. For the rice, I did 300g of uncooked basmati, 1 small onion, 1 tbsp unsalted butter, 1 tsp turmeric, 1/2 tsp cumin, 1 tsp salt, and 2.75 cups of chicken broth. Sauté chopped onions in butter until fully translucent, then toss in spices. Mix in uncooked rice and chicken broth. Bring to a boil, cover, reduce heat to low and cook for 15 minutes. Remove from heat, keep covered, and let sit for an additional 10 minutes.

  19. This was awesome; my son enjoyed helping to make it and wants the recipe saved in our “love” category. We used chicken breast and I was very careful not to overcook. We only marinated the chicken for about half an hour and it was SO flavorful.

  21. Exceptional! The basic flavors of the cumin, turmeric, paprika, oregano, and salt with the lemon works well if someone can’t tolerate garlic. I prefer the garlic but have varied this a few times to accommodate others.

    The chicken stands alone. The sauce changes things up a bit.

    I’ve done variations on the sauce to accommodate as well.

  23. This was really delish. Never had harissa sauce before so it was a great addition to the meal. I like the white sauce flavor and it balanced the harissa sauce really well. The chicken had great flavor. I like to use all the seasonings in my cabinet so it was great to use the ginger. Will def be making this again.

  25. Ohhh my…this recipe is being saved and put on the regular rotation. Delicious flavours from the chicken marinade, and the sauce is so good. Very simple too! Only thing I changed was putting the Harissa spice directly into the chicken marinade, since I didn’t have a paste/sauce version.

  27. Delicious meal and plenty leftover for lunch. I love Stonyfield greek yogurt, but they were out at the store, so made with another greek yogurt – I noticed the sauce was pretty thick so added a little water. This is definitely going on our rotation of meals.

  28. I couldn’t find the Stonyfield yogurt, but Wegmans has a version of it, so I used that. This turned out so good, I’m using the remaining after today for my lunches for the rest of this week. It’s exactly like the chicken you can get at the NYC food carts, it brought back some wonderful, delicious memories. If you like a little spice, the optional harissa is perfect for it. I used a bunch with it and mixed everything up. Thank you for this excellent recipe!

  29. This is so good! One of my new favorite lunches for sure. I ended up broiling the thighs on high for 15 minutes, then slicing and browing in the skillet. The char was great flavor with the fresh veggies I had and the white sauce plus harissa was a game changer.

    Great weeknight meal! I will making this a lot this summer! Added some cucumber, Kalamata olives, and pepperoncini peppers.

    1. My only regret is not trying this recipe sooner! Simple to throw together for a weeknight and so delicious! My husband and I are already fighting over who gets the leftovers for lunch tomorrow. 😂

    2. I used fat free Greek Yogurt and light Mayo. It tasted great! The only difference is that the sauce was a thicker consistency than what’s in the recipe photo, but that didn’t make it any less enjoyable IMO.

  32. I have made this 2 weeks in a row because I’m obsessed. This whole thing is so good. My grocery store does t sell plain whole yogurt so I used plain Greek yogurt and it’s still so delicious. I top mine with a couple splashes of tobassco.

  34. Finally got around to making this and was not disappointed. Super flavorful way to cook chicken and can easily become a staple. The creamy yogurt sauce was not too tart, but just right. Ate it as a salad with toasted naan on the side and the crunchy lettuce and onions were a great texture with the chicken and tomatoes. I didn’t have harissa or the ingredients to make it but I am sure it would have been a wonderful addition.

  37. I love this recipe so much and use the white sauce with many other dishes like salmon. It is versatile to put the chicken in a pita or as a salad so it works with my family. I have already made this many times and have shared the recipe with all my friends and family (who cook).

  38. Ok, I was all set to make these with boneless skinless thighs, and then I opened my package of thighs from the freezer and realized they were skin on and bone in. I went forward with the marinade anyway, without skin, and grilled them on indirect medium high for about 50 minutes (to 195 F, which I prefer because you get some breakdown of collagen). These are fabulous, even without the yogurt! I was too lazy to get to the store to get the yogurt in time and I’m just eating them with nothing else and I can confirm that they are fantastic!

  39. This recipe has been a mainstay in our house for a couple years now ! When it gets hot, I start to crave this amazing sauce and the crisp salad. It’s great perfectly as is, but I usually add avocado and pickled peppadew peppers thinly sliced. It’s great with whatever’s on hand – I’ve made a fully veggie salad with greens, avo, cucumber, artichoke hearts and chickpeas with that DRESSING ! So yum. Thank you for this recipe !

The sauce, chicken flavor and veggies are the perfect combination. I wish I could give it more than 5 stars! I’ve already sent this recipe to quite a few friends and family members. This will definitely be a repetitive staple recipe at my house. 

  41. This turned out great! It was easy, tasty, and healthy. I did end up adding some minced fresh garlic to sauce, as it seemed to need a little something. I definitely recommend adding the harissa (or even sriracha, as I know harissa isn’t always easy to find) to the salad, too.

    This was a delicious dinner!  I marinated the chicken overnight and used my cast iron skillet to cook it, it was so full of flavor!  I will definitely make this again and again!!!!

  43. This is one of our favorites.   I usually grill the chicken and found that Stoneyfield whole milk Greek yogurt gave the sauce a nice zing.

  46. This chicken was extremely good! I ended up marinating the chicken for 24 hours. Chicken was so juicy and flavorful. I’ve never had this from a food cart in NYC so i have nothing to compare this to. But reading about it sounded so good, I’m glad I tried it. 
    The white sauce was so-so. I found it kinda boring. I don’t know what it needs, but definitely needs some zing.
    By the way, the recipe suggested you cook for 5 minutes each side, then turn to low for 10 minutes, then slice and cook again for another 10 minutes. That is way too long. Just do 5 minutes each side, slice and then back on for another 10 minutes, just like the video. Not sure if it’s a typo?

  48. Second time I have made this and it’s always so good. I did use non fat Greek yogurt because that is what I had on hand for the “white sauce” and it is soooo good! This will be a regular no doubt. Everyone make this as soon as you can!

    Delicious. I marinated the chicken overnight then grilled it. The sauce was easy to make and made a tasty dressing for the salad i made with chopped baby red butter lettuce,  sliced cherry tomatoes and thin sliced red onion. 

  50. Just put my chicken in to marinate in the morning before lunch. I combined the ingredients for the white sauce in a nitribullet and it came out “runny” and tasted a bit like yogurt. Is this how it’s supposed to be? Doesn’t taste bad though. Followed the recipe to a T 

  51. This is absolutely delicious! The spice blend for the chicken is on point. I did doctor up the yogurt sauce with graham marsala and added chopped cucumber to the salad but, other than that, kept it pretty much the same. I like that this is very easy to prep. I recommend grilling the chicken thighs or preparing them on a griddle pan as it really brings out the flavor. Adding this to my Green plan recipes for sure.

  52. Didn’t the recipe used to call for broiling instead of cooking on stovetop? I’ve made this many times without actually looking at the directions, just the recipe, and I noticed today it doesn’t say broil….

    I had this for lunch. I cannot wait until tomorrow so I can have it again. I only marinated my chicken for 15 minutes. I think it would make the chicken more tender if I marinate it overnight, but it was still delicious. I feel good after eating it and not bogged down. Good energy for my afternoon.   56. Make this recipe! Seriously — do it. It’s delicious, and the perfect, filling (but not too filling) lunch. Cooking the chicken twice as suggested in the recipe really gives it the charred taste you get from the street cart chicken, and the white sauce balances the heat from the hot sauce perfectly. For the yogurt haters out there (I’m one among you) the sauce does taste yogurt-y when eaten alone, but when mixed into the salad it loses the yogurt tang and just adds a creamy, cooling layer to the dish. SO GOOD!

  57. We LOVE skinny taste in the household! For this recipe I used chicken breast – because that is what I typically have on hand – sliced and then grilled. We also subbed out the yogurt dressing – we are not fans of other yogurt dressings and instead of trying another one – we used Crema Mexicana and added lemon juice, and tajin to the bottle and mixed it up!

    These tasted just like the gyros or shwarma you order from a food cart or restaurant!

  66. This recipe is delicious! Cooked the thighs in a cast iron until meat therm said 165 degrees and skipped step 6 so the chicken could rest and wouldn’t lose the juices.

  71. This was a big hit at my house. I doubled the recipe, and followed it with no substitutions. I grilled it on our Traeger and finished in the oven. Then the sauce was to die for. We have never experienced Food Truck chicken living in the PNW, but this was so good!

The yogurt sauce didn’t go over as well with my family (2 picky teenage boys, an 11 yr old girlie, and a picky husband), I even added some garlic powder and onion powder to try to make it more palatable for them, but I enjoyed it! The harissa though, which we had never tried before went over really well!!

    Absolutely delicious! I have a hard time finding chicken dishes that my husband won’t roll his eyes at (“Chicken again?? We’re going to grow feathers!!”). Not only does he love having this for dinner, but he always wants to bring another helping of it to work for lunch the next day!

      1. Have made this multiple times. I use chicken breast and no fat yogurt. Reduces points a lot and since we have never had it with thighs and full fat yogurt we love it this way. Even our grandchildren love this chicken. Like making it for meal prep lunches.

  81. This is very similar to a Shawarma salad in Toronto, which is served with greens, coleslaw, onions, pickled turnips, pickle spears, tahini and garlic sauce, and hot pepper sauce. As a substitute, was very delicious. Hubby liked a lot, and it was fast to make.

  84. Such a fantastic recipe! The chicken was super flavorful and the yogurt sauce was to die for. And really quick and easy to make. Definitely key to cook on a higher temp to make it brown nicely and keep it from getting to soft. Loved it and will make again and again….

  85. Yum. I love the halal food carts in NYC. They are always on the list when we are there. Now, this didn’t take me all the way back, BUT I really enjoyed it and will definitely make it again. I made Harissa from scratch (Bon Appetit recipe) and did a quick pickle on the red onion. I’ve made this twice now – once as a vehicle for tacos and once as a salad. It was great both ways.

I didn’t have any turmeric so I left it out and I only had 2% greek yogurt but I think it worked fine.  We liked it so much that I made it 2 days in a row!  This recipe, like many of your recipes will become part of the regular rotation…Thank you!!!

  87. I’ve never been able to successfully make chicken thighs on the stove. Cooked this in a cast iron pan, I think it went faster. These were amazing and I think I’m sold on thighs instead of breasts. the fresh lemon sets these off. I added garlic and onion powders to the white sauce and it’s perfect for me. Easy and highly recommended!

  89. Wow, I’ve loved a lot of recipes on your site, but this may be one of the best! The chicken was so juicy and the combo of the onions and tomatoes with the white sauce–perfect! We ate it over buttered rice instead of lettuce. Two questions–1) my husband is not a fan of yogurt. Is there a way to end up with more of the chicken sauce in the pan? Is it just a matter of doubling the olive oil and spices, do you think? 2) That white sauce is sooo good, I’m trying to think of what else to eat it on/over. Any ideas? (It worked pretty well on an english muffin for breakfast.)

    1. You could make a sauce with the chicken bits left on the pan after you’re done. Olive oil, wine or more lemon juice; maybe some onions and garlic

    I’m an avid follower @skinnytaste and once again Gina proves why she is my hero! This recipe is DELICIOUS!! We had this for dinner last night and it was so gratifying to make another great dish for my family thanks to Gina. I had 2 servings left over and packed them for lunch to share with a coworker. She agrees that it was phenomenal. We cleaned out plates clean! I also made saffron rice from Mahatma to accompany it and together it felt like the NYC food cart experience (which I make sure to visit the original corner EACH time I’m in NYC).     I made this (with rice for my kids) in my Dutch oven on the stovetop and they cleaned their plates (6 and 8 yr olds.) I will say, please please please use the recommended whole milk yogurt. I did not, and we could not use the sauce (I used non-fat, it was what I had in the fridge). I substituted the lack of sauce with lite sour cream and some garlic salt, dill and chives, a little bit of cider vinegar and Frank’s.

  103. Made the chicken exactly as is and then cooked it on the smoker. Ended up tripling the recipe and attempting to freeze the chicken because we loved it so much. I did not even bother making the sauce because the chicken was so delicious. Highly recommend.

    Trying this in the air fryer this evening. Pan-frying in our house tends to set off the smoke detectors and our vents for the stove don’t work well. I don’t have time to marinate overnight, but I hope it will be good. I do have a food saver so I am hoping that will help with flavor.

  114. I have made this twice so far. Both times, I served it with rice pilaf (my kids wouldn’t eat it with salad) and some naan or pita bread. I haven’t really bothered with the white sauce because I didn’t have the ingredients on hand the first time I made it and didn’t miss it (the friend who shared the recipe with me said that her family didn’t care for the white sauce anyway). I served it with store bought harissa. The flavor is very good. For me this is a solid 4.5 stars. It’s really easy to prepare and comes together easily. Only thing missing to me would be a slight kick to the chicken. Next time, I may add a touch of cayenne to the spice marinade.

    Delicious! We used chicken breast and it was still moist and flavourful. I added garlic to the yogurt sauce. A new regular recipe! Even kids liked it. We served with choice of rice or salad.

  120. Is sweet paprika the same as just regular paprika?  Or is it something else?  Could you use regular paprika? And has anyone tried the sauce with Greek yogurt?  It’s all I have on hand. Thanks!

    1. I used regular paprika and NF greek yogurt because it’s what I had. Also light mayo and chick breast. I think it’s like 1 pt or zero and it’s still yum 🙂

  122. I’ve been trying to find a recipe to match the lemon chicken sold at the carts at Yale School of Medicine. What they make is truly delicious. This is close but not quite. This is tasty but I felt it is missing something. I’m not sure what it is. I added coriander. I like it a bit spicier. Maybe curry powder or garam masala. I’ll carry on experimenting.

    This was absolutely delicious! I added garlic and garlic powder and more lemon to the white sauce. I did what another reviewer did and ate it in a pocket pita and it was amazing. My portion of the salad fit into two halves of a pita, so one full pita. So good. We will definitely be making this again.

I modified my white sauce a little because I didn’t love the initial flavor; I just added a little extra lemon juice, some oregano, and garlic powder to taste.   130. THIS WAS SO GOOD!! I made the mistake of leaving the skin on the chicken thighs, but the end results was AMAZING. The combination of the spices, chicken, sauce and prepared harissa was a massive win in my household. Will be adding to the recipe rotation. Way more white sauce than needed for the recipe (which is great if you want leftovers, but if you are just looking to have enough for this recipe, or to use one single-serve yogurt cup rather than a full measured cup of yogurt–you’ll be fine halving the recipe for the white sauce).

    I loved  loved  this receipt. My granddaughter  joined me for lunch I must confess I added pineapple chunks to the salad thr chicken was perfect and so was the sauce . My only complaint and that of my guest was this was enough for only two not enough chicken for two we are both very slight $110 lbs and not  big eaters . My niece had made it earlier in the week and she had the same complaint .. iceberg has no value so I used red leaf lettuce. I will make it again with more chicken😛

  164. Made this over the weekend thinking it would be a more complicated recipe, but it was SO easy and delicious, I’m sure we will be having this on a weeknight very soon! We marinated the chicken for about 8-10 hours and it was perfect. I used chicken tenderloins instead of thighs, and they only took about 5 minutes per side over medium-high heat in my nonstick skillet. I know chicken thighs are more authentic, but the tenders still came out very juicy. We used 2% Fage Greek Yogurt for the sauce because that’s what we had on hand, and it was addictively good. Served it with rice/quinoa blend, spinach, and Joseph’s pita, and my boyfriend basically licked his plate. Consider this added to the rotation. Thanks for yet another winner, Gina! I’ve been cooking your recipes (and telling friends about your site/books) since 2012.

    This was freaking delicious! I was only able to find 2% plain yogurt and I still found the sauce to be packed with flavor. My 1 year old son was dunking his chicken pieces in the white sauce with reckless abandon. He probably would’ve drank it if I allowed it.

I got the Wegmans organic pre&probiotic whole milk plain yogurt and the dressing is too tangy. Any help with how to correct? Or is it supposed to have strong yogurt taste? Does it need to sit in the fridge for a while to marinate? Thank you!!

    1. Oddly this was a bit too sweet for me for the white sauce. I used fage 2% yogurt and light mayo. I have never had an original version of this so no idea if was suppose to be sweetish. Next time will halve the sugar, add garlic and maybe touch more lemon juice

  186. I made this for dinner tonight and it was delicious. The seasoning on the chicken was spot on and I only had time to marinate for about 15 minutes. I used chicken breasts instead of thighs, cut into 1 inch peices and cooked in a skillet until juices were absorbed & the chicken started to char. Also added an extra tablespoon of mayo + 1 tablespoon of white vinegar and a few shakes of garlic & onion powder to the sauce. Quick & easy recipe to be added to our weeknight rotation! Yum!

      Actually made it with Labneh, which is a kind of thick middle eastern yogurt, as I happened to have that and it seemed appropriate for this middle eastern recipe. But it was a bit too thick (more like greek yogurt) so harder to spread.

  194. So much focus on the white sauce, not enough on the chicken. What is halal chicken? Food nationality?

    1. The chicken is amazing! The food trucks are usually Palestinian but Halal is not a cuisine, it’s the way the chicken is killed much like Kosher.

    1. I used my airfryer tonight. I marinated the chicken for an hour. Sprayed the airfryer with Pam. Cooked at 350 for 8 – 10 minutes. However I was using chicken breast tenderloins. So if you were using the chicken thighs it would be longer. I would check your air fryer manual for chicken cooking time. I must say, it turned out amazing! I absolutely love this salad. It may be a weekly thing for me.

  196. Can these flavors meld in the slow cooker (thighs always seem to come out well )?  Would then spoon it over rice or greens?

    1. Should be A drop over 1/4c per serving of the sauce she wrote it makes 1 and 1/4 cups total and recipe says four servings.

  198. Do you think sour cream can be an alternative for the yogurt? Or what would you suggest as an alternative to keep this lower in carbs? 

    1. If you look up her harissa chicken recipe, she uses a jar of roasted red peppers and maybe some other things to make her own harissa.

      Do you have access to a Trader Joes? They have an excellent harissa. Stonewall Kitchen used to make one, as well.
