Calories: 203.7 • Fat: 1.4 g • Carb: 33.3 g • Fiber: 10.0 g • Protein: 16.9 g
Ingredients:
- 1 onion, chopped
- 1 16-oz can black beans
- 1 16-oz can kidney beans
- 1 8-oz can tomato sauce
- 10 oz package frozen corn kernels
- 2 14.5-oz cans diced tomatoes w/chilies
- 1 packet taco seasoning
- 1 tbsp cumin
- 1 tbsp chili powder
- 24 oz (3-4) boneless skinless chicken breasts
- chili peppers, chopped (optional)
- 1/4 cup chopped fresh cilantro


















My gawd, this looks so good! I can do this without meat (veggie) - there's plenty of protein in the beans!

I also wondered if the 1Tbsp of chile powder and Tbsp of cumin were correct? I thought that sounded like a bit much, so cut those to just a tsp each. Thanks!
ReplyDeleteI like spice so they were correct but you can certainly cut that back to your taste. It makes a whole lot so it didn't taste over-powering to me. I didn't rinse my beans, I added the whole can. Would love to hear how it comes out!

ReplyDeleteI made this yesterday and it didn't turn out right. When preparing it, I layed the chicken on top like you said and when I came home... after it had cooked for 10 hours on low, the chicken was cooked on the bottom and still raw on the top. I ended up having to cook on my stovetop on high heat for close to an hour to get the chicken close to being shreddable. Even still when it was finished the chicken was tough. I'm not sure what went wrong.

@ilonka - A crock pot is a slow cooker that you put all your ingredients in, you plug it in and your food slowly, safely cooks all day while you are out.

ReplyDeleteNot sure, I would let it cook 6 hours on high to make sure everything cooks. You really shouldn't cut it shorter than that.
ReplyDeleteSkipped the taco seasoning and went with real chili peppers (to include 1 habarero, 2 jalapenos and 4 other chili peppers)... less sodium. SOOOOO good!!!!

@Nathan, I figure out the points for each ingredient that goes in, then add that together. Then I figure it how many servings it makes and divide it by that number.

That's ok. I always put it in thawed. But I heard you can use frozen chicken in the crock pot, although I have never tried that.

It really depends on how much chicken you use. Dark meat is slightly higher.

I love this recipe, I would definetly make it again. It was a bit spicier than I like but I think I'll use half of the taco seasoning next time. I also used 1 tsp. each of the cumin and the chili powder.

You can substitute any canned bean for black beans. Kidney beans are fine and so is drained canned corn. Enjoy!

I work from home and it was hard to get up this morning and not have chili for breakfast. It looks amazing and it smells even better. ReplyDeleteAnother great recipe. I didn't have any kidney beans, but I did have dried pinto beans which I cooked up nice and slow. I served it to my parents and husband on a hot North Carolina day along with the cilantro habanero (jalapeno from our garden!)lime rice.
ReplyDeleteIf anyone has trouble with the chicken being tough - I have a similar recipe and it has you put in the chicken breasts/tenders frozen so they cook slower and are very tender when you shred them up at the end. Just a hint ...my grand daughters love this recipe....

ReplyDeleteI'm sorry if this question is dumb but I just dont get how this can be 10 servings? If each serving is 1 1.4 cups I only got 4-5 servings of this. Did I do something wrong?
Also the recipe asks for 24oz chicken well I weighed 3 chicken breasts and it came to 14 oz ( i realize they come in different sizes) but even with adding an additional breast to get 4 breats I barely had room in the crockpot and when I shredded the meat at the end, I couldnt even add all of the shredded meat and as it was way to much for the other ingrediants and I didnt even use 24oz as stated on the recipe?
Am I totally doing something wrong or has anyone else encountered these issues on this recipe?

Sabrina you might try a bigger crock pot? I made this last night and I was able to get almost exactly 24 oz of chicken (4 breasts). I had plenty of room even after shredding. Invited my neighbors over to help me eat it (3 guys in early 20's). Our portions were much bigger than the 10 oz Gina suggests. Two of the guys had two helpings, I had a smaller 2nd helping, and have enough for two lunches this week... It was a hit!

I am sure I will be making this many, many more times! It also freezes very well. I thawed and reheated it in the crockpot and it was just as delicious as the first time. ReplyDeleteCooked this last night and it was delicious. My 4 yo liked it as well. Super easy recipe. I added 2 chopped shredded carrots and a chopped red bell pepper for added veggies.

ReplyDeleteI just started WW and made this for dinner tonight and LOVED it!!! So did my bf who doesnt much care for diets. I served it not on rice, but ate a couple spoonfuls in a whole wheat tortilla! And had the rest in a bowl with a scoop of fat free sour cream! Cant believe how good it is! I also made banana nut pancakes today, but was good and didnt eat any! Just froze them for the week. Cant wait to try them! Love this site!!

Made this last night for my husband, sister, brother in law and my mom. Everyone loved it! Even my husband and brother in law who are HUGE eaters and not much for dieters. This recipe made so much it fed us all for dinner and my husband took it to work today for lunch! Served with the rice, it's very filling and I felt satisfied all night. One called and said "Mom, whatever you are cooking smells so good!" and other texted "Whatever u'r cookin', makes whole house smell good! Can't wait for dinner" Hubby luved it, too. This is THE BEST chicken chili dish. Definitely a keeper recipie!

ReplyDeleteThis is probably my new favorite dish (tied with Spinach Tortellini en Brodo)! If you have extra points like I did, serving it with a few tortilla chips, salad (Romaine mix), and a dollop of fat-free sour cream makes the best taco salad!

Hubby & I do chili cookoffs every year so we didn't know what to expect but WOW! We both thought this was absolutely delicious. LOVE IT! It will be my cookoff recipe next year - hope you don't mind.
ReplyDeleteI added a little dry ranch mix to it 'cause I could :) Love how easy the chicken shredded. It literaly took under 10 minutes to throw everything in the crockpot! I am trying out the Chicken and White Bean Enchiladas tonight and cannot wait. Your website has me so excited to be doing weight watchers again with a new outlook. Thank you so much.

ReplyDeleteI also don't think I can get 10 servings out of this. It may be only like 5 servings, 6 at most by stretching and doing a scant 1 1/4 cups. any suggestions?
ReplyDeleteI just got done eating this for dinner...wow! So yummy and easy! I used 6 skinless chicken thighs in place of the chicken breasts. I find when I use boneless/skinless chicken breasts in the crock pot they turn out tough.

This is such a great recipe! I'm about to use it for the second time. Just a quick question...does the dish itself taste different if you cook on low or high? I don't have time for the 10 hour cook. I know that may be a silly question, but I was never sure if the flavors were as intense if using a high setting.

ReplyDeleteIt was AMAZING!!! First time using the crock pot. My husband loved it. You were right though, it makes ALOT. Had to drop some off at my parents and it was still too much leftovers for the two of us. We used canned corn instead of frozen. I would recommend putting in a little of jalapeno (just a little) for an extra kick. Very easy.

I don't think it would make a difference cooking on high, but haven't tried yet.
Yes, this makes a lot, but it freezes great so you can freeze the leftovers.
