If you're a cheeseburger lover, and the thought of ground beef, tomatoes, pickles and cheese tickles your fancy, then this truly American, comforting casserole is for you!
I was recently given the Bobby Deen: From Mama's Table to Mine cookbook as a gift. Bobby, in case you're not familiar is Paula Deen's son, who makes his Mama's Southern dishes a bit healthier and on the lighter side.
Whenever I get a cookbook, I usually attempt a dish that's out of my norm. A cheeseburger casserole... now that's not a dish I grew up eating!
What the heck is a cheeseburger casserole? Think cheeseburger essential ingredients such as lean ground hamburger meat sauteed with diced tomatoes, onions, a touch of mustard, and some not-so common burger ingredients such as pasta, all topped with melted cheddar and finished off with diced pickles.
My toddler gobbled this up, and I thought it was pretty darn good – and I would certainly make this again. I'm sure you can have fun with this and add your favorite cheeseburger toppings. I'm thinking sauteed mushrooms would be really good here too and maybe a few bacon crumbles for a bacon cheeseburger casserole (why not!).
The one thing I changed was the serving size, I thought 9 servings was a little more realistic than 12 for adults, and at about 260 calories (7 points plus if you're on Weight Watchers) it's still well under 300 calories.

ingredients
- 2 cups (6 oz) uncooked rotini pasta (use brown rice pasta for GF)
- 2 tsp oil
- 1 1/2 cups onions, finely chopped
- 1 garlic clove, finely chopped
- 1 lb lean ground beef (95% lean)
- 3/4 tsp salt
- 1/2 tsp black pepper
- 2 tbsp tomato paste
- 28 oz diced tomatoes
- 2 tbsp Dijon Mustard
- 2 cups reduced fat grated cheddar cheese
- 1/4 cup chopped dill pickles
Directions:
Preheat the oven to 350 degrees. Spray a 9 x 13 inch baking dish with cooking spray. In a large pot of boiling salted water, cook the pasta according to the package directions for al dente and drain well.
In a large skillet, heat the oil over medium-low heat. Add the onions and cook until soft, about 5 minutes. Stir in the garlic and cook for 30 seconds. Stir in the beef and cook until browned; season with salt and pepper. Stir in the tomato paste, then add the tomatoes and mustard. Let the mixture bubble gently until it is slightly thickened, about 2 minutes.
Toss the meat mixture with the pasta and spread it into the prepared dish. Top with the cheddar and bake until the cheese is melted, about 15 minutes. Sprinkle the chopped pickles over the top and serve. Makes about 9 cups.

ReplyDeleteI plugged everything into my weight watchers recipe builder using whole wheat noodles, but kept the ground beef, and it came up as 7 points plus for 8 servings or 6 points plus for 9 servings. So you do save a point just with the whole wheat noodles :)

DeleteI always use ground turkey in place of beef since I'm allergic to beef. Turkey is always a good substitute and usually do not have to make any changes.

I love Bobby's new show and could not wait to get his book, when I did I was disappointed that he did not list was the serving size was on most of the recipes. This casserole was delicious, I also added the bacon. Bacon makes everything better!

Made this tonight - it was really good, but didn't taste like a cheeseburger...more like goulash - but will definitely make again. My cheese didn't melt, just made a crust. Next time, I might make it as a goulash without the cheese.

ReplyDeleteI have a cookbook from the boys, it's called "Y'all Come Eat" and it's by both Bobby and Jamie. My brother got it for my for Christmas a few years ago and I love it a lot! I'll have to get this one too then :D My family loves Cheeseburger Casserole but I have to admit it's the super unhealthy version with tater tots covering the top lol. Dinner tonight - delish! I used yellow mustard and added a cup or so of corn. Served my portion over butter lettuce, which made it even more like a burger. Oh yea, I put mushrooms in at the end of browning the hamburger. Yumba yumba!

ReplyDeleteKraft makes a good Fat Free Cheddar, but if it's reduced you're looking for, I'm sure any store will have their own brand and that's usually fine.

ReplyDeleteI just made this tonight for my family of 4. They loved it! I changed it up a bit and thought you might like to hear what I did different. First, I used extra lean ground turkey. I browned it with the onions a garlic. I only had a 14 oz can of diced tomatoes, so I used them along with 1/2 bottle of Sweet Baby Ray's bbq sauce, and omitted the tomato paste. Once all cooked through, I added 1 pkg of Ranch dressing mix and 1 package of powdered cheese from a Mac-n-Cheeze box I had in the cupboard. Mixed it all together with 3 cups of whole wheat pasta and put it in the baking dish. While the noodles and meat were cooking, I cooked 8 slices of bacon in the oven, then pressed all of the fat off and tore them into pieces. I grated 1/2 cup of lite monterey jack cheese and lite cheddar cheese, sprinkled it on top of the noodle mix, then topped with the bacon. After cooking, I sprinkled diced green onions over everything. It was tasty, and my kids and husband said it tasted like a bbq bacon cheeseburger. Mission accomplished. Thank you for the great idea.

I used whole wheat rotini and since low fat cheese never melts great IMO, I used just 1 cup low fat mixed with 1/2 cup of the regular. Don't skip the pickles--they make this dish! Thanks, Gina.
ReplyDeleteMade it! I had turkey meat in the house so I just used that, and also FAT FREE cheddar was on sale, and I had whole wheat pasta. I deducted 1 point from the serving for that, but it was still SO good!!
ReplyDeleteI made a gluten free version of this last night, but I used 100% corn noodles instead of rice (in my experience, the rice noodles can get mushy, especially when re-heating items). I was pleasantly surprised to discover that the corn noodles held up really well! My hubby also loved this, and had two servings.

ReplyDeleteI made this last night for dinner! It was so good and tasted JUST like a cheeseburger! I was surprised it tasted so similar! The only change I made was that I used no yolk egg noodles and it was great! My little one is only 5 1/2 months so it's just my husband and I and it made enough for my lunches this week! Will be making this again- and maybe changning it up a bit by adding bacon or trying it with ground turkey.

ReplyDeleteMade this for dinner this week. It was awesome - super comforting and yummy. I increased the garlic to 3 gloves (we are garlic lovers) and added one teaspoon of Worcestershire sauce. I try to do a lot of cooking on Sunday for the whole week, so I made the meat mixture Sunday afternoon and then refrigerated it. On Monday, I made the noodles, mixed everything together, topped it with cheese and then baked it.

This really intrigued me! I added some veg to bulk it out (courgettes/mushrooms/peppers)some paprika, a stock cube and some Worcestershire sauce, so basically changed everything! Thank you for the base idea. Also used a mix of grated mozzarella and half fat cheddar.

ReplyDeleteI made this the other night, doubling everything for a family of 6 expecting to have a lot left over for another meal during the week. Not so. Everybody loved it and couldn't believe it was a "skinny recipe". The pickles add such a zip to the flavor and give another element of texture that even my husband commented on. There was just enough for two people to share last night and they still could not believe how tasty this was. Thanks for a simple, different, and yummy meal!
ReplyDeleteGreat recipe, Gina, my family adored this one! It tasted just like a cheeseburger, and was hearty. I prepared the casserole on one evening, and stored it covered in the refrigerator overnight. The next evening, I added the cheese and pickles and popped it in the oven. It took about 35 minutes to get it warm all the way through. But it stood up just fine to sitting in the fridge, and tasted great! Next time, I'll add bacon, mushrooms and maybe some barbeque sauce to this.

ReplyDelete5 stars for sure! I made this tonight for my family of 5 (kiddos ages 6,4, and 2. They scarfed it down and my picky son asked for seconds! To make it taste more like a cheeseburger, I used Worcestershire sauce, 4-5 tbs. ketchup, 3-4 tbs. of yellow mustard and a little mayo instead of the tomato paste. I also omitted the tomatoes because my hubby doesn't like them. I also added extra crumbled extra crispy bacon and served it with ketchup on the side. Would HIGHLY recommend this dish!

When I searched under your "Gluten Free" option on the right hand side of your site your Cheeseburger Pasta came up as well as your Risotto Asparagus recipe. I'm guessing these are not really Gluten Free but perhaps you're assuming that one would know how to make it Gluten Free using different pasta etc. Is that the case? Since I'm only just learning to cook gluten free (not that hard actually but still it's a process) I'm really trying to find recipes that I can just make following the directions and not have to sub. thanks!

ReplyDeleteMy husband and I really liked this! The only change I would suggest is cutting back the tomato paste; it was a very predominant flavor. I just read another person'a comment that they added Worcestshire sauce, which I think is a great suggestion. Otherwise - great recipe, and definitely one we will make again! Thanks!

I've made it as written a few times before, but we don't eat a lot of beef at our house, so tonight I made it with whole wheat pasta and 99% lean ground turkey seasoned with our favorite KC steak seasoning (Jack Stacks). My hubby couldn't tell the difference taste-wise. I don't do WW, but when I plugged it in to myfitnesspal it gave me 271 calories for 8 servings. Fabulous as always Gina!

ReplyDeleteThis was delicious! I added some crushed red pepper and a smoky seasoning I got at Trader Joe's for some heat and that charcoal grill flavor! The whole thing was gone in 15 minutes flat!
