Grilled Lemon Dijon Chicken Skewers

Here's an easy chicken dinner idea – cut up some boneless chicken breast, whip up this easy lemon Dijon marinade and leave this in the fridge overnight (or you can freeze them to use another day) then put them on a skewer and grill them for a quick weeknight dinner.

These easy chicken skewers are so juicy and flavorful, perfect with a big chopped salad, a Spriralized Cucumber Greek Salad or make a side of orzo or grilled veggies.

  • Dijon mustard
  • Fresh Garlic
  • Olive Oil
  • Fresh Oregano

Serving Size: 1 skewer

Ingredients

  • 3 garlic cloves, crushed
  • 1 teaspoon olive oil
  • 1 1/2 tbsp Dijon mustard
  • 2 tbsp fresh lemon juice
  • 1 1/2 tbsp fresh oregano, or 2 tsp dry
  • 1 tsp kosher salt and fresh cracked pepper, to taste
  • 16 oz skinless boneless chicken breasts, cut into 1-inch cubes
  • 1/2 red onion, quartered and layers separated
  • 4 lemon wedges for serving
  • 4 metal skewers

Instructions

  • Combine garlic, oil, Dijon mustard, lemon juice, oregano, salt and pepper in a medium bowl.
  • Place chicken in a gallon sized bag and pour the marinade over them, refrigerate overnight.
  • Thread the chicken and onion layers onto the skewers.
  • Heat an outdoor grill or indoor grill pan over medium-high heat.
  • Spray the grates lightly with oil and grill about 5 minutes on each side, or until the center is no longer pink.
  • Serve with fresh lemon wedges.

  1. This is my new favourite lemony chicken marinade! I used McCormick’s Italian Seasoning grinder instead of just using oregano and grilled whole chicken breasts, instead of making the kebabs, since I used a grill pan. I am so excited about all the potential for leftovers with this recipe: creamy chicken, kale, and gnocchi soup was on the docket today. I can’t wait to make this recipe again! <3

    We are delicious as skewers but I also made the same recipe with chicken thighs and equally delish! Yum!

  3. Is there a limit on how long they can marinate for due to lemon in the marinade? If I prep them this morning and leave in the fridge until tomorrow night, is that ok? Thanks!

  6. Just put these in the refrigerator to marinate. Any suggestions on side items? I was thinking of an arugula salad. What dressing works best w/ arugula?

  7. Used the marinade on chicken breasts, without cutting them into cubes, and it was a big hit. I think this would be great on a Caesar salad. We'll definitely have this one again!
