Skinnytaste Dinner Plan (Week 22)
Hope everyone’s having a great weekend! I’m away in Pennsylvania visiting my in-laws, so I had to make my meal plan this week without using my Skinnytaste Meal Planner (I will add that tonight when I get home).
This is week 22 of sharing my weekly dinner plans. Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. Skinnytaste Dinner Plan (Week 22)
- Monday: Baby Pasta Shells with Asparagus and Marinara (Meatless Monday!)
- Tuesday: Grilled Garlic Dijon Herb Salmon with House Salad from The Skinnytaste Cookbook
- Wednesday: Thai Basil Chicken with Basmati Rice
- Thursday: Grilled Flank Steak with Chimichurri with House Salad
- Friday: French Bread Pizza Supreme from The Skinnytaste Cookbook
- Saturday: Date Night
- Sunday: Best Eggplant Rollatini
SHOPPING LIST:
PASTA WITH ASPARAGUS & MARINARA:
- Baby pasta shells (gluten free use brown rice pasta)
- 1 bunch thins asparagus
- Homemade marinara**
- Pecorino Romano
- Salt
- Fresh pepper
GRILLED GARLIC DIJON HERB SALMON:
- Garlic
- Dried Herbs de Provence
- Red wine vinegar
- Olive oil
- Dijon mustard
- Olive oil spray
- 4 (6 oz) wild salmon fillets 1″ thick
- Salt and fresh ground pepper
- Lemon wedges
HOUSE SALAD with Love:
- Red onion
- Extra virgin olive oil
- Apple cider vinegar
- Kosher salt
- Fresh ground black pepper
- Tomato
- Garlic powder
- Dried oregano
- Cucumber
- Haas avocado
- Chopped Romaine lettuce
THAI BASIL CHICKEN:
- 1 1/4 pound boneless, skinless chicken breasts
- Oyster sauce
- Light soy sauce
- Garlic
- Serrano chili
- Vegetable or canola oil
- Fresh Thai or regular basil
- Jasmine or basmati rice
GRILLED FLANK STEAK WITH CHIMICHURRI:
- 1 1/2 pounds flank steak
- Garlic powder
- Ground cumin
- Dried oregano
- Fresh ground pepper
- Kosher salt
For the CHIMICHURRI:
- Fresh parsley
- Cilantro
- Red onion
- Garlic
- Extra virgin olive oil
- Apple cider vinegar
- Kosher salt
- Fresh black pepper
- Crushed red pepper flakes
French Bread Pizza Supreme:
- 10 oz whole wheat French bread baguette*
- 1 cup quickest Marinara
- 1 thin slice red onion
- 8 thin slices green bell pepper
- 2 mushrooms, sliced thin
- 8 turkey pepperoni slices, cut in half
- 1 cup (4 oz) part skim shredded mozzarella cheese (recommend: Polly-o)
- 1/4 cup fresh shredded Parmesan cheese
SKINNY EGGPLANT ROLLATINI:
- Italian eggplant ( 2 medium)
- Kosher salt and fresh black pepper
- Homemade marinara sauce**
- Large egg
- Part skim ricotta cheese
- Grated Pecorino Romano
- Frozen spinach
- Garlic
- Shredded part skim mozzarella
**For the marinara sauce
- Olive oil
- Garlic
- 28oz can crushed tomatoes (Tuttorosso)
- Bay leaf
- Oregano
- Fresh basil
- Salt and fresh pepper

Great Website! One feature I would love to see in the future is a way to mark/file favorites. Most of what I make comes from you (thank you, you make me seem like a good cook), and there are a few items I just loved. It would be nice to be able to just click on a “fave” button and have them all right there. Congratulations on all your success.

Looks like all those glitches that everyone mentioned are fixed (just hover over the photo for pin, printer friendly is down at the bottom, and you just have to go into recipes and you can pick the protein there) .
I can’t wait to follow this plan this week. 🙂
I can not find the printer friendly icon.. that was under the recipes yesterday but that is no longer there now.. That made it so much nicer to follow the recipe.

I LOVE the new website but where is “printer friendly”.? I have a book of your recipes and miss this feature.. I pre-ordered your new cookbook today–can’t wait!!!!

I have always been able to “Pin” the Meal Plans. I was trying to “pin” Week 22 and there is no link anymore:(
If you hover over the image there is a pin button, also there are social sharing buttons below the post.
While the new website looks great I am a little disappointed that I am no longer able to search for main dishes by protein type (i.e. chicken, beef, seafood, etc). It was nice to be able to look in the freezer and see what I have to work with and then go straight to my meat of choice on your site. Also, the search function doesn’t seem to be working correctly, but that may just be a bug that needs to be worked out.

You still can – under recipe index, then recipes by ingredient.
You can! Go to Recipe Index and at the very bottom there are the proteins. I think you can search by more options now or at least it seems more user friendly.
If you go to the recipe index and search recipe by ingredient, you can search by protein.
I LOVE the new website design! It is gorgeous!! And, of course, I LOVE all of the recipes, too!!! 9 out of 10 meals that I make come from your website. It is such a wonderful, consistent source of inspiration to feed even the pickiest of eaters. I’ve been such a fan for years! Keep it up!
