Cream of Broccoli Soup



Cream of broccoli is a favorite of mine, but when you order this out, it's loaded with fat.  This slimmed down version is quick and easy to prepare. When I make this, everyone asks for more.



Cream of Broccoli Soup
Gina's Weight Watcher Recipes
Servings: 4 • Serving Size: 1 1/2 cups • Old Points: 4 pts • Points+: 5 pts
Calories: 184.9 • Fat: 7.9 g • Protein: 11.3 g • Carb: 20.6 g • Fiber: 7.4 g 


Ingredients:
  • 3 15 oz cans fat free chicken broth (vegetable broth for vegetarians)
  • 1/2 cup milk (2 percent)
  • 2 tbsp low fat sour cream
  • 1/2 cup sharp cheddar cheese, shredded
  • 1 onion chopped
  • 1 carrot, peeled and chopped
  • 1 celery chopped
  • 1 clove garlic chopped
  • 5 cups broccoli florets (head of 2 large bunches)
  • ground black pepper to taste

Directions:

In a medium sized stock pot, bring chicken broth, onions, carrots, garlic, and celery to a boil. Cover and simmer 5 minutes. Add broccoli, milk and pepper and cook, covered, 10 more minutes. Add sour cream and puree soup. Adjust pepper to taste and heat through over medium heat. Add cheddar cheese and serve.

  4. Do you think I could sub the 2% milk for low fat buttermilk and get the same result? I've got buttermilk in the fridge that needs to be consumed!

  10. Have you ever tried freezing this soup? I'm trying to make healthy meals ahead of time, but I'm not sure how a creamy soup would freeze...

  12. I was wondering something. I put all of the ingredients into the recipe builder on the WW website and it says that it is only 3 pts per serving. I was wondering what you know that it doesn't. Thanks!!

  19. Hi, I made this soup today and forgot the cheese but had put a couple of parmesan cheese rinds in to the soup. It was very tasty and good but I am questioning the WW points. I found the whole recipe was only 7 WW pts and I used lo salt chicken broth in the box. I found that 1 & 1/2 cups was only 2 ww pt not 5. How does this differ from the recipe? Curious.

    Found your website a week ago and I have it in a tab always open in my browser.

    So, this is the third soup of yours I tried. First the cream of zucchini, then the carrot and ginger and finally the broccoli today.

    I twicked them a little bit in the way that I used 3%fat natural yoghurt instead of sour cream and in today's soup I didn't put any milk, nor cheese and all of them still came out amazing.

    Keep the creams/soups of vegetables coming because your recipes are just great!!!!
