
This hearty soup with lots of vegetables and meat is a simple one pot meal. Great comfort food for a cold winter evening.
I spent the weekend with Katia of Food For Every Season and she put together this amazing soup with a few simple ingredients she had on hand which filled the kitchen with the aroma of comfort food.
Cabbage Soup with Chicken and Pork

Servings: 8 • Time: 45 minutes • Old Points: 5 pts • Points+: 6 pts
Calories: 255.2 • Fat: 7.4 g • Protein: 31.7 g • Carb: 12.5 g • Fiber: 3.8 g
- 3 medium carrots, chopped
- 2 leeks, chopped (whites only)
- 1 head cabbage, chopped
- 1 yellow pepper, chopped
- 15 oz. chicken breasts (3 pieces)
- (4) 6 oz. pieces lean pork like pork loin (24 oz total)
- 2 cloves garlic
- 2 bay leafs
- 1/4 tsp cumin
- 1.5 oz brandy
- 8 cups of water
- 1 Knorr chicken bullion
- salt
- pepper


















This soup likes delicious. The pork though does not look like the loin. In fact it looks wonderful. More the cut that has more flavor. When you say loin do you mean those long "tubes" of pork that come in kryovac? Anyway, I am going to make this tonight.

ReplyDeleteThis was actually pork rib loin, any lean pork will work fine. You can use cognac instead of brandy or just eliminate it if you wish.
ReplyDeleteI find warming soups are great comfort foods for me and I make them with just vegetables and blend them with some veggie stock and spices and they are very low in calories and taste great!
ReplyDeleteWhat is a serving of this dish and how do you figure how much meat would be a serving?
ReplyDeleteThis is a big bowl. I figured the points for the entire recipe, then divided it by 8. If you cut the pork in half and the chicken in smaller pieces, serve 3 oz pork, about 2 oz chicken, 8 oz of broth and a whole lot of veggies!
ReplyDeleteSorry to be dense but can you tell me how many cups a serving is? Looks like 1 3/4 cups.... if I'm calculating correctly.... with out having to remove the meat and weigh it. This recipe looks YUMMY!

This soup is fabulous! I added a few parsnips that give it a very nice flavor and a few red potatoes and some green peas for color. Of course you have to recalculate points for WW, but it is wonderfully filling because it is so full of vegetables!

ReplyDeleteIt's chicken bullion, you can use another brand if you don't have Knorr, like Maggi or whatever you usually use.

ReplyDeleteHad my husband go out and get an airplane sized bottle so we will do it the right way, we do not want to loose a little something something. I also wanted to know of it is one cube bouillon per cup of water? Have you ever made this in the crock pot? We are excited to try this as well, we loved the Shrimp and coconut soup and the cauliflower fritters, YUM! I have told all my friends and family about you!

Kim - I usually use enough bullion to taste. I haven't made it in the crock pot, I don't know if it would be as good. Enjoy and thanks for sharing!
ReplyDeleteI added an 8oz. can of tomato sauce. I don't know what it is but just a little tomato sauce always seems to round out the soup. I put some tarragon in as well. Yummm!!!! thanks gina!

Could this be made in the crock pot?
ReplyDeleteI also would like to know what size your servings turned out to be... I know it might be a little different depending on how much meat you have in the measurements...but it'll be pretty close. Is it 1 3/4 cup? BTW... I made this recipe with out the brandy or bay leaves (because I didn't have them on hand) and it was still VERY yummy! I would never have thought to use pork in a soup. LOVE IT! My family has loved all the recipes of your that I have prepared! Thank you!!! :)
