Crock Pot Santa Fe Chicken


Crock Pot Santa Fe Chicken

 

Slow cooked shredded chicken with corn, tomatoes and black beans. Prep this the night before and turn your crock pot on in the morning for an easy weeknight meal.


Serve over rice or in a bowl with nachos on the side, and don't forget the toppings. Chopped scallions, fresh cilantro, fat free yogurt or sour cream and reduced fat cheddar are my favorites.

Crock Pot Sante Fe Chicken came in first place (yay!) for Ziplist's most saved recipe in 2012 (they have over 800K recipes). I'm thrilled, and I see why you would choose this one! It's delicious, easy, requires no pre-cooking, and everyone loves an easy slow cooker recipe. It's also kid-friendly, freezer friendly and gluten-free. In it's honor I decided to revive it from the archives and give it some love.

Calories: 190 • Fat: 1.5 g • Fiber: 5.6 g • Carbs: 23.1 g • Protein: 21 g

Ingredients:

  • 24 oz (1 1/2) lbs chicken breast
  • 14.4 oz can diced tomatoes with mild green chilies
  • 15 oz can black beans, rinsed and drained
  • 8 oz frozen corn
  • 1/4 cup chopped fresh cilantro
  • 14.4 oz can fat free chicken broth
  • 3 scallions, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp cayenne pepper (to taste)
  • salt to taste

Directions:
    Combine chicken broth, beans (drained), corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top.  

    Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning to taste. Serve over rice or tortillas and your favorite toppings.

    3. This is exactly what a crock pot recipe should be - quick, minimal prep, and tasty. I hate crock pot recipes that take 20 mins or more to get together; I had a whim to make it, and 10 minutes later it was cooking away (and that includes finding stuff in my pantry!). I did find it was a bit watery, but that's more due to my poor measuring/approximating skills than anything. I put some lemon pepper in it, too, which was great! I also found it was extremely versatile. Tomorrow I'm going to top it with some cornbread and make a nice casserole. Thanks for such a tasty WW recipe (and your site is beautiful!). :)

    5. @Melissa, I agree! If I have to spend too much time prepping a crock pot meal, I might as well cook it on the stove! I am glad you liked it, it really is versatile and you can adjust the spices according to what you have on hand. Taco seasoning tastes great in place of the spices, and you can add jalapenos if you like it spicy!

    38. So funny! I was at Kroger and had recipe on my phone to get ingredients and read a comment from my friend who shared this with me!! Everyone loves it. Emily the cooking mama taught me to make this with chipotle rice in the taco salad bowl. I've shared this with friends also. Even my 14 yr old daughter makes it sometimes. It is salty though so I suggest if sodium is an issue for some use low sodium broth and beans!!!

    63. Made the dish and it is delicious. I used the Weight Watchers recipe builder and entered your ingredients and they came up with a point value of 3 for 8 servings. Just wondering why there is a difference. I don't want to use the extra 1.25 points if I don't have to but also don't want to under value my points. When you are down to 18 points a day everyone counts! Any idea/thoughts?

    65. I made this for dinner last night and I followed the recipe to a T.. It turned out great except it was VERY liquidy, almost like a soup. I had to drain all the liquid before I could serve it, and even then it made everything soggy. I used a normal crock pot, put in on low for 9 hrs, took out my 2 chicken breasts, shredded them and put them back fro another 30-45min..Can someone please tell me what I did wrong? Thanks!

    66. Not sure Andrea, it should be a little stewy, but perhaps using less chicken broth next time would solve this problem. Not all crock pots cook the same, and you really lose very little liquid in a crock pot.

    74. Wow! This is probably my favorite main dish from your site so far. I'm already addicted to the Cilantro Lime Rice! I was in a rush this morning and didn't read the recipe so I made the chicken in the crock pot like the Chicken Ropa since I had made it recently. After I got home I realized I should have cooked it all at once. I went ahead and put all ingredients into a clean crock pot, added the shredded chicken, and cooked it for another hour. OMG! It was wonderful. Food like this and I might be skinny again someday:)

    79. My kids have not even finished eating dinner yet, but I felt compelled to comment! Mine came out very soupy, because I didn't read the comments first and I didn't drain the beans. However, it was still so delicious!! My kids are chowing down on it, which is very, very impressive. Well, the one-year-old is a garbage disposal, so that doesn't say too much. But, my two-year-old typically won't even try most of the things I make and usually eats her fruit for dinner and not much else. She started off just picking out the beans, but is now taking full bites and saying "mmmm....it's yummy!" after every bite!! This is definitely going to become a staple for our family! :)

    83. I love this recipe! I make it all of the time and my husband loves it too! Instead of putting it over rice we put it over a bed of lettuce, add a little 2% cheese, and 1 TBSP of light sourcream. Great salad! I have lost 55 lbs and will be at my goal weight in 6 more!

    107. This is cooking right now and it smells so wonderful.! I did not drain the beans or the tomatoes, so there is a lot of liquid in there. Do you usually drain both the beans and the tomatoes? I'll see how it comes out after I shred the chicken, but if it is still soupy, do you have any tricks for thickening?

    111. This recipe is awesome Gina. I stumbled across your site when I was looking for a baked empanada recipe before Thanksgiving and I feel like I have landed on goldmine. I tried your picadillo using ground turkey meat on Monday and made this Crock Pot Santa Fe Chicken tonight and both of these will be in regular rotation when I am planning my weekly dinner menu. I follow a yeast free diet so I have to adjust things a bit but your recipes have such simple and healthy ingredients to begin with that this was not a hard task. My grocery store didn't have tomatoes with green chillies, so I used plain diced tomatoes & added a small can of chopped green chillies. Couldn't find low fat cheddar, so used low fat mozzarella instead. A delicious meal, can't wait for leftovers. Thank you so much, Gina! You help make WW a liveable lifestyle for me.

    126. Hi Gina - another great recipe from you! I made your broccoli cheese & potato soup on Sunday. OMG! So awesome! This recipe I made last night for my family and although my kids wouldn't eat it (they live on air, I swear this is true...) my husband and I loved it! Does your picture show exactly how yours looked or did you have to use a slotted spoon to drain off the liquid to get to the "stuff"? I had a lot of liquid and next time I will probably leave out the chicken broth. Maybe I did something wrong? I any event, I thought it tasted fantastic and I put mine over rice and topped it with 2 % cheddar cheese, diced green onions, diced cilantro and a few Tbsp of fat free sour cream. LOVED IT! Keep up the great work you're doing here!

    133. I guess maybe I am the only one who really didn't care for it? I just didn't think it had a lot of flavor. I cooked my chicken on low and it was done in 5 hours. I ended up draining all the liquid out of it and simmering it on the stove for 30 minutes with some more cumin, a pinch of dried oregano and some chili powder.

    136. I have been using this recipe for about a year and still LOVE LOVE LOVE it... I do add a few variations to it... I add a good bit of fresh chopped spinach and fresh garlic and there is a great mexican spice called "TaJin" that you can find in the produce section. It has a lime flavor with chili peppers. LOVE IT. Adds a great zing.. and sometimes I will add a little lime to the soup as well. I LOVE THIS SITE and recipes. Thanks for your hard work and helping us stay on track! :) ~Leigh~

    144. We saw your recipe and we attempted to follow it. We made some changes. First, we crushed 3 taco shells into the crock pot and stirred them in. We cooked it on low for another half hour. Second, we added 7 tablespoons of Tostitos queso dip to the crock pot. We served it over brown rice with open flamed Azteca flour tortilla shells on the side (as pushers). We garnished with chopped romaine hearts and green onions. We realize we altered the calories, but it made a much more satisfying dish. Thanks!

    148. Gina I must tell you that your recipes are great. I made this dish last Thursday and it came out scrumptious. I cooked my chicken for 3 hours and that was plenty of time. We had this over brown rice. Last night I scoop the chicken mixture into a hard shell taco and added sour cream & cheese it was good also. Love your recipies. Can't wait to try something else.

    149. Heaven on a plate! I'm not on weight watchers, but after 2 kids, I am always looking to lose a few pounds! As everyone knows, its so hard to stick to any diet when you feel deprived...I believe those days are OVER! I found your site a week ago by recommendation from a facebook friend, and since then I have been on here every day! Just looking at the pictures of the food is comforting to me! I can eat, be satisfied and feel NO GUILT! I have made this santa fe chicken twice now...once just for my husband and I and again tonight for a superbowl party. It has been a huge hit both times! I'm trying to not only eat healthy, but "clean", and so many of your recipes fall right into that. Tonight I served this with your cilantro lime rice, and also had guacamole on the side, which was a huge hit. Tomorrow I'm eating the leftover over bulgar wheat, since the rice is long gone! Thank you for your hard work....I'm now inspired to skinny up some of my own recipes! I love to cook and am looking forward to the challenge! Although, with the selection you have on here, i don't think I will need to for a long time! Next up, the sweet barbacoa pork and the yoru mac and cheese! (sorry for all the exclamation marks, but can you tell I'm excited???)

    153. I make a similar recipe with just a jar of corn and black bean salsa and chicken. I sometimes add extra corn or beans but it's so easy and yummy! At the end, I do add a little bit of sour cream and serve with tortillas.

I am not on the weight watchers diet but am always trying to find healthy recipes that are not too complicated or require non-standard ingrediants...so I LOVE your recipes! I used my crockpot for the first time ever to make this chicken and loved it...my roomate and boyfriend also loved it. The best part was the chicken was so tendered all I really had to do was stir it around and the chicken shredded on its own. I made it in the pressure cooker, I put in everything but the rice and corn, put it on for 30 minutes then added the corn turned it back on for 5 more minutes and it was wonderful. I did make the rice seperately but probably could have put that in too for the last 5 minutes. It was so quick and so good!!

Made a big crockpot full -- large can of black beans (rinsed), two rotel (original and mild), whole bag of corn, all of the seasonings to our taste (spicy!), a 2.5 lb. bag of frozen chicken breasts laid on top and seasoned. Shredded chicken after 8 hours and threw in a can of drained petite diced tomatoes so I had a lot of veggies and beans. Left for another 45 minutes. FABULOUS!!! I thought there would be too much juice but the chicken soaks up lots of it and you need some to moisten the rice. Set up with a "serve yourself" and had the Cilantro Lime Rice, tortillas, tortilla chips, chopped tomatoes, shredded lettuce, chopped avocado, scallions, and shredded cheese. It was a huge hit! Thanks for a great recipe!

My kids like it, and it is healthy and tastes great! I didn't eat mine on rice, I got some whole wheat tortillas and ate it like burritos and everyone loves it this way!!!

    194. Mine had a bit more liquid than I wanted b/c I added too much tomatoes. I went ahead and added some minute brown rice to the crock pot to absorb the extra liquid and flavor. It worked out great and ended up being a one dish dinner.

    198. This had so much flavor. I didn't have tomatoes or cilantro, but just added red, yellow and orange mini bell peppers half an onion and it was delic! I used six chicken thighs instead of breasts and cooked for 4 1/2 hours-it turned out perfectly.
