
A simple pasta dish made with fresh garden tomatoes, asparagus in a light tomato broth.
I love pasta and crave it often. To keep it light, I loaded it up with vegetables used a high fiber pasta like Ronzoni Smart Taste which has the same great taste as regular pasta and my family doesn't notice the difference. The portions are very generous!
Angel Hair with Shrimp and Asparagus
Gina's Weight Watcher Recipes
Servings: 4 • Serving Size: 1 1/2 cups • Old Points: 7 pts • Points+: 9 pts
Calories: 378.4 • Fat: 6.8 g • Carbs: 52.1 g • Fiber: 8.5 g • Protein: 31.6 g
- 1 bunch asparagus, tough ends removed, quartered
- 1 tbsp olive oil
- 6-8 ripe plum tomatoes, diced
- 2 cloves garlic, thinly sliced
- 12 oz large shrimp, peeled and deviened
- 1/2 cup fat free chicken broth
- 2 oz white wine
- salt and fresh pepper
- 1/2 tsp herbs de Provence (or you can use your favorite herbs)
- 1/2 tsp red pepper flakes (gives it a little kick)
- 8 oz angel hair pasta, high fiber or low carb
Heat a large skillet on high heat. Season shrimp with salt and pepper. When skillet is hot, spray with oil and add shrimp. Cook shrimp about 2 minutes in each side until almost cooked through and remove from the pan. Set aside.
Reduce skillet heat to medium, add olive oil and garlic and sauté until golden, careful not to burn. Add tomatoes and season with salt and pepper. Simmer about 4 minutes. Add white wine and broth and stir. Add asparagus, salt, pepper and herbs. Cover and simmer for 10 minutes on medium low heat.
While sauce is simmering, boil salted water and cook pasta until desired tenderness. Drain when done.
After sauce simmers 10 minutes, add shrimp to sauce to finish cooking, about 1 minutes (Do not overcook or shrimp will get tough). Add pasta to the sauce and toss well. Divide equally in 4 bowls and top with a good grated cheese.


















Hard to believe you can have all of that for so few points. Mmmmm.

ReplyDeleteLoved the Angel Hair w/ Shrimp & Tomato Sauce . . . I added a little feta cheese (1 extra point). I also roasted some veggies (eggplant, zucchini, onion, and peppers) and added them to the pasta bowl. It bulked it up and was a very satisfying meal. . .

ReplyDeleteThis is a really simple dish! And it tastes delicious! I did something a bit different though, instead of mixing it with the angel hair, I put it on top of the cornmeal cake (Bolo de Fuba). OH my goodness...the sweet and custardy cake worked so well with the tomato base of the sauce and really brought it together. I can't wait to make this dish again, it's another stellar one!

My only question...I looked for Ronzoni Smart Taste pasta and found it but it doesn't seem to be low carb or high fiber. It just seems like regular old pasta to me. Is there a certain variety that you get? I got the angel hair kind but there were only two choices.
ReplyDeleteWow.....I made this tonight and wasn't sure what to expect. I LOVE pasta but I usually have them with cream sauces. My husband is a VERY picky eater and I put in extra shrimp b/c I expected him to pick out the tomatoes and asparagus. He said it was VERY good (which is the highest food praise he gives -- unlike me, he doesn't go on and on about how good something tastes). And my 11 year old daughter, who is my adventurous eater, was a little reluctant but also loved it. A HUGE hit. Very light, great flavors, and the red pepper was perfect. You never disappoint, Gina! Thank you SO much!
ReplyDeleteRonzoni Smart taste is high in fiber, sometimes I buy low carb Dreamfields. With the old WW point system it lowered the points but on points plus, they are all the same, even whole wheat or semolina.

ReplyDeleteTo say this is very good is an understatement. Just enough spice, just enough savory flavors to make you want more! I only made two additions, and that was adding thin sliced mushrooms & some green onions as well. Scrumptious!

I made this for dinner last night. The only thing that I was a little confused on was the portion of the pasta. Is it a cup of pasta per serving or all together in the receipe? It was delicious. I made a believer of Weight Watchers out of my boyfriend!!!!
