
What do you do with left over papaya? You make muffins of course!
Papaya and coconut give these low fat muffins a tropical flair. If you can't take a trip to the tropics, bring the tropics to your kitchen!
These are moist and wonderful from the minute they come out of the oven. If you can't find papaya in your market, ripe mango would work too.
Low Fat Papaya Coconut Muffins
Gina's Weight Watcher Recipes
Servings: 14 • Serving Size: 1 muffin • Old Points: 2 pts • Points+: 3 pts
Calories: 126.6 • Fat: 3.0 g • Protein: 2.3 g • Carb: 22.8 g • Fiber: 2.7 g • Sugar: 8.8 g
- 1 cup papaya purée
- 2 cups 100% whole wheat pastry flour (Bob's Red Mill)
- 1/2 cup sugar
- 1 tsp baking soda
- 1/4 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup coconut flakes
- 1 large egg, beaten
- 1/2 tsp vanilla
- 2 tbsp melted butter or margarine
Preheat oven to 325°. Puree papaya in a blender until smooth.
Combine flour, sugar, baking soda, cinnamon and salt in a large bowl. Mix well. Add coconut and mix to combine.

In a medium bowl, mix eggs, melted butter, vanilla and puréed papaya. Add to the flour mixture and stir until just blended.

Pour batter into a prepared muffin tins and bake at 325° for 25 minutes, or until a toothpick inserted in the center comes out clean. Cool for about 10 minutes.

Those look amazing! I can't wait to try it! Do you use jumbo muffin tins or the normal size ones? I've never seen normal size muffin tins with only 6 muffins... I want them!

Rene- I've had those tins for years, they are regular sized cupcake tins.
ReplyDeletePapaya is similar to a melon, but sweeter and softer. Ask someone in the fruit area if it's ripe, that's what I do :)
Mango puree would work great in place of papaya if you can't find papaya.
If you prefer, leave the coconut out. It's not overly coconut-y if you leave it in.
Amy- I highly recommend Bob's whole wheat pastry flour, the results are always superb - it's like baking with white.

Just made these tonight :) Used banana puree instead of papaya... they were SO good! Obviously papaya would have been better I would imagine thats why you picked it :) but i had bananas that HAD to be used so I did those instead! Thank you!

I made these with the mango instead, but it was thicker than papaya puree I think. Made the batter really thick but they still taste delicious.

ReplyDeletePapaya is wonderful, kind of like a cantelope but softer and sweeter! Sometimes I sprinkle a little lemonade powder over cut papaya and eat it lime that! Delicious!

gina, I love your website. Such wonderful recipes. I have a question on these. In the recipe it calls for one large egg and then later on in the directions it says Mix the eggs. Is there more than one egg needed? And is the batter pretty stiff?

Yes, you can use Splenda instead. You can refrigerate them so they last longer.

ReplyDeleteI know you highly recommend the whole wheat pastry flour, but I live in South Korea and am lucky to get whole wheat flour, lol. In a pinch can I use whole wheat flour?? There maybe one place in Seoul that I can check for it, but just in case they don't have it....

I am not fond of papayas,but these were delicious. I made a batch for my picky son with chocolate chips on top, and he loved it. I was wondering if the papaya purée would work with your box-cake recipe(sub the pumpkin)? Not sure if it would be too runny.
ReplyDeleteI just made these for the second time but decided to exeperiment a little. I had some cream of coconut I needed to use up so I used 1/2 cup of it in place of the sugar and shredded coconut. Delicious :)
ReplyDeleteI made this yesterday and th results were okay. I only had 2/3 cup of papaya so I used a 1/3 of applesauce too, and I made it into a bread instead of muffins and baked it for longer. It's kinda dry and doesn't have a lot of flavor. Next time I will try to get more papaya and maybe add some coconut extract too.
