Broiled fish topped with a quick garden tomato sauce using summer grape tomatoes, fresh basil and garlic. I served this over orzo for a complete meal.
This simple sauce is also great over pasta or chicken.
Broiled Fish with Summer Grape Tomato Sauce

Ingredients:
- 1 tbsp olive oil
- 6 cloves garlic, smashed
- 1 lb grape tomatoes, cut in half
- salt and fresh pepper
- 1/4 cup fresh chopped basil
- olive oil spray
- 4 pieces (7 oz each) flounder (or tilapia or sole)
In a large skillet heat oil on high heat. Add garlic and cook until golden. Add tomatoes, salt and fresh pepper and reduce heat to low. Simmer for about 15 minutes, add fresh basil and cook another 5 minutes.
Meanwhile, while sauce is simmering, season fish with salt and pepper and lightly spray with oil. Broil or grill fish on medium heat until cooked through. When fish is cooked top with tomato sauce.

This reminded me of a comment you made a while back about lightening up Bacalao. That is my favorite dish that my husband's grandmother makes.
ReplyDeleteIt seems like it's just a lot of veggies (tomatoes, onions, garlic) and the salted cod, so it shouldn't be terribly high in points, but I would *love* to see your delicious spin on it!

ReplyDeletethis is one of my favorite things to do with grape tomatoes. I was sitting here wondering how you get yours to "explode" so fast. I re-read and re-read...then...DUH! "Light bulb moment!" You cut them in HALF!! Mine take forever to explode and now I know why!

I made this dish last night with tilapia. So yummy! I'd never actually cooked with grape tomates before and I loved the sauce. I will definitely make this again with more tilapia and chicken.

Loved the recipe. I made it last night with fresh Jersey grape tomatoes. It was delicious!
ReplyDeleteWhen I cook with fresh grape tomatoes, I make the sauce a little smoother by using a potato masher and smashing the tomatoes. It smooths the sauce a bit and you can also thicken it with tomato paste which will add richness to it. A little sugar will mellow the tartness of the tomatoes if they are too sharp.
ReplyDeleteOh my lordy... this tomato topping is AWESOME. I made it last night with fish (I just bought cod, which worked fine and was CHEAP) and today I used the leftovers for a topping on a piece of toasted garlicky bread with some melted parm on top. HOLY SMOKES. IN. LOVE. I added some red pepper flake and just a little white wine with the tomatoes and it is seriously out of this world. Even better the next day! It's thick and delish.

ReplyDeleteFound this from Pinterest, made it and it's SO good! Used a whole regular tomato and a can of diced tomatoes, holding the fish to cook in the finished tomato sauce. (I can't leave anything alone ;)

ReplyDeleteThis fish recipe was better than anything I've ever had at Red Lobster! The garden-fresh cherry tomatoes gave it a sweet candied flavor. My husband said he could literally smell it cooking as he pulled into the driveway! I served the fish and sauce over Trader Joe's whole wheat couscous. I used swai fillets for the fish. I will definitely be making this again!
