Moist cinnamon apple bread made with homemade applesauce, small chunks of fresh apples and walnuts in every bite. It's so moist and delicious, you won't believe it's low fat!
I really enjoyed this bread for the past few days each morning with a hot cup of tea. The only thing wrong with this bread? Sadly, my crock pot applesauce and apple sauce bread is all used up but I will be making another batch of applesauce this week, it's too easy not to!
Yes, you can make it with store bought apple sauce, but it is so much better with homemade. I've made this with and without the apple pieces, I love the extra sweetness and moistness the chunks of apples add to the bread. Be sure to dice them small so they cook through.
Skinny Applesauce Nut Bread

Ingredients:
- 1 large finely diced, peeled apple, diced into 1/4" pieces
- 1/2 tsp lemon juice
- 1 tbsp agave
- 1/8 tsp + 1/2 tsp cinnamon
- 1 1/2 cups homemade applesauce (or store bought)
- 1 1/2 cups King Arthur white whole wheat flour
- 3/4 cup brown sugar, not packed
- 1 tsp baking soda
- 1/4 tsp ground nutmeg
- pinch allspice
- 1/4 tsp salt
- 2 tbsp vegetable oil
- 2 large egg whites
- 1 1/2 tsp vanilla extract
- baking spray
- 1 1/2 oz chopped walnuts
Directions:
In a medium bowl combine apple, 1/8 tsp cinnamon, agave, and lemon juice. Set aside.
Preheat oven to 350°. Spray a 9 x 5 inch loaf pan with baking spray.
In a medium bowl, combine flour, baking soda, nutmeg, cinnamon, allspice and salt with a wire whisk. Set aside.
In a large bowl mix oil, egg whites, sugar, apple sauce and vanilla; beat at medium speed until thick. Scrape down sides of the bowl.
Add the flour mixture, then blend at low speed until combined. Do not over mix. Fold in apples and walnuts.
Pour batter into loaf pan and bake in the center rack about 55 minutes, or until a toothpick inserted in the center comes out clean.
Let the pan cool at least 20 minutes, bread should be room temperature before slicing.

I used two of the small apples and her applesauce. I didn't have walnuts so I used pecans. We don't eat eggs so I replace the eggs with two tablespoons of baking powder. YUMMY!!

White wholewheat is my personal preference but regular whole wheat is fine as long as it's King Arthur or BoB's you're good!
I would assume agave would work, it may make it moister so cooking time might need to be longer.
I could not find Agave in my supermarket, so used honey. Hope it didn't change the calories. It came out so delicious. I used store bought applesauce with the apple and walnuts. I think it's the best I ever ate! I made your clam chowder with it and loved the whole meal.

ReplyDeleteOh my goodness! Just finished a slice of this bread with a cup of hot green tea with lemon for my evening snack. I just noticed that you are supposed to slice it into 16 slices not 8. Oh well, I just downed two servings (-: Maybe my slice tomorrow I'll cut in half. Either that or work out an extra 20 minutes on the treadmill.
ReplyDeleteI made this for dessert tonight! Because my husband said I "flavored" the applesauce recipe too much with spices, I only added a touch of pumpkin pie spice to the apples and nothing more. I used Whole Wheat flour instead of white whole wheat and I had about 2 cups left of the applesauce and that was great because it made the bread extra moist! I also used my nut grinder to make the walnuts extra small. This was outstanding!

ReplyDeleteUPDATE: I wouldn't recommend freezing, pulled out 2 slices last night, left one wrapped up and the other unwrapped, both were very spongy/smushy/water logged this morning... flavour is still great just terrible texture!

ReplyDeleteI made the crock pot apple sauce over night and woke up to an amazing smelling apt. I used some of the apple sauce in my oatmeal this morning...Yum! And later in the day, I made the applesauce nut bread -- AMAZING!!! I just had a slice and debating whether I should have another slice.

My 17 month old grandaughter went for the bread (which I made as muffins) and was saying mmmmm mmmmm with each bite, lol. Then she finished off the applesauce! ReplyDeleteThis came out really great. My wife and I were on Jenny Craig and were buying the banana nut loaves from JC and this is a great equivalent. I refigured the calories and if you cut it into 12 slices (better for breakfast) it comes out to 162.8 calories per slice. I believe that is slices that are 3/4 inch wide.

ReplyDeleteI just made this in muffin form for portion control. So, so good. I added a little extra apple and cinnamon but followed everything else. Muffins take about 22 minutes. Everyone I shared with loved them as well. Will definitely be making again soon.
ReplyDeleteI just found your blog and it is fantastic! I've been in a rut lately with my old recipes and this recipe just screams fall to me and has me excited to bake again! I plan on baking this bread this weekend. I am going to use oat flour to give this bread more protein as well as stevia instead of sugar to cut down on the calories. I always add a scoop of vanilla protein powder to my breads as well. Can't wait to try!

If you look at the top of ginas recipie you will notice she has the point value for both Old and the New point plus program. For future you need fat, carb, protein and fibre for all recipes to find out your point+ value.
ReplyDeleteI made this today without the nuts or nutmeg (I have a son with allergies.) I used more cinnamon that it called for and a little pinch of ground cloves. I used a muffin tin instead of a loaf pan for better portion control - they were delicious and a huge hit with my family. Thanks!
