Living in NY, I often crave a bagel with cream cheese and Lox. So I was inspired to take some of the flavors and turn it into an omelet. The goat cheese reminds me of cream cheese, and the tomatoes, red onion and capers make the perfect addition for a delicious, protein-packed way to start the day!  You could easily make this Whole30 or Paleo by omitting the cheese.

Ingredients

  • cooking spray
  • 2 large eggs
  • 1 tablespoon chopped chives, plus more for garnish
  • 1/8 th tsp salt and pepper, to taste
  • 1/2 ounce crumbled goat cheese
  • 2 thin slices heirloom tomato
  • 1 ounce sliced Nova Lox
  • a few sliced sliced red onion
  • 1/2 tbsp capers, drained
  • a few parsley leaves

Instructions

  • In a small bowl beat the eggs, chive, add salt and pepper.
  • Heat a medium nonstick skillet over medium-low heat. Spray with oil and pour the eggs. Cook until they set, about 2 to 3 minutes then top with goat cheese, then transfer to a plate. Top with sliced tomato, lox, red onion, capers, parsley and chives.

  1. I’ve made this twice in the last week. All the ingredients happen to be favorites of mine, and I usually have them all on hand. It makes such a hefty omelet that I use it for dinner. Personal preference is a folded-over omelet. I put the salmon inside with the goat cheese.

    The soft goat cheese I have is 1.5 points for 1/2 oz, and my smoked salmon is zero points. Everything else is zero. That leaves enough point room for a salad and a bit of homemade lite vinaigrette.

  2. This is going to be blasphemy. I don’t like lox. I love salmon though. Tips on buying a good lox or a substitute for this dish?

  3. Outstanding recipe,,  super easy to make and great flavor!  I used goat cheese with sun dried tomatoes.  YUM!!

  4. This is one of my go to’s now for a quick and easy morning breakfast. WW friendly. I skip the capers as I don’t like but this dish speaks to my special love of anything lox and since bagels are no longer on my plan, this satisfies! The goat cheese is an interesting addition and makes it extra special. Once you get down the flat omelet (which I have), it’s super easy.

  6. Just satisfied my lox & bagel craving!  I used my favorite Trader Joe’s pastrami style smoked salmon. Delicious & so quick! ????

    Thank you for the idea, I made this, this morning. Except that I don’t have nor like goat cheese. So I used 1/3 less fat cream cheese and added fresh dill. Even picked the chives from my garden. I had all the ingredients because I’ve been making the thin bagels with it. Loved it!!!

  8. Made it this morning. It was so delicious – the goat cheese was so reminiscent of cream cheese. Loved it!
