Skinnytaste Dinner Plan (Week 75). Mondays I try to go meatless, so Best Skinny Eggplant Rollatini with Spinach is on the menu. I prep it Sunday night so Monday night I just put it in the oven. The rest of the week I am reviving some old favorites like Asian Peanut Noodles and one of Tommy’s favorites Garlic Shrimp in Coconut Milk, Tomatoes and Cilantro to name a few.

Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. I’m starting from the very beginning and have just finished weeks 1 and 2. Thank you for making the dinner plans and shopping list. They are so great. I haven’t had to resort to “let’s just order take-out” in the last 2 weeks. Hooray! Also, the recipes are delicious. My husband and children love them.
