Grilled Chicken Sandwich with Avocado

Avocado is a wonderful healthy option in place of mayonnaise and it adds such great flavor. Yesterday I mentioned how good tasting bread is crucial for me in the sandwich making process, and Ciabatta is another fat free option I love to use. Although it’s usually fat free, always double check the labels.

I made this an opened open-faced for the photo, then realized once I started eating it that it’s easier to eat if it’s closed and it’s also more portable for lunch on the run. I’ll leave that up to you!

Ingredients

  • 2 oz Ciabatta
  • 2 tbsp mashed avocado
  • 2 oz grilled chicken breast
  • 3 slices ripe tomatoes
  • salt and fresh pepper to taste

Instructions

  • Slice bread open and smear mashed avocado on the bread. Season with salt and pepper.
  • Top with tomatoes, chicken and add additional fresh cracked pepper. Enjoy!!

  6. I just found your site and I LOVE it already! All your recipes are amazing and my family love each and every one of them! My family and I don't mix milk with meat, so it is always such a struggle to figure out a non-milk with meat sandwich recipe and something WW user friendly.     I just wanted to give a shout out to Gina! This is one of my families favorite recipes. We've had this many times since I started Weight Watchers over a year ago. Thanks to you and your recipes Gina according to my weigh in yesterday I have lost a total of 40lbs. If it weren't for you Gina this process wouldn't have been nearly as easy and nearly as tasty. So thank you!
    Our family has hit some hard times so I am no longer able to afford Weight Watchers but we still use your recipes to help try to stay close to being on track!

    I made this for lunch yesterday and it was amazing. I didn't have lemon so I made the chicken with Mrs. Dash lemon pepper. I also couldn't find ciabatta at the grocery store so I used Orowheat thin sandwich buns- multigrain and toasted it a little. Definitely a keeper!

    Sometimes I marinate it in fat free Italian dressing, other times I just add salt and fresh pepper.

  13. Love making all kinds of meals and sandwiches and I must say that all your recipes are so colorful and tasty even looking at them makes me thinking about what I have in the fridge, do I have everything needed or I need to go to the store, unconsciously, it's not usual really..

    I really like that you use crustier bread for your sandwiches- I've been getting bored of plain ol' multigrain bread and I have a sandwich every day for lunch… this is a great way to mix it up! It's totally worth the few extra points…

    Hi Gina,
    THe last two sandwich recipes look great! We have been going to the farmer's market every Saturday and picking up really good bread and making panini. I may try this sandwich soon, though!

  18. Add a few Mexican seasonings (mainly cumin or fajita seasoning) to the chicken, add grilled onions and you have yourself a Mexican Torta. Bravo Gina! You make us all think and be creative!

    The calorie count was 130, so you can subtract that.

    I find grilling thicker breasts on the grill, then cutting them after keeps thE chicken juicy.

    My local supermarket has wonderful bread in the bakery section, but I also go to bakeries and my local Italian deli. They have amazing bread!

    T.Irwin – I never used to like tomatoes but learned to love them. Summer tomatoes from the farmer's market are so much better than supermarket tomatoes.
