Cooking vegetables on the grill is easy and the vegetables taste incredible when edges get all charred. The best way to do this is to purchase a grill pan (or two). You can also get a vegetable basket so the vegetables don’t fall through the grates. Then spritz the vegetables with a little olive oil and season with salt and pepper. They also sell disposable ones in the supermarket which also work fine.

For best results, get familiar with your grill. Some cook hotter in the back so keep that in mind when grilling and move things around accordingly.

Grilled chicken breast, zucchini, red peppers and asparagus topped with a honey balsamic dressing – this is SO good, I know you'll be making this all summer and nothing beats an easy summer dish made entirely on the grill so you don't have to heat up your kitchen!

Ingredients

  • 1 1/2 lbs boneless, skinless thin sliced chicken cutlets
  • 3 tbsp homemade pesto, or store bought
  • 1 clove crushed garlic
  • 1/4 tsp crushed red pepper flakes
  • juice from 1/2 lime
  • 2 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp raw honey
  • kosher salt
  • 1 lb asparagus, 1 bunch, tough ends removed
  • 2 medium zucchini, sliced 1/4-inch thick
  • 1 red bell pepper, seeded and sliced into strips
  • olive oil cooking spray

Instructions

  • Marinate chicken with pesto, garlic, red pepper flakes, lime juice and 1/2 teaspoon salt at least 1 hour, or overnight for best results.
  • Mix oil, balsamic vinegar, honey and 1/4 tsp salt in a small bowl.
  • Heat a grill over medium-high, be sure grates are clean and well oiled to prevent sticking.
  • Put veggies on 1 large grill tray or 2 smaller trays (or cook in batches), spray with olive oil, season with salt and pepper and cook, turning constantly until the edges are browned, about 6 to 8 minutes. Set aside on a dish.
  • Cook the chicken about 4 to 5 minutes on each side, until grill marks appear and the chicken is cooked though, transfer to a platter, too with the veggies and pour the balsamic dressing over everything.

  1. This was very good, and easy. I grilled all of it using the grill function of my air fryer, and added some fresh mozzarella cheese to the veggies.

  2. Could you replace the asparagus with fresh green beans?

  3. Good recipe. I added cherry tomatoes (garden surplus) and green onions to vegetables. Next time, I will add more honey and a little less balsamic vinegar. Definitely a keeper.

  4. Is there a substitute I can use for pesto? My husband is allergic to nuts and most pesto contains tree nuts.

  5. It was delicious!!!

  6. Is there something besides pesto to use in place of it that is WW friendly?

  7. I made this recipe last night…wow! The chicken was perfectly tender and juicy. I was a bit hesitant to use the 3 T of balsamic vinegar in the sauce, but the portions of all ingredients–both the marinade and the sauce–were just right…amazing layers of flavor for such a simple recipe. Absolutely delicious! You’re right…I’ll be making this recipe all summer–and probably year-round. Thanks for another winner!

  8. Fantastic! Adding this to my summer rotation for sure.

  9. One of our favorite recipes when the weather warms up!  Made tonight on a rare 75 degree spring day in Illinois and it sure made this shelter in place seem more bearable tonight.  The flavors all work so well together – we love it and my teenager son even had 4 helpings!

  10. can this be cooked on the stovetop?  how would you do it?

  11. This was great! I used veggies from our CSA so we had red bell peppers, zucchini, carrots, and onions with ours tonight. I only marinated the chicken for about 30 minutes while I prepped and cooked the veggies but it was very good anyway. I don’t think I’ll bother marinating longer in the future, there was plenty of flavor as is.

  12. This was outstanding!!  Made exactly as written, even with the homemade pesto recipe.  Wouldn’t change a thing!

  13. Used a store bought balsamic glaze with good outcome. Delicious.

  14. This was easy and delicious! Even my kids (5 and 8) loved it. It’s going to be a summer staple in our house!

  15. Easy to make and delicious! My picky-eater son even ate the chicken (without the glaze) but with the pesto marinade. Will definitely be making this again.

  16. I don’t comment often but I have to say this my go to grilled chicken recipe. I use it all the time and everyone always loves it. I don’t always make the vinaigrette for the veggies if I’m rushed, but it is a nice addition.

  17. This was sooo good!! Going into our rotation. I grilled the chicken but roasted the veggies in the oven and it still was delicious.

  18. Do you marinate veggies too?

  19. This is great

  20. I expected this to be good, but it exceeded my expectations. My husband loved it too. Making it again this week!
